Cognac

More than half of the Cognac market continues to be controlled by Hennessy, Martell and Remy Martin. The availability of artisan products has been overshadowed by the promotional power of the 'big three'. However, that's now changing. Family grower-producers are expanding their distribution, offering all-natural expressions that distinguish them from the pack. Small batch, cask strength and single cask Cognacs are also giving consumers the chance to experience this classic brandy in its more elemental forms. Aside from Grande Champagne, Nicks Wine Merchants endeavour to range a cross section of styles including Cognacs from lesser known appellations like Fins Bois, Ils de Re and Borderies. Bache Gabrielsen American Oak Cognac (700ml)
    Cognac, FRANCE
    $94. 99
    Bottle
    $1139.88 Dozen
    ABV: 40%
Tasting note: Made using Ugni Blanc fruit from Fins Bois, this is a first of its kind Cognac: Initially matured in Limousin oak, for the final six months, Cellar Master Jean-Philippe Bergier selected Tennessee oak barrels for a finishing touch. You get some of the aromas associated with brandy such as raisin cake, prune and dried apricot, but compared to Bache's other VSOP, this is softer and rounder with more honey and vanilla input, while remaining nicely balanced. Light to medium bodied with an easy-drinking mouthfeel, it ends with cinnamon, clove, fig and just a little heat. Launched in tandem with Bache Gabrielsen's push into the US market - which seems fitting - it may get traction with Bourbon lovers. 40% Alc./Vol.

Eaux-de-vie used in this iteration of Camus XO has been uniquely distilled via the ‘intensity’ method, whereby Camus select the most aromatic litres from the heads of the second distillation. Aged for at least ten years, it is another acclaimed single-estate expression from the champion of Borderies. As ever, cognac lovers will be impressed by the presentation which includes a heavy decanter adorned with a striking gold stopper and the signature of Cyril Camus embossed on the glass. 40% Alc./Vol.

    Cognac, FRANCE
    $325. 00
    Bottle
    $3900.00 Dozen
    ABV: 40%

An unusual Cognac distilled from fruit sourced entirely from Borderies - Cognac's smallest appellation. Soils here are a mixture of chalk and clay with a micro climate that is generally the earliest to ripen fruit. In style, Borderies are typically early maturing, full bodied brandies used to give 'backbone' when blending.

Tasting note: Burnished copper/orange with a pale copper hue. Superb, perfumed aromas offer a top note of orange blossom and dried flowers over deeper scents of dried apricots, raisins and cinnamon. At first fruity, luscious and intense, the palate gradually dries revealing fig, dried apricot and vanilla bean flavours with excellent length. Seamless integration and perfectly balanced, finishing with a long, dry, delicate aftertaste of orange rind, dried apricot and clove. Elegant and immensely attractive. 40% Alc./Vol.

Tasting note: Dazzling bright amber gold appearance. Issues a floral perfume of dried fig, butterred fruit bread, peppercorns, cinnamon and cigar box. Easy on entry buidling to medium bodied, off-dry flavours of succulent fig, raisin slice and white pepper. Aftertaste nicely counterpoints the mid palate with balancing acidity and fine tannins. Dried fruits, vanilla and subtle spices persist, rounding off the Cognac in elegant fashion. Another winning Borderies expression. 40% Alc./Vol.

Distilled in the Moisans Distillery, overlooking the Charente River and crafted with Ugni Blanc grapes, it comes presented in a contemporary yet classic tasting bottle with a large stopper. 40% Alc./Vol.

Other reviews... Topax color and sickly-sweet aromas of honey, apple juice, and clover. Not much flavor up front, a hint of sweetness, finishing into burnt caramel and oak, and alcohol bite. Taking extravagance to new heights is this gold-plated Grande Champagne Deau Cognac, oozing luxury from the outside in. Named “La Vie en Or”, or “Life in Gold”, the Cognac is a handpicked selection of eaux-de-vie from Grande Champagne and represents Deau’s rarest stocks matured to their optimum. It is also one of the most impressively presented cognacs we've seen to date, an aspect in which the house of Deau excels, with its beautiful asymmetrical bottles and contemporary designs. The decanter was commissioned by one of the finest Parisian jewelers, Arthus Bertrand, and comes presented in a sleek white box. Less than a handful are available in Australia.

Notes from the producers... Disrobes little by little to reveal a tantalizing array of subtle flavours…rich rancio, the signature aroma of grand old cognacs, followed by the luscious scents of ripe fruit and fruit compote, honey, pear, peach, fig and bitter almonds ending on lingering notes of cinnamon, vanilla, fresh tobacco and rice powder.

Deau has earned a quiet reputation as high quality Cognac marque and claims a lineage back to 1655 with the birth of Louis Deau and the family has been in the wine business for centuries. The estate is owned today by Bru-Legaret and operates twelve traditional pot stills and maintains an inventory of over 2,000 barrels of aging eau-de-vie in six cellars near the Charentes River. 42% Alc./Vol.

    Cognac, FRANCE
    $525. 00

    $6300.00 Dozen
    ABV: 40%
Classified as an 'Hors d’Age' Cognac, meaning "beyond age", this category falls under the XO denomination, but refers to Cognacs with an average age of thirty years (XOs require a minimum of ten). Hors d’Age at fifty years or even one hundred years old are not uncommon - in short, they're often the oldest Cognacs on the market. A portion of the eau-de-vie in Deau's 'Memory' dates back to 1916. Bottled as a tribute to Louis Deau who settled in the cognac region during the XVIIth century, its deep amber colour and endlessly unfolding aftertaste have left many afficianados judging it to be the jewel in the Deau portfolio. 40% Alc./Vol.

Deau has earned a quiet reputation as high quality Cognac marque. As usual, it's also down to the skill of the Master Blender. Made using fruit from Petite Champagne (75%) and Fins Bois (25%) and aged for a minimum of ten years, this wows with a myriad of flavours: Think violets, lychee, nuts, coffee beans, and a long finish that intensifies with leather, cigar box, and musk. Deau Cognac claims a lineage back to 1655 with the birth of Louis Deau and the family has been in the wine business for centuries. The estate is owned today by Bru-Legaret and operates twelve traditional pot stills and maintains an inventory of over 2,000 barrels of aging eau-de-vie in six cellars near the Charentes River.

Presentation is also an aspect in which the house of Deau excels with its beautiful asymmetrical bottles and contemporary designs. The house symbol is the griffin (half eagle, half lion), which is said to guard the vineyards.

Other reviews... At first this mahogany spirit has just a fleeting honeyed fragrance, but with time it opens up to a deeper, sweet caramel aroma. Get past the initial dauntingly hot alcohol bite, and the reward is a sweet and nutty flavor, finishing with a pretty cinnamon spice and caramel note.

Tasting note: Made from Ugni Blanc grapes and matured for two years. Amber topaz. Attractive, medium dry, fruity aromas of ripe plums, figs and raisins follow in a graceful, medium to full-bodied, fruit cake accented delivery with good balance and freshness. The finish is tangy with vanilla, raisins and oak spices. Very good, but arguably more brandy-like than cognac. Good base for long drinks. 40% Alc./Vol.

First matured in virgin oak casks before being transferred to older, less active casks, the liquid here is actually XO standard.

Delamain Pale & Dry XO Cognac (500ml)
    Cognac, FRANCE
    $155. 00
    Bottle
    $1860.00 Dozen
    ABV: 40%

One of the oldest Cognac producers, but still run by direct family descendants Charles Braastad-Delamain and his cousin, Patrick Peyrelongue. The brand was created in 1762 although the house is much older. Delamain produces no VS or VSOP Cognac, instead its entry level offering is this already 25-year-old XO produced from 100% Grande Champagne fruit sourced from local growers.

The cognac starts at around 50% ABV before being very slowly reduced with old, lower strength cognacs or "vieilles faibles", rather than water (which is the custom). This practise further highlights an attention to quality that differentiates Delamain from the pack.

Considered a showcase of the house style, the "Pale & Dry" moniker refers to both the natural colour of the blend and the fact that no sweeteners or 'boise' are added (as is actually permitted by law in Cognac).

Tasting note: Impeccable purity to the brilliant topaz colour. A superb perfume opens with aromas of rose petal / orange blossom, building with deeper, fruitier scents of figs, pear tart, dates over drier notes of cigar box, new leather and further air contact adding shades of dried banana, orange zest and cinnamon. Just fabulous. Starts off linear, dry. The middle stages are unexpectedly full bodied, vibrant, warming, mouthfilling. A luscious burst of dried fig, stone fruit, orange zest and prune stains the tongue. Driving sandalwood, pepper, almond butter and saffron push the palate length to the max. Doesn’t let up in the final stages as this fades resiny, oaky yet poised with black pepper, vanilla bean and dried fig. A final wisp of passion fruit seals the deal, showing the kind of élan you’d expect from a cognac heavyweight. One of our all-time favourites, regardless of classification or price. 40% Alc./Vol.

Other reviews... Bold and butterscotchy, this easy-drinking Cognac also has dried fruit and nutty tones, plus a saline touch that's reminiscent of salted caramel. There's a spicy flourish on the relatively dry finish. Delamain notes that it is one of the only Cognac houses to exclude VS and VSOP expressions from its portfolio, “its range starts where others end, with an X.O.”

Dudognon Reserve des Ancetres Cognac (700ml)
    Cognac, FRANCE
    $250. 00
    Bottle
    $3000.00 Dozen
    ABV: 40%

The Dudognon family have grown grapes in the small town of Lignières-Sonneville, in the heart of Grande Champagne, since 1766. When it comes to Cognac, they have remained committed to creating an artisan product. Decisions made during distillation are purely from the glass, the oak for their barrels is air-dried for five years next to the chai, and while many cognacs are laden with permitted additives (sugar, boisé, caramel), water is the only secondary ingredient at Dudognon (because of this, their colour is relatively light). Their Reserve des Ancetres is approximately thirty years old.

Tasting note: Deep gold colour. Initial nosings are restrained. Ten minutes in the glass yields moderate scents of honey, apricot, fig and a trace of pepper. The palate shows good concentration with a nice balance between fruit and grippy tannin, though overall the mouthfeel remains very dry by Cognac standards. Spicy, cedary, vanillan oak back palate. Finishes quite dry and slightly tannic. An attractive aperitif style. 40% Alc./Vol.

The Cognac of Francois Voyer is produced on the Voyer family's estate, planted to just 28 hectares, located inbetween Verrières and Ambleville, in Cognac's most prestigious appellation, Grande Champagne. This is a generous, spicy 5 year old Cognac.

First tasted 26/06/2009: Gold with pale straw hue. Dusty, dried flower top note, then heavier aromas of stewed apricots, clove, honey and creamy vanilla. The medium to full bodied palate offers dried fruits, creme caramel and sweet vanillan oak before building into a big, spicy oak finish. Excellent balance. Subtle, drying tannins balance the palate flavours, followed by a subtle aftertaste of liquorice allsorts, vanilla and tumeric. 40% Alc./Vol. 91 points

Retasted 02/02/2011: Deep gold colour. Attractive aromas of stewed apricot, clove and vanilla. The palate is medium bodied, entry is soft and round with ripe dried stone fruit and spice balanced by drying oak. Average length. A touch of cinnamon emerges into the drying after taste. Sound entry level VSOP but fails to thrill. 88 points

In 1865, inspired by the decorative handle of his office window, Maurice Hennessy created the star symbol that he would use to classify his cognacs. Thus was born the Three Star Cognac, better known today as V.S. Hennesey V.S. is a blend of more than 40 eaux de vie from the four premier growing areas of the cognac region. Hennessy V.S has traditionally been enjoyed after a meal, but it is also very popular mixed with ice and soda water, tonic, orange juice or ginger ale, as a long drink.

Tasting note: Brassy gold with gold hue. Moderately aromatic nose yields subtle aromas of dried fruits, old wood and pepper. “A glorious Grande Champagne Cognac deserving of both the Hennessy and Fillioux signatures…”

'Composing a Cognac is a delicate exercise,' explains Hennessy master blender Yann Fillioux. The key word is blending. Many vintages, many vineyard sites, and most importantly, many tested and combined ratios resulting in the most perfect blend of Cognac, which is the most perfect brandy.
Being Cognac’s oldest producer, Hennessy have learned to capture the fruit as well as the floral charactertistics, resulting in Cognacs of great elegance. Fillioux's family members have been amongst the companies master blenders since 1800. In 1873, Emile Fillioux created a special blend for the private enjoyment of the Hennessy family. Over decades, other private blends were created, inaccessible to the public. After re-examining thier remarkable reserve library of extraordinarily old and diverse Cognac, Hennessy have recreated the formula of the original 1873. Labelled as “Private Reserve”, this limited offerring contains within its blend, a portion of Cognac from the 1870's, along with a heavenly host of other selected vintages. The result is a glorious Grande Champagne Cognac, deserving of both the Hennessy and Fillioux signatures.

A sniff of Hennessy Private Reserve leads with dried orange and roasted almond complexities. 'There is vanilla which is a powerful aphrodisiac,' says New York master sommelier and beverage consultant Steve Olsen, 'along with dried roses and other floral mystique.'

Almost beyond all other spirits, cognac requires ageing. Only in this way can its delicate properties be fully realised and its grapey rawness mellowed. The culmination of time and quality can reap ethereal results. Originally created in 1870 by Maurice Hennessy using very old eaux de vie, X.O was reserved exclusively for his family and friends. X.O is blended from more than 100 eaux de vie (some of which have been ageing in the Hennessy warehouses since the early part of this century) specially selected from the four premier growing areas.

Traditionally X.O has been enjoyed following a meal, however more and more people are discovering the simple pleasures of X.O “On the Rocks”.

Deep amber in colour indicative of its age, this is a very developed style that has a lovely soft, round mouthfeel and fantastic complexity. The nose displays spicy aromas of oak and leather with the sweeter essences of flowers and ripe fruit. Pepper and rancio testify to the long ageing. The finish is again, complex and long-lasting. 40% alc./vol.

Other reviews… The eaux-de-vie range in age from 10 to 70 years. Deep amber/chestnut brown hue. Nose is opulent, elegant and emits mature aromas of cheese-like rancio, black tea leaves, raisins and oak. In the mouth, this XO displays melded tastes of astringent oaky tannins, ripe grapes and toffee. Aftertaste offers parting sweet tastes of dark caramel and honey. 85-89 points

A one litre travel retail bottling from the House of Hine, crafted with eaux-de-vie from the Grande Champagne region and aged for ten years in their cellars in Jarnac, as well as damp cellars in Britain. Following in the steps of single malt producers, it's becoming more and more common to see Cognac with an age statement as part of their branding. While traditionalists may not like it, others see it as a step towards more transparency within the Cognac market. 41.8% Alc./Vol.

Other reviews... Right, Hine is a fairly large house, but some say they would rather be on the artisans’ side. I always rather liked their ‘Bonneuils’, for example. Let’s see… By the way age statements are rather a new thing with Cognac, it’s true that you just couldn’t miss this one… Colour: full gold. Nose: oh perfect! Touches of metal polish and pinewood smoke over plums stewed in some sappy honeyed sauce, plus dandelions and the usual preserved peaches. Lovely lovely nose, fresh and yet rather deep. Mouth: great work! It rather goes towards malt whisky, which is a trend indeed with some modern Cognacs, but in this case that works rather perfectly. I’m thinking of Balvenie. Mirabelles (as in ex-BB Balvenie indeed), tinned peaches, touches of orange blossom water, pastries, a discreet touch of liquorice… And frankly, 41.8% works better than 40%, even if we’re never too fond of faked C/S strengths. Finish: medium, clean, floral, fresh, very moreish. Honeyed aftertaste. Comments: this drinks too well! 85 points - whiskyfun.com

Notes from the producers... Colour: Amber. Nose: Spicy, slightly fruity, caramel. Taste: Tobacco, hints of orange peel, toffee, cardamom, caraway. Finish: Long lasting.

1953 Jean Fillioux Grande Champagne 1er Cru Cognac (350ml)
    Cognac, FRANCE
    $850. 00
    Bottle
    $10200.00 Dozen
    ABV: 42%

This 57 year old Grande Champagne cognac is guaranteed to be one of the great spirits experiences of your drinking career. Distilled from the 1953 harvest, a highly regarded vintage when the grapes produced particularly ripe, concentrated wines with exceptional balance and harmony. Fillioux's house style tends to be light, fruit driven and elegant, however he has proven there are exceptions to that rule. This straddles a middle-ground but is undeniably profound - even from a 10ml sample - running the gamut of honey drizzled figs, nectarines, passionfruit, jasmine, cigar box and rancio on both the nose and palate in an almost ethereal fashion. Although the entry is unassuming, it unfolds in a superb 'peacock's tail' of fruity, floral, oaky flavours that are succulent, super elegant and incredibly long. You will be tasting this stunning Hors d'age cognac for minutes after the first sip. Comes presented in a heavy base bottle sealed with red wax housed in an imposing presentation box. Bottled in September 2010 with an outurn of 800 x 350ml bottles. 42% Alc./Vol.

Notes from the producer... Eye: Amber with a red glow. Nose: Teasing aromas of dried flowers, old sherry, incense, and old leather. Palate: Gingerbread, quince confit and toasted orange zest. Delightful finish with fresh hits of liquorice and sweet spices.

    Cognac, FRANCE
    $390. 00
    Bottle
    $4680.00 Dozen
    ABV: 46%
Tasting note: [Lot no.0918] While the age isn't stated, the deep copper colour of this Grande Champagne Cognac indicates long maturation (the importers say it's over 60 years old). A luscious, lipsmacking and masculine hors d'age expression, it opens with sensuous aromas of nectarine, raisins and baking spices as well as drier notes of pepper and cedar wood and continues to evolve after air contact; 46% ABV amps up the body and mouthfeel; immediately warm and inviting with the perfect juxtaposition of succulent orchard fruits and oaky astringency, finishing with nectarine, passionfruit, buttery oak and late pepper. Super long, this delivers on all sensory accounts. First class. 46% Alc./Vol.

Other reviews... This one is said to be sixty years of age, depending on the sources. Colour: deep gold. Nose: oh! Now we’re really talking, with quinces, citrons, fennel seeds, marmalade, lime blossom, orange blossom, spearmint, liquorice wood, wormwood, woodruff… All those tiny herbs and plants do really make it complex and just pretty sublime. With Cognac, age does matter, if I may… Mouth: love this. It’s pretty unpolished, even a tad rough, but that’s an asset here. Perfect liquorice plus orange combo at first, beeswax, then touches of cider, cardamom, blackcurrants, pomegranates… I’m even finding a little cinchona (Apérol, just ten times nicer). Finish: long, a tad rough (again, an asset in this context), with a little orange-flavoured fudge. Perhaps. Comments: totally high class. Not sure it is true that this is 60yo juice, but anyway, quality’s really very high. 88 points - Serge Valentin, whiskyfun.com

Jean Fillioux is not exactly a household name when it comes to Cognac. But that's not necessarily a bad thing. As with other small 'grower producers, like Jean Luc Pasquet or Paul Giraud, Fillioux's cognacs are the efforts of a hands-on artisan usually dealing in small production runs, which often translates into a more interesting product. In short, such small houses can offer less uniform but more idiosyncratic spirits that stand out from the corporate pack.

The Filliouxs have often used their distillery to make Cognacs for the big four brands. However, the fruit that grows in the vineyard planted on a hilltop in Grande Champagne, 'La Pouyade', has always been reserved for the creation of their own brandies. The site is located in Grande Champagne's "golden triangle": Verrières, Angeac-Champagne and Juillac-le-Coq, an area known to yield the most delicate distillate requiring long barrel ageing to achieve maturity. Most of the Fillioux cognacs are blended, however, there are some exceptional single estate offerings too.

Founded in 1880 by Honoré Fillioux, the company is presently run by his great-grand-son Pascal J. Fillioux, admiringly referred to by his neighbors as the “Magician of Aromas."

Tasting note: [from a 20ml sample] Harvested and distilled in 1992 and matured in brand new loose grain oak casks. Deep amber, some sediment evident. Initial inspections detect marshmallow and vanilla; several minutes exposure lifts the bouquet a notch as pepper, cinnamon and stewed apple-like scents develop, contributing depth and freshness. Seamless and well rounded with a semi sweet harmony of dried fruits, honey, spicy oak and balancing acidity throughout. Finish is accented by slightly astringent oak, thinning out and exiting early. Dilute honey aftertaste. A smooth and relaxed style. 42% Alc./Vol.

Tasting note: Polished brass. Seductively floral and ultra pure. Nosing reveals dried fruits (fig, pear, apricot), roasted almonds plus hints of lemon tart and vanilla custard. Graceful and fresh with a medium dry, mid weighted profile. Early dried fig is followed by buttered raisin toast, vanilla and late cigar box. Excellent balance. The length is fabulous. Luscious and tantalizing. 40% Alc./Vol.

Other reviews... An oldy but a goody, at 45 years old. The first aromas are subtle hints of dried pear seated in an oaky base. With aeration, the second pass unearths fine, even delicate scents of rancio and hard cheese, while the third pass adds hints of citrus, moss, cedar and tobacco. The palate entry is softly sweet, as velvety flavors of raisins and citrus meld with the oak. The mid palate is sweet—in an oaky fashion—and very smooth. The finish is rather short and features old oak. 90-95 points - wineenthusiast.com

Tasting note: [from a 20ml sample] Brassy gold with some very fine sediment evident. Soft and shy bouquet requires some coaxing slowly releasing floral scents of dried grass, whitepepper, prunes and cocoa. Still coy after 5 minutes aeration. Superb poise to the middle weight delivery which is luscious, honeyed, building with flavours of dried figs, toasty oak, rancio and subtle white pepper. Fig and finely tuned tannins in the aftertaste. Excellent length. 40% Alc./Vol.

Other reviews... The brandies in this bottling are over two decades old. The opening bouquet is laden with tobacco leaf, vanilla extract and dried prunes. Rancio becomes apparent in the third nosing pass, in the husky perfume of hard cheese and old oak barrels. Toasty, smoky flavors of sugar biscuits, hard cheese and overripe grapes impress the taste buds on entry. By midpalate, flavors include vanilla bean, plums, black raisins, paraffin and rancio. An average age of 30 years.

Using the Family Treasures stocks as a springboard, Pasquet's Confluences collection offers limited editions of blended cognac. He explains, "I am a cognac maker and blending is part of my DNA, so I always wanted to create high quality blends. I choose to use a small part of the different casks we purchased to supply the Trésors de Famille collection - or to do a collaboration with independent bottlers - to create a custom blend 'sur mesure'."

It's worth noting that due to the region's rules and regulations, age statements are not permitted on the labels unless certificates were issued at the time of distillation and filling into barrel. As many of Pasquet's sources are local growers who maintain a tradition of saving a percentage of production each year for their own reserves, they do not always bother with certifications. For them, their output is simply a “nest-egg” to ensure the pleasure of consuming these spirits in the eve of their lives. Such 'private' barrels are the source of many of Pasquet's current offerings. Where possible, Pasquet states the age of the cognacs in supplementary notes and/or indicates distillation dates via lot numbers.

This, the third edition in the Confluence series, contains Cognac from five different casks filled between 1979 to 1994 giving it an average age of 30 years. Distilled from 100% Ugni Blanc sourced from Grande Champagne, according to Jean Pasquet "It's a very well balanced cognac...the kind of bottles you can open with friends and drink all night long. I like the idea of making Cognac made for friends". 583 bottles are on offer globally. 45.5% Alc./Vol.

Notes from the producers... Bouquet: Orange peel, grapes, quinces, coffee beans, flower honey. Palate: Rich and full, spices, plums, hints of star anise.

45 year old, cask strength cognac selling for a song. "...just magnificent. This is getting higher, as Jim Morrison would have said." - whiskyfun.com

This 100% Ugni Blanc expression comes from the vineyard of André Porchet, located in Asnières-la-Giraud in the Fins Bois region. Cognacs from the years 1968 to 1972 were blended together during the 1980's by André Porchet and then aged in different barrels for approximately 40 years, meaning the youngest cognac in the blend is at least 45 years old. Despite the high ABV, it's extremely well-balanced. Expect notes of passion fruits, flambée banana, spices, honey and plum jam. More about the provenance of this cask from Pasquet himself, below:

"André L68/72 is the result of the work of André Porchet representing the 6th generation of his family. Gaëlle, André's youngest daughter, has allowed us to select this very special cognac from Fins Bois in the commune of Asnières la Giraud. I met Gaëlle at the Lycée Agricole de l'Oisellerie, near Angoulême, where we were both students in the BTS VITIOENO. At the end of our studies, we lost sight of each other for several years to finally meet again thanks to our common friendships in Charente. Gaelle and her brother Yann, 7th generation, took over the 40 ha of vineyards of the family business. Gaelle now shares her life between her native Fins Bois and Bordeaux, where the father of her children is a talented oenologist. The Porchets cultivate their vines with as much passion as discretion. The adage "to live happily, let's live hidden" could be their motto. André is a reserved man of few words. He defines himself as a link in a long chain of winegrowers. With his wife Mireille, an adopted Charentaise of Breton origin, they have worked together, despite the wine crises, to make their family vineyard prosper. From their 10 hectares of vines in 1975, they were able to pass on some 40 hectares to their children. Without discontinuity, this family has cultivated the vineyard since...1680! Even during the catastrophic phylloxera years, there was no interruption in production. André wants to pass on and guard a family tradition that goes back several hundred years. The Porchets have a real knowledge of wine making and an authentic mastery of distillation. Until 1974, the distillery used a 10hl wood/coal still. Since then, gas has replaced coal and today, with two additional 25 Hl stills, the family distills their entire production. This lot 68/72 is the witness of André's first years in the vineyard. We were immediately seduced by this very atypical cognac which is perfectly drinkable at a high degree, a singularity in the cognac world. The Porchets have a real signature. Gaëlle likes to say that "it smells like home", as if the scent of this beautiful eau de vie will always bring her back to this place, wherever she is. The blend of the different vintages was composed in the 80's and has not been modified to this day. From this lot 68/72 we have drawn 738 bottles on September 07, 2022."

Other reviews... André's 1973 had been just flabbergasting three years ago (WF 92). It stems from the village of Asnières-la-Giraud, north of Saintes. Colour: full gold. Nose: it is tighter, more austere, more elegant as well, more on cakes at first, but it would then get more aromatic, with pears poached in Yquem (right, in a small Sauternes), a little muscat, sweet flowers, gardenia, clematis, honeysuckle, daphne… And then even roses. It's incredible how floral this one is. With water: I think I'll have to mention panettones again. It's not an obsession, it's just that I find a good panettone brings together the fragrances and flavours of a fine aged spirit. It's one of life's miracles (hmm…) Mouth (neat): marvelous, first with a touch of varnish. Then peaches of course, raisins naturally, flower jellies and hay, soft liquorice, vine peaches, apricots, crème brulée… I find it amazingly 'full', very classic. With water: just very classic indeed, not need to try to further dissect it. Finish: rather long, with more citrus and honeys, with some very nice tension throughout. Oranges in majesty in the aftertaste. Comments: actually, there's nothing particularly special about it; it's just magnificent. This is getting higher, as Jim Morrison would have said. 91 points - whiskyfun.com

Notes from the producers... Le Cognac d’André is a complex cognac, full of layers of aromas and flavors. Peach, cherry blossom, and earthier tones of leather and walnuts make up the bouquet. A suave and dense palate, blending notes of grape, fig, peach, cherry, almond paste with a spicy (white pepper and ginger) finish.

A wonderful discovery, the Cognacs of father-son team, Jean Luc and Jean Pasquet, are equally a welcome relief in a market dominated by mass-marketed brands. Jean-Luc began working alongside his uncle Albert in 1971 on an estate from the Grande Champagne sub-region that had been in the family since 1730. Assuming full ownership in 1973, Jean-Luc's drive to express the most pure and distinctive expressions from Grande Champagne terroir led to the estate winning organic certification in 1998. Today the vineyard is majority planted with Ugni Blanc (76%), Montils (8%) and Folle Blanche (16%), the latter reintroduced in recognition of its ability to produce eaux de vie of great finesse. With traditional hand-harvests, viticultural and cellar practices, including indigenous yeasts and zero sulphur, this house is the epitome of the word 'artisan' in every sense of the meaning. If you are a brandy enthusiast, JLP should be on your radar as a leader in the quality and value stakes. This handsome tasting pack includes one 50ml bottle of each of the following cognacs, all bottled at 40% Alc./Vol:

1 x Jean Luc Pasquet L'Organic 4 Year Old - the house's youngest and freshest eau-de-vie, full, floral and fruity.

1 x Jean Luc Pasquet L'Organic 7 Year Old - a lovely balance between spiced woody notes and ripe fruits.

1 x Jean Luc Pasquet L'Organic 10 Year Old - a 10-12 year old featuring dried and candied fruits, spice and rancio.

At 57 years old, the value is astonishing. "...huge fruitiness balances the old oak very well here." - whiskyfun.com

2018 marked the end of an era for the house of Pasquet. Very little well-aged cognac from their own vineyards remained in the cellars. As negociants, they could have continued to purchase and blend cognacs from other properties in order to market older expressions, but Jean Luc encountered difficulties finding the desired flavour profiles. Seeking a resolution, he visited the cellars of fellow distillers and growers. These were often friends and nieghbours. He quickly realised that nothing is more unique than a single cask from a single vineyard, crafted by a talented grower/distiller whose family has worked the lands, sometimes for centuries, passing down know-how. The result was the Trésors de Famille collection of all-natural single cask/single estate cognacs, each bottling bearing the distiller’s name and the story of its provenance. These casks are truly family treasures with an appeal that extends to anyone with a penchant for cask-strength single malt or rum. The price/age ratios frequently represent exceptional value. Encouraged by critical acclaim, Pasquet intends to continue adding to the range.

Pasquet's latest release in the Family Treasures' series is a limited run of just 377 500ml bottles. Distilled in 1964, it equates to a single barrel sourced from the vineyard of Claude Duluc in Touzac in Grande Champagne. According to the bottler this is 57 years old! 100% Ugni Blanc.

Other reviews... A single cask gathered at Mr Claude Duluc's in Touzac. It is very moving to read these small growers' stories, which the house Pasquet collects and keeps for posterity. Not many houses do that! Now whether this was really distilled right in the middle of the Beatlemania, I don't know. Colour: very deep amber. Nose: this one's extremely floral, aromatic, very clean, very seductive, with peonies and orange blossom, then rose petals and guavas, mangos, a little black nougat (still warm), pecan pie (still warm as well), botrytis, late-harvest gewurz, old muscat… Well, you see. Exactly the opposite of the very lovely 'Bois' that we just tried. Mouth: it's fruit juice. Say cassis, mango, cranberry and pomegranate, all kept in wood. There is a little oak indeed, perhaps towards rosehip tea, then ripe apricots and oranges, that gewurz VT yet again, Sauternes (especially sémillon), and more and more rosehip tea. This huge fruitiness balances the old oak very well here, I'm sure they could keep chatting together for hours in your glass.  Finish: medium, with that balance preserved all the way till the end of the aftertaste. Comments: this cognac is a tightrope walker. Was Claude a tightrope walker in his young days? 89 points - whiskyfun.com

...Quite expansive and seductive, this one, rising above the Lot 58 in my opinion. A superb nose, no doubt. Yet there’s always this tight woody edge that reminds you of its high age. 90 points - whiskynotes.be

Notes from the producers... Bouquet: very expressive, surprisingly fresh and vibrant for its age, passion fruit predominates, then peach (in syrup), currants, a few notes of toasted sesame seeds, floral notes of rose and jasmine bring it all together. Palate: The attack is frank without being aggressive, fruity, we find notes of passion fruit and peach, the mouth reveals a beautiful tannic structure balanced by floral notes, some notes of sauterne, long and tasty finish.

A one-of-a-kind and very contemporary offering from the family house of Jean-Luc Pasquet. Like most bottlings from this estate, this is completely organic, but this time around, it employs 100% Folle Blanche Cognac Grande Champagne eau-de-vie. Typically, Ugni Blanc is the hero in this appellation, however small patches of land are reserved for rarer varieties. The Folle Blanche grape variety now makes up less than 1% of cognac vines despite being prolific before Phylloxera devastated the French vineyards in the late 1800's. Pasquet harvest, distill, and mature the Folle Blanche grapes separately, beginning in new oak for their first year then transferring to older barrels before being bottled when ten years old. To our knowledge, this is the only example of its kind ever released. The resulting cognac packs a punch, while delivering complex flavours that contrast both sweet and spicy to perfection. Cognac-expert.com added, "As you immerse the senses in the tasting, blissful fragrances of menthol, musk, Mirabelle plums, peaches, sandalwood and orange zest set the tasting alight before the eaux-de-vie has even passed your lips. Next, the silky nuances of honey prevail on the palate – with further hints of Mirabelle plums and spices."

Other reviews... [2010 harvest tasted] This is a single vintage harvested and, I suppose, distilled in 2010, so a ten years old that fully stems from J-L Pasquet's own estate. Colour: gold. Nose: there's what's maybe not often to be found in cognac, some tension and a vegetal brightness that would go way beyond raisins and peaches. Melon skins, some muscovado sugar, even touches of ripe barley and sugarcane (how funnily 'fusion' is that?), also broken branches and hay, a little peanut butter, dandelions… I'm really not experienced enough to be able to recognise folle blanche, but if that's the thing, well hurray for folle blanche!  Mouth: pretty oily and quite curiously, a little malty, with those fine pastry-like notes that are sometimes to be found in malt whisky too (raisin rolls, panettone, kougelhopf…), then rather the expected sultanas, peach and apricot jam, honey, liquorice… Notes of blood oranges too, vanilla, and even a little rye. Finish: rather long, tighter than your usual cognac. Orange blossom water, earl grey, kumquats, liquorice, touch of clove, some menthol in the rather refreshing aftertaste…  Black radish. Comments: the aftertaste makes you ready for more. A cunning plan. Seriously, this is 'modern' cognac, in the very best sense of that word. For us. 88 points - whiskyfun.com

...This a blend of various mid-1990s distillate, all from the village of Eraville. Colour: gold. Nose: I'm first finding a little calvados, with some very ripe apples, even pommes tapées (hit apples, a thing they make in the Loire valley), also pears, then more tropical touches, around guavas. Some ice wine too, then honeysuckle and lilies. I find this one rather luminous, even splendid. Mouth: extremely good, fruity, slightly tropical yet again (pink bananas), with some rose jelly, quinces, soft liquorice, proper pear liqueur and a few glasses of tangerine juice. Which, naturally, is a no-brainer. Finish: medium but fresh, with some menthol, honeydew, perhaps a little pinot gris… And those pommes tapées once again. "The all-organic house of Jean Luc Pasquet Cognac is the epitome of the word 'artisan' in every essence of the meaning." - cognac-expert.com

Produced from organically grown Ugni Blanc grapes, this VSOP equivalent is aged for a minimum of seven years (the minimum requirement is four). It delivers another superb Pasquet bouquet, this time with an emphasis on fruits and flowers, more-so orange blossom, mandarines, tangerines, raisins, ripe peaches and figs.... The sweetness is backed by light pepper and a little cinnamon. The palate is supple, wonderfully rounded and simply delicious - hints of triple sec, honey, fig, white peach and nectarine... Never quite a fruit bomb, rather graceful and elegant to finish, the final stages offering a perfect balance between orchard fruits and fined tuned astringency. Bravo Jean-Luc! 40% Alc./Vol.

A stellar effort that draws comparisons with Delamain’s 'Pale and Dry'. Easily the best value XO Cognac on the Australian market today.

Pasquet's L'Organic 10 is a superb XO standard that's certified totally organic (Agriculture Biologique FR BIO10). Made solely from eaux-de-vie from the premier cru of the region - Grande Champagne, it's another very natural and thoughtfully crafted Cognac that breaks from the formulaic style of many big brands. In short, just what you'd expect from an artisan producer like Jean Luc.

The opening aroma is perfumed and floral-soft (think orange blossom, vanilla) with another dimension of dried fruits developing (figs, raisins, apricots, prunes). 3-4 minutes air contact dries the nose-feel evoking cedar, oak shavings, new leather as well as hints of cinnamon and white pepper. A fabulous sniff. Shows more depth than your average XO, with none of the ‘over-sweetness’ found in many big-house bottlings. Flavours of peach, quince, trace orange liqueur and cigar box with the finish driven by salivating fruit/oak balance, light pepper, cocoa, salted caramel and whisps of passion fruit rounding off a never-ending aftertaste. A stellar effort that draws comparisons with Delamain’s 'Pale and Dry'. 40% Alc./Vol.

This VS is aged for a minimum of four years (the minimum requirement for VS is two years). It will suit those who enjoy a youthful, fresh, fruitier style of cognac. Produced from organically grown Ugni Blanc grapes, Summer fruits feature on the bouquet, including lifted aromas of dried fig, ripe plum and peach over vanilla, hints of fruit cake and a little white pepper. This is delectable VS with a succulence and purity that you don't often encounter. Full bodied, fruity and fresh; dried fig, hints of nectarine and cocoa lead into a spicy finish. Like others in the JLP line up this shows length and poise beyond expectations. 40% Alc./Vol.

Other reviews... Look for a bright golden hue and dried apricot and white flower aromas. The soft palate echoes that floral note, layering it with mouthwatering hints of pear, golden raisin and apricot, leading to lively ginger and white pepper sparks on he finish. Made with a blend of four- and five-year-old eau de vie. 93 points - wineenthusiast.com

Created according to Edouard Martell's own 'recipe' in 1912, this XO standard is something of a benchmark for many Cognac lovers. It's marked by a predominance of eaux-de-vie from the Borderies appellation, a 'lesser' terroir which has garnered well deserved prestige over the last few decades.

Cellar Master, Christophe Valtaud, says of Cordon Bleu: "Here we have a unique Cognac in the XO category. Martell Cordon Bleau is endowed with beautiful complexity and rich aromas, making it a legendary Cognac. Its high proportion of Borderies marks this blend, expanding on its caramelized character with the smoothness of sweet spices, gingerbread, and roasted cocoa beans".

Other reviews...Bouquet is semisweet and prune-like; several minutes of aeration unleashes much deeper scents of honeydew melon, cantaloupe, roasted almonds and apple butter. The palate entry is full bodied, generous and sweet; at midpalate, the flavor profile turns satiny as scintillating tastes of black cherry, black coffee and Macadamia nut blanket the tongue. Aftertaste is extended, smoky and luscious. 90-95 points - wineenthusiast.com

This is Martell’s pride and joy. Every drop is made from rare eaux-de-vie, aged in the Paradis and Purgatoire cellars for 15 years.

Other reviews...Aromas are ripe and melony, then turn deep with subtle hints of walnut, butter cream, oak and marzipan - a sensational bouquet. Right from palate entry the fruit concentration is perfectly balanced by a resiny, cheesy oakiness that blossoms at midpalate along with succulent tastes of raisins, vanilla and butterscotch. Finishes stately, almost chunky. The touch of rancio in the aftertaste puts it over the top. Gorgeous. 96-100 points - www.wineenthusiast.com

Since the Trijol family originally settled as growers and distillers in St Martial Sur Né, in the heart of the Cognac region, they have built on their expertise as growers and producers, becoming full time distillers in 1962. This dual facility maximises quality control throughout the entire production process. Big brand houses (Courvoisier, Hennessy, Martell, and Rémy Martin) do very little distilling themselves. Rather, the 5,000 independent farmers in the region create the majority of Cognac in their own pot stills. The large houses then focus on managing the complex processes of storing, maturation, blending and marketing.

Remaining an independent family firm, Trijol has twenty 2,500 litre charentais pot stills and is now one of the region's biggest distillers, actually supplying many of the larger houses. More recently, the company has concentrated on releasing its own cognacs, which have quickly established a reputation for high quality.

This release is part of Trijol's "Grande Champagne Collection" which includes six cognacs of varying ages. To seal the deal, it comes handsomely presented in a sleek decanter.

Tasting note: Bright topaz. Excellent glass cling. Opens shy but builds opulence with suggestions of dried fig, nectarine, dates, extra-aged muscat and rancio. Air contact and swirling shifts the bouquet towards orange spice cake, light cinnamon and fruit pastry. Medium to full bodied; sweet oak leads, being momentarily lean, finely tannic; Mid palate bursts with dried apple, pear, fig, nectarine and cream. Comes together beautifully at the finish with vibrant white pepper, cinnamon and lingering cigar box. Impressive length. Beautifully composed XO that continues to evolve with extended breathing. 40% Alc./Vol.

Re-tasted June 2015 [New packaging] Perfect clarity, polished copper coin colour. Rich and robust with scents of roasted nuts, cocoa, cigar box and dates. This is super soft and elegant with dried fruit and sweet spice flavours unfolding with excellent length. Sits so lightly in the mouth yet without any compromise on depth and power – in a word, ‘graceful’. 40% Alc./Vol.

First tasted 2011: Deep copper / brass colour displaying good cling to the sides of the glass. First nosings offer restrained but attractive cocoa and dried fig notes. Ten minutes in the glass opens scents of orange peel, subtle vanilla, roast nuts and cedary oak. Entry is concentrated, soft and plush building with medium dry flavours of spicy dried fruits, raisin and fig. Good balancing acidity. Excellent length. Very long dried apricot / cedar aftertaste with a late dried fig burst. Great value.

Cognac returns as the King of Spirits.

Cognac is a huge earner for France, with exports frequently representing over 90% of total production. At the same time, Cognac has seen a significant transformation in its consumer base, from a predominantly older, affluent white demographic to a younger, urban, and significantly African-American and Asian crowd. The spirit has become ingrained in hip-hop culture, even celebrated in songs by rap artists, which also spawned its nickname 'Yak' (or 'Yack'). Today, there's much more substance and diversity to this 'King of Spirits' than big brand names and marketing hype might suggest, with some of the most exciting discoveries to be found among the smallest artisan grower producers. The Cognac grape varieties. As in Armagnac, the main variety planted is Ugni Blanc which accounts for about 98% of Cognac plantings. Folle Blanche along with Colombard are still authorised along with strictly limited amounts of other minor varietals. Growers are looking to pick grapes when they're barely ripe, aiming for acidity rather than alcohol. The leading houses (Courvoisier, Hennessy, Martell, and Rémy Martin) do very little distilling themselves. Rather, the 5,000 independent farmers in the region create the majority of Cognac in their own pot stills. The large houses then focus on managing the complex processes of storing, maturation and blending. Cognac must spend at least two years in barrel to be classified as such, however virtually all Cognacs end up as blends of various ages and appellations, a difficult task as one must imagine how blended eau-de-vies will mature over time, sometimes after decades in casks.
