    Jonge Genever is one of the more popular distilled spirits in the Netherlands. Its basis is a "Malt wine," distilled from a mixture of wheat, corn, rye, and barley. The production of this malt wine mirrors the production of Scotch whisky through the first distillation, which the Scots call "low wines" and the Dutch call "malt wine." An essential ingredient is juniper berries. Distillers make the final product in several stages, using herbs, neutral spirits, and different quantities of juniper berries according to each distilleries secret recipe.

    There are two main types of Genever: ‘Oude’ (Old) and ‘Jonge’ (Young). This is not a matter of aging, but of distilling techniques. Around 1900 the Coffey Still (Patent Still) made it possible to produce an almost neutral tasting high-grade alcohol, independent of the origin of the spirit. A worldwide trend towards lighter tasting spirits as well as lower prices, led to blended whisky in Great Britain, and its counterpart in the Netherlands was 'Jonge Genever'. During the World Wars, lack of imported cereals and hence malt, forced the continued promotion of this Gin. People started using the term ‘Oude’ for the old-style Genever and ‘Jonge’ for the new style, while still employing juniper berries, it contains more grain instead of malt and can even contain plain sugar-based alcohol.

    Originally a family operated business, Freerk Klazes Bokma gained the rights to establish a distillery in 1894. Later in 1971 Bokma entered into a joint venture with Heineken enhancing its distribution network which enabled Bokma to become one of the Netherlands most beloved spirits.

    Jonge Bols is one of the finest young Genevers of Holland, twice distilled from 100% pure grain. Fourteen ingredients such as, angelica root, aniseed, ginger root, apricot nuts, learwyt seed are then infused for flavouring. Typically consumed out of a shot glass, or, as preferred in Holland, a tulip glass, Jonge Gin is best served chilled. Or try a John Collins, a Cocktail which consists of Genever Gin (or Bourbon), lemon juice, sugar, and sodawater and made in the same way as a Tom Collins. 35% Alc./Vol.

    Tasting note: Clear. Mild aromatics reveal top notes of candle wax, talc and mineral over heavier scents of potpourri (especially lavender) citrus peel and juniper. Silky entry slowly builds in concentration offering mild, medium dry flavours of citrus, mineral and chamomile tea. Juniper takes back seat. White pepper back palate. Exceptionally pure, silky and very gently warming mouth feel. Turns dry, with a clean, refreshing aftertaste of citrus peel, mineral and a subtle juniper fade.     Glass: A small pre-chilled cocktail glass / coupe.

    2 shots of Bols Genever
    3 dashes of rich sugar syrup
    2 dashes of orange bitters
    1 dash of dry orange curacao liqueur
    Stir the ingredients with large, hard, cold ice cubes and strain into the glass.

    Don’t be deterred by the foreign label, Brandewijn (burnt wine) is the name given to Dutch Brandy produced from fermented grapes which is then distilled to roughly 36% to 60% ABV. Depending on the countries regulations, the spirit must then undergo a minimum maturation period anywhere between 6 months to 2 years.

    Citroen Brandewijn is a liqueur variation whereby fresh lemon peel is steeped in the brandy, re-distilled, sweetened and reduced to 20% ABV to produce a smooth after dinner drink. The result is a delicious natural lemon flavour which can also be paired in sweeter mixed drinks or tonic water.

Corenwyn is an alternative spelling of the generic 'kirenwijn', a high-malt Genever specialty. The style, 'corenwyn' translates as 'grain wine', referring to the high proportion of malt wine (at least 51%) used in the blend. Only Bols is permitted to use Corenwyn as a brand name because it was Lucas Bols himself who first created the drink back in 1575. The term was reserved for the very finest distillations of grain. The 6 year old was launched in 2009 as a limited edition but has continued due to popular demand. 40% Alc./Vol.

    We are pleased to import this sought after gin after a long absence from the Australian market.  The Very old (Oude) distinction derives its name from the fact that this was the first genever known in Holland, the home of gin. Its robust flavour stands out, being decidedly different in taste than that of the more familiar London Dry Gins – fuller and riper, although similar botanicals are used in its manufacture only in different proportions. The chief point of difference is the spirit base used in Dutch Gin which, unlike its New World counterparts, is not a completely tasteless neutral grain spirit. Rather, 'Zeer Oude Bols' is distilled in a pot still from a mash containing rye, barley and corn which on distillation produces some congeners normally associated with whisky. Dutch Gins are also generally distilled at a lower alcoholic strength than New World types. Bols Genever Gin, consistent with its old world tradition, is bottled in a distinctive stone crock and has an alcohol content of 35 % /vol. Best drunk neat and chilled.

    Recipe: Orange Collins

    Ingredients

    -Oude Genever
    -Dry orange liqueur
    -Freshly squeezed lemon juice
    -Sugar Syrup (2:1)
    -Bitters
    -Sparkling water
    -Orange Wedge

    Method

    1. Fill a shaker with ice and add 2 dashes of bitters, 15ml Sugar Syrup,15ml Dry orange liqueur, 30ml freshly squeezed lemon juice and 75ml of Oude Genever.
    2. Close the shaker and shake for 10 seconds
    3. Double strain: pour the contents of the shaker through a Hawthorn strainer and a fine strain, into the pre-chilled glass.
    4. Squeeze an orange wedge over the glass and drop it into the drink.
    5. Top up with sparkling water .

    Serve in a tall glass with an orange wedge and long straw

    Bols produce one of the finest young Genevers in Holland. The company has re-released their classically styled Dutch standard based on their 19th Century recipe. It's distilled three times from 100% pure grains (rye, wheat and corn), 50% of which is malted. Fourteen ingredients such as angelica root, aniseed, ginger root, apricot nuts and learwyt seed are then infused for flavouring. Typically consumed out of a shot glass, or, as preferred in Holland, a tulip glass, it's best served chilled. Bottled at a slightly higher proof than the standard Bols Jong, this has also seen a stylish packaging overhaul for the bar scene.

Bold aromas of frosted raisin scone and fruit cake follow through on a very smooth and satiny entry to a glycerous dry-yet-fruity medium-full body with excellent depth and balance.     Started with a small life savings and a fistful of credit cards, the Ransom Project was launched in 1997, with the distillery making small amounts of grappa, eau d'vie and brandy. Gin and whiskey were added to the lineup in 2007.

    VL92 Gin was born of the desire of two entrepreneurs to create their ultimate gin. Built upon a malt wine foundation, it has its roots in the Dutch genever tradition. The malt wine gives it its boldness; its complexity derives from the play between botanical elements that finish with a citrusy / coriander leaf end note.

    The Gin is named after a historic Dutch sailing vessel whose freight contained exotic spices too daring for the local genever recipes. In the early 17th century the Dutch shipped the first Genever to the United Kingdom. The VL92 creators followed suit when in 2012, they sailed their first export shipment to the UK in a small boat, "putting a bit of Dutch Courage back in Gin"

    The Zuidam Distillery was started back in 1975 by Fred van Zuidam as a deliberately contained operation with one small copper still. It took more than a decade to forge their present reputation as the finest distillery in the Netherlands. In 1989 Zuidam expanded their warehouse to 600 square meters and one production line. Presently, both sons, Patrick and Gilbert, run the distillery under the watchful eyes of their parents. With four brand new copper stills, over 1000 oak barrels, four production lines and modern tank storage, Zuidam is now a state of the art operation, however, they have held on to one throwback from the past - Windmills. These are used to mill the grains destined for their Genevers and Malt Whisky. It not only preserves this iconic piece of Dutch heritage, but more importantly, the producers believe that the traditional slow grind causes almost no increase in the temperature of the grains and thus helps preserve the wonderful aromas.

    Zuidam's Old Genever is distilled from a mash of malted barley, rye and corn. Small stills produce a very delicate and fruity new spirit. Part of this new spirit is then distilled again over a proprietory mixture of botanicals including Italian juniper berries and orris root, Moroccan coriander, whole Madagascar vanilla beans, Indian liquorice root, Sri Lankan cardamom and angelica root.

    After blending, the spirit is then filled into small barrels. Zuidam use new barrels of American White Oak as well as barrels that have previously held Bourbon or Olorosso Sherry.

    The Genever ages rather quickly in the warm and dry atmosphere of the distillery warehouse. Evaporation losses are high (between 4% and 5% per year).

    Tasting note: The brilliant bright gold appearance is pure and clear. Paprika, white pepper and liquorice bullets feature in the opening stages with more grain and juniper evident in the second pass. A satiny mouthfeel develops with flavours of chamomile, olive bread and peppery juniper towards the finish. Ends pleasantly warming, light and long. 38% Alc./Vol.

    If you're looking for something truly different in the world of gin, this is it.
    Zuidam, who produce one of the finest rye whiskies on our shelves, have created a very special genever that combines the spiciness of rye mixed with the fresh flavours of juniper, licorice and aniseed.

    A 100% rye grain mash (50% malted / 50% unmalted) is triple distilled in a small pot still then aged in new 200 litre American oak barrels for a minimum of five years. After that period the botanicals are added. Half of the spirit is then redistilled before being blended with the other half and bottled. The result is the best of both worlds: a genever with the texture and depth of an aged spirit combined with youthful botanical zest. All bottles are hand labelled with a ribbon and a gold wax seal.

    A modern take on traditional Genever, produced from a mash of Malted Barley, Rye and Corn. The mash of these grains are distilled three times in a pot still after a week of fermentation, and finally matured for a 5 year period in American oak casks. The end result is bottled as a single barrel release - a concept typically used in the Scotch and American whisky industry.

    Tasting note: [Vat 904 tasted] Brilliant gold. Wonderful opening scents of fresh picked dill, caraway and fennel with further exposure revealing back-seat juniper and accenting the sweet, underlying barrel qualities. Light to medium bodied, buttery mouthfeel; hints of dried herb and black pepper through the muted malty vanilla sweetness. So graceful and delicate as this concludes, lingering with hints of white pepper, vanilla and butter menthol lozenge late in the aftertaste. Deliciously different. A must try in the genre. 38% Alc./Vol.
