The word 'cordial' derives from the old Latin word 'cordialis', a term used to define a medicine or beverage which invigorates the heart and stimulates the circulation. Such a drink would usually take the form of an aromatized and sweetened spirit. Australians associate the word with a concentrated non-alcoholic syrup. However, in American parlance, "cordial" is interchangeable with the word liqueur (a term used to define a combination of distilled spirit and certain flavourings, i.e. Fruit).

Which ever way you wish to call it, non-alcoholic syrups are becoming an integral part of today's cocktail scene. Fee Brothers have introduced a non-alcoholic "Cordial Syrup" range, boasting over 40 different flavours including the featured Falernum (A sweet syrup known to be used in tropical and Caribbean drinks). This mix includes lime, almond and ginger.

An extensive range of Fee Brothers aromatic bitters can also be found on the Nicks Wine Merchants website.

Tasmanian Tonic Company Pepper Berry Tonic Syrup (300ml)
    Tasmania, AUSTRALIA
    $24. 99
    Bottle
    $299.88 Dozen
The Tasmanian Tonic Company was born of a desire to complement fine Australian spirits, particularly gin. Offering a range of uniquely local flavours, these syrups are very low in sugar with balanced singular botanicals. Their Pepper Berry Tonic complements savoury spirits - especially where spices are the primary botanical. Quinine at the first taste slides into a bite of Tasmanian Pepper Berry at the finish. Lime and lemon complete a fine balance.

Other reviews... "These are so refreshing and delicious, and so much more complex than regular, commercially-available tonic water. Yes, the colour is a little unexpected, but that's because of the unprocessed nature of these small-batch syrups. They're also less sweet, so they don't overpower the flavour of your chosen gin." - SeaSaltSocial

Employing botanicals including cinchona bark, lemongrass, lime, lemon and a hint of lemon myrtle leaf, this traditional syrup is made not by boiling, but by steeping the ingredients. The process not only extracts the flavours but also retains some nutritional benefits. All Cure Tonics have 30% less sugar than other market leading tonic waters. They recommend using one part syrup to ten parts of soda water, but if you prefer stronger tonics, feel free to change the ratio. One 500ml bottle will mix up to 5.5 litres of quality tonic water. You can also use this product with water carbonation devices. Gin is not required but highly recommended!

    New South Wales, AUSTRALIA
    $29. 99
    Bottle
    $359.88 Dozen
This is Crawley's most popular 'contemporary' syrup created by Alexx Stuart, head bartender at the Lotus Bar. She had left a large pan of organic orange and vanilla beans on gas heat too long whilst serving customers. When she returned to it, it had semi-caramelised and turned slightly dark but tasted incredible. Enjoy this flash of serendipity and try it in an Old Fashioned, any Collins cocktail, Sours or Punch. Non alcoholic.
