Aged for at least ten years, it is another acclaimed single-estate expression from the champion of Borderies.     An unusual Cognac distilled from fruit sourced entirely from Borderies - Cognac's smallest appellation. Soils here are a mixture of chalk and clay with a micro climate that is generally the earliest to ripen fruit. In style, Borderies are typically early maturing, full bodied brandies used to give 'backbone' when blending.

    Tasting note: Burnished copper/orange with a pale copper hue. Superb, perfumed aromas offer a top note of orange blossom and dried flowers over deeper scents of dried apricots, raisins and cinnamon. At first fruity, luscious and intense, the palate gradually dries revealing fig, dried apricot and vanilla bean flavours with excellent length. Seamless integration and perfectly balanced, finishing with a long, dry, delicate aftertaste of orange rind, dried apricot and clove. Elegant and immensely attractive. 40% Alc./Vol.

    Deau has earned a quiet reputation as high quality Cognac marque. As usual, it's also down to the skill of the Master Blender. Made using fruit from Petite Champagne (75%) and Fins Bois (25%) and aged for a minimum of ten years, this wows with a myriad of flavours: Think violets, lychee, nuts, coffee beans, and a long finish that intensifies with leather, cigar box, and musk. Deau Cognac claims a lineage back to 1655 with the birth of Louis Deau and the family has been in the wine business for centuries. The estate is owned today by Bru-Legaret and operates twelve traditional pot stills and maintains an inventory of over 2,000 barrels of aging eau-de-vie in six cellars near the Charentes River.

    Presentation is also an aspect in which the house of Deau excels with its beautiful asymmetrical bottles and contemporary designs. The house symbol is the griffin (half eagle, half lion), which is said to guard the vineyards.

    Other reviews... At first this mahogany spirit has just a fleeting honeyed fragrance, but with time it opens up to a deeper, sweet caramel aroma. Get past the initial dauntingly hot alcohol bite, and the reward is a sweet and nutty flavor, finishing with a pretty cinnamon spice and caramel note.

    Delamain Pale & Dry XO Cognac (500ml)

    One of the oldest Cognac producers, but still run by direct family descendants Charles Braastad-Delamain and his cousin, Patrick Peyrelongue. The brand was created in 1762 although the house is much older. Delamain produces no VS or VSOP Cognac, instead its entry level offering is this already 25-year-old XO produced from 100% Grande Champagne fruit sourced from local growers.

    The cognac starts at around 50% ABV before being very slowly reduced with old, lower strength cognacs or "vieilles faibles", rather than water (which is the custom). This practise further highlights an attention to quality that differentiates Delamain from the pack.

    Considered a showcase of the house style, the "Pale & Dry" moniker refers to both the natural colour of the blend and the fact that no sweeteners or 'boise' are added (as is actually permitted by law in Cognac).

    Tasting note: Impeccable purity to the brilliant topaz colour. A superb perfume opens with aromas of rose petal / orange blossom, building with deeper, fruitier scents of figs, pear tart, dates over drier notes of cigar box, new leather and further air contact adding shades of dried banana, orange zest and cinnamon. Just fabulous. Starts off linear, dry. The middle stages are unexpectedly full bodied, vibrant, warming, mouthfilling. A luscious burst of dried fig, stone fruit, orange zest and prune stains the tongue. Driving sandalwood, pepper, almond butter and saffron push the palate length to the max. Doesn’t let up in the final stages as this fades resiny, oaky yet poised with black pepper, vanilla bean and dried fig. A final wisp of passion fruit seals the deal, showing the kind of élan you’d expect from a cognac heavyweight. One of our all-time favourites, regardless of classification or price. 40% Alc./Vol.

    Other reviews... Bold and butterscotchy, this easy-drinking Cognac also has dried fruit and nutty tones, plus a saline touch that's reminiscent of salted caramel. There's a spicy flourish on the relatively dry finish. Delamain notes that it is one of the only Cognac houses to exclude VS and VSOP expressions from its portfolio, “its range starts where others end, with an X.O.”

    Almost beyond all other spirits, cognac requires ageing. Only in this way can its delicate properties be fully realised and its grapey rawness mellowed. The culmination of time and quality can reap ethereal results. Originally created in 1870 by Maurice Hennessy using very old eaux de vie, X.O was reserved exclusively for his family and friends. X.O is blended from more than 100 eaux de vie (some of which have been ageing in the Hennessy warehouses since the early part of this century) specially selected from the four premier growing areas.

    Traditionally X.O has been enjoyed following a meal, however more and more people are discovering the simple pleasures of X.O “On the Rocks”.

    Deep amber in colour indicative of its age, this is a very developed style that has a lovely soft, round mouthfeel and fantastic complexity. The nose displays spicy aromas of oak and leather with the sweeter essences of flowers and ripe fruit. Pepper and rancio testify to the long ageing. The finish is again, complex and long-lasting. 40% alc./vol.

    Other reviews… The eaux-de-vie range in age from 10 to 70 years. Deep amber/chestnut brown hue. Nose is opulent, elegant and emits mature aromas of cheese-like rancio, black tea leaves, raisins and oak.     A one litre travel retail bottling from the House of Hine, crafted with eaux-de-vie from the Grande Champagne region and aged for ten years in their cellars in Jarnac, as well as damp cellars in Britain. Following in the steps of single malt producers, it's becoming more and more common to see Cognac with an age statement as part of their branding. While traditionalists may not like it, others see it as a step towards more transparency within the Cognac market. 41.8% Alc./Vol.

    Other reviews... Right, Hine is a fairly large house, but some say they would rather be on the artisans’ side. I always rather liked their ‘Bonneuils’, for example. Let’s see… By the way age statements are rather a new thing with Cognac, it’s true that you just couldn’t miss this one… Colour: full gold. Nose: oh perfect! Touches of metal polish and pinewood smoke over plums stewed in some sappy honeyed sauce, plus dandelions and the usual preserved peaches. Lovely lovely nose, fresh and yet rather deep. Mouth: great work! It rather goes towards malt whisky, which is a trend indeed with some modern Cognacs, but in this case that works rather perfectly. I’m thinking of Balvenie. Mirabelles (as in ex-BB Balvenie indeed), tinned peaches, touches of orange blossom water, pastries, a discreet touch of liquorice… And frankly, 41.8% works better than 40%, even if we’re never too fond of faked C/S strengths.     A stellar effort that draws comparisons with Delamain’s 'Pale and Dry'. Easily the best value XO Cognac on the Australian market today.

    Pasquet's L'Organic 10 is a superb XO standard that's certified totally organic (Agriculture Biologique FR BIO10). Made solely from eaux-de-vie from the premier cru of the region - Grande Champagne, it's another very natural and thoughtfully crafted Cognac that breaks from the formulaic style of many big brands. In short, just what you'd expect from an artisan producer like Jean Luc.

    The opening aroma is perfumed and floral-soft (think orange blossom, vanilla) with another dimension of dried fruits developing (figs, raisins, apricots, prunes). 3-4 minutes air contact dries the nose-feel evoking cedar, oak shavings, new leather as well as hints of cinnamon and white pepper. A fabulous sniff. Shows more depth than your average XO, with none of the ‘over-sweetness’ found in many big-house bottlings. Flavours of peach, quince, trace orange liqueur and cigar box with the finish driven by salivating fruit/oak balance, light pepper, cocoa, salted caramel and whisps of passion fruit rounding off a never-ending aftertaste.     Other reviews...Aromas are ripe and melony, then turn deep with subtle hints of walnut, butter cream, oak and marzipan - a sensational bouquet. Right from palate entry the fruit concentration is perfectly balanced by a resiny, cheesy oakiness that blossoms at midpalate along with succulent tastes of raisins, vanilla and butterscotch.     Since the Trijol family originally settled as growers and distillers in St Martial Sur Né, in the heart of the Cognac region, they have built on their expertise as growers and producers, becoming full time distillers in 1962. This dual facility maximises quality control throughout the entire production process. Big brand houses (Courvoisier, Hennessy, Martell, and Rémy Martin) do very little distilling themselves. Rather, the 5,000 independent farmers in the region create the majority of Cognac in their own pot stills. The large houses then focus on managing the complex processes of storing, maturation, blending and marketing.

    Remaining an independent family firm, Trijol has twenty 2,500 litre charentais pot stills and is now one of the region's biggest distillers, actually supplying many of the larger houses. More recently, the company has concentrated on releasing its own cognacs, which have quickly established a reputation for high quality.

    This release is part of Trijol's "Grande Champagne Collection" which includes six cognacs of varying ages. To seal the deal, it comes handsomely presented in a sleek decanter.

    Tasting note: Bright topaz. Excellent glass cling. Opens shy but builds opulence with suggestions of dried fig, nectarine, dates, extra-aged muscat and rancio. Air contact and swirling shifts the bouquet towards orange spice cake, light cinnamon and fruit pastry. Medium to full bodied; sweet oak leads, being momentarily lean, finely tannic; Mid palate bursts with dried apple, pear, fig, nectarine and cream. Comes together beautifully at the finish with vibrant white pepper, cinnamon and lingering cigar box. Impressive length. Beautifully composed XO that continues to evolve with extended breathing. 40% Alc./Vol.

An independent family firm, Maxime Trijol has twenty 2,500 litre charentais pot stills and is now one of the largest distillers of cognac supplying many of the larger houses. In recent times the company has concentrated on releasing more of its own cognacs which have been building a great reputation for quality.

    Re-tasted June 2015 [New packaging] Perfect clarity, polished copper coin colour. Rich and robust with scents of roasted nuts, cocoa, cigar box and dates. This is super soft and elegant with dried fruit and sweet spice flavours unfolding with excellent length. Sits so lightly in the mouth yet without any compromise on depth and power – in a word, ‘graceful’. 40% Alc./Vol.

    First tasted 2011: Deep copper / brass colour displaying good cling to the sides of the glass. First nosings offer restrained but attractive cocoa and dried fig notes. Ten minutes in the glass opens scents of orange peel, subtle vanilla, roast nuts and cedary oak. Entry is concentrated, soft and plush building with medium dry flavours of spicy dried fruits, raisin and fig. Good balancing acidity. Excellent length. Very long dried apricot / cedar aftertaste with a late dried fig burst. Great value.

    Paul Giraud's 'Noblesse' is a stunning composition marrying incredible depth of age with youthful vibrancy (a small percentage is aged in demijohns). It boasts a sublime perfume of figs, nectarines, dried apricots, ripe peaches as well as sandalwood, cigar box, manuka honey, sprinklings of pepper and liquorice root and resonates with a slow, intense flood of wood spices, nectarine, fig and dried apricot flavours combined with precision-tuned astringency. Six decades finds the wood (almost) too much; However Giraud's oldest bottlings are noted for their ethereal return from the back palate. You get it here in an encore that completely defies expectations: a haunting, sustained aftertaste hinting at orchard fruits, acacia, jasmine and rose water that unfolds over several minutes. Beautifully harmonised, this mature and totally evolved cognac will show its best after decanting or ample air contact. Highest recommendation.     One of a declining number of first rate producers who resisted the tide of multinational take overs in Cognac, Paul Giraud's Grande Champagne range are created from a magical 35 hectares in Bouteville and in St. Même-les-Carrières. Combining traditional methods with a modern take on production, he avoids chemicals or pesticides and colouring additives in the final blends. Hand harvests are the norm, ensuring careful treatment of the grapes to yield the finest eau-de-vie.     The Giraud family have been growing grapes around France since 1650, yet only decided to produce Cognac under their own name in the 1980s. A long time associate of Giraud informed us "He became frustrated selling his thirty-five year old cognacs to Remy-Martin. His cognac was destined to become a part of the blend, Louis XIII [currently selling for around A$3000.] This was a very brave move during such times - he was one of the first to do so, but we are thankful he did, he paved the way for many more to come."

    Produced from Ugni Blanc and Folle Blanche grapes grown on the family's vineyards located in the heart of Grande Champagne, this venerable expression has been aged in excess of 40 years. Giraud's older bottlings have been among the best cognacs we've tasted. 40% Alc./Vol.

    Showing breed and sophistication, the deep copper coloured 'Reserve Rare' aims to balance expressive younger Grande Champagne brandies with the richness from older vintages. Ragnaud avoids the use of additional sweeteners or traditional boise, adding to the naturalness. Instead of the more typical orchard fruits, you get nectarine, ripe canteloupe and wood spice aromas to the fore. It's easily approached to the point of being dangerous - also seamlessly integrated with attractive notes of dried fig, honey and apricot mingling with dried flowers, ginger, sweet cigar box and rancio. Nectarine and white peach rebound late. Demands patience to reveal its full range, but this would be a wonderful end to an evening's meal. 40% Alc./Vol.

    Raymond Ragnaud is a family run house with a history that can be traced back to 1860. In the 1920s, Paul Ragnaud settled at the Chateau de Ambleville, later succeeded by his son, Raymond. The latter commenced marketing his inherited cognacs, then in the early 1960s, his wife and two children expanded the vineyard holdings to 47 hectares around the towns of Ambleville, Criteul and Lignieres-Sonneville on the slopes of Grande Champagne. Presently, Francoise Ragnaud-Bricq continues the family tradition of producing top-notch cognac and Pineau des Charentes, exporting around 75 per cent of production.

    Tasting note: Reportedly aged for over 20 years, making this an XO. Polished brass. Floral and gently dry nose-feel presents a typical array of dried fruits, developing over five minutes with hints of caramelised pineapple, dried grapes and nectarine retaining appealing freshness. Light and velvety gaining weight towards the finish with a progression of cigar box, pepper, dried fig, nectarine and sweet oak. A fragile thread of vanilla runs through the finish, rebounding in the aftertaste. Elegant, understated, drier styled XO. 40% Alc./Vol.

    A budget-friendly approach to the Tesseron XO collection.

    Well known by wine lovers as the proprietors of Chateau Pontet Canet and Lafon Rochet in Bordeaux, the Tesseron family are also one of the finest exponents of extra-aged Cognacs. Dealing almost exclusively in X.O, their Grand Champagne vineyards were purchased in the 19th century by Abel Tesseron, whose face features on the company’s logo. Grandsons, Alfred and Gérard carry on the business today and in 2003 made the decision to release a range under their own name. A welcome departure from the big four (Remy, Hennessy, Martell and Courvoisier), Tesseron’s XO house style epitomises a finer, more elegant side of cognac with the range including eaux de vies up to seventy years old. Given that several of their bottlings command luxury prices, this tasting pack composed of one 50ml bottle each of Lot Nos. 90, 76, 53 and 29 gives cognac lovers the chance to explore the range with a minimum outlay.

    With an average age of just over ten years old, Lot 90 is the youngest of Tesseron’s XO cognacs. Predominantly distilled in the 1990s using 100% Ugni Blanc from Grand Champagne, Petite Champagne and Fins Bois, the opening passes offer heavy scents of ripe apricots, figs and candied fruits, also hinting at nectarine, banana, vanilla, white pepper and light rancio. Silky, medium-weight and graceful in the mouth, leaning towards passionfruit and fresh figs, the finish is finely tannic, oaky, poised and borderline succulent with a nice rebound.     100% ugni blanc, with the youngest component being 25 years old.

    Lot 76 is a blend of 25- 30-year-old reserve stocks of Grande Champagne cognacs, distilled predominantly in the mid-1970s and then matured in old casks until bottling. Compared to Lot 90, the nose is less opulent but more nuanced yielding hints of sandalwood, orange zest and dates, and while it's understated on entry, the middle and later stages boast a gorgeous richness and depth, the fruit notes tending towards dried figs and pear eaux de vie. Wood spices develop before the finish turns wonderfully delicate, lingering with suggestions of fruit cake, cigar box, dark chocolate and cinnamon. A balance of richness and classic cognac elegance is achieved here, with a profile that resembles some very old sherry-matured single malts - think Glenfarclas or Glenlivet.     A blend of Grande Champagne cognacs distilled in the 1920s along with 5% from 1905 and 30% from 1906 with both Colombard and Folle Blanche in the mix. In terms of sheer finesse, effortless delivery and depth, Lot 29 is a high point in the Tesseron collection. The age of the material is on full show in a complex medley of dried fruits, honey, dark chocolate, liquorice, pipe tobacco and cigar box, rounded off in a super-fine, medium-long finish of hazelnut dark chocolate, saffron and feathery tannins. The alcohol is barely discernible. It may lack the power and length of its siblings, but this is easily Tesseron's most feminine and seamlessly integrated cognac - also one of the rarest.     ...Aged by three generations, they say. But is this a 1929 indeed? What's sure is that Lot N°53 had already been quite sublime two or three weeks ago (WF 90). And never mind those 40% ABV, which are really out of fashion and have become quite devalued. Colour: deep gold. Nose: it's probably a little difficult after the Valleins, we're actually closer to some very old calvados here, it rather whispers and sighs, being a little herbal beyond some ripe apples and peaches that, having said that, keep expressing themselves after so many years. Affabile and con tenerezza. Mouth: more action than I had thought, but we remain far from the others – and far from Tesseron Lot N°53. Some sweetness, syrups, Nescafé (I know), a little pancake sauce, mead… Finish: shortish, on herbal teas, chamomile, stewed peaches… Some candy sugar in the aftertaste. Comments: I know I tend to be rather kind towards very old spirits, and of course, this cognac from the roaring twenties remains as nostalgic as an old Bugatti, but I believe that here the engine has lost a little horsepower. 'This is pretty much what I consider my grandfather's Cognac, 1920s distilled but with a portion from a 1905 demi-john. For me this is a bit like a book, every time you go back to it it changes, something very special; the rancio is quite strong, but very different from the 1953; very special for us, and very rare to have it tasted, if at all.     A blend of Tesseron’s stocks of Grande Champagne cognac distilled in the 1950s from a base of Ugni Blanc and a small addition of Folle Blanche. With fifty years in barrel, it continues the theme of Lot 90 and Lot 76 but heads into more refined territory; Tasted from a 50ml sample, the nose is a slow-burn affair, developing aromas of nectarine, dried apricot, peach and rancio that follow through in a sublimely soft entry; delicate acidity brings a linear structure and a fine-tuned vivaciousness through the mid-palate; the finish picks up steam with orchard blossoms (apple, pear), hints of dry triple sec, nectarine, dried figs and cigar box followed by a superb rebound. Arguably the 'sweet spot' in the Tesseron range, balancing age, power and elegance, it's a cognac that demands time and quiet contemplation. 40% Alc./Vol.

    Other reviews... They say this one aged for more than two generations in Limousin oak, which might corroborate the number '53', but that's no evidence. Colour: full gold. Nose: we're closer to… old Macallan, seriously. Some beeswax, old books, roasted nuts, various honeys, dried figs, honeysuckle, apricot jam, a tiny smokiness, very dry raisins, touch of pipe tobacco… I'm finding all this very elegant, still pretty classic (no new-age cognac), while the wafts of menthol that then rise to your nostrils are superb. Mouth: 43 or 46% pleaeaeaease! Flower jelly (mullein), peaches, mirabelles, quinces, lavender honey, not that many sultanas, a little bit of rice pudding, custard. Superb freshness. Finish: medium, with a few soft spices but the mirabelles remain firmly at the helm. Touch of pine resin and chartreuse in the aftertaste.     For various reasons, usually to do with appellation rules and regulations, Cognac bottlers are employing ‘funny numbers’ to tell you about the vintage of the liquid. In this case, ‘Lot 92’ indicates that this was distilled in 1992 (the bottling date isn't stated but you can assume it's XO and beyond). It's part of a relatively new venture for French retailer, La Maison du Whisky, that takes a leaf out of the independent Scotch whisky playbook. "Through the Grapevine" is the name of the merchant, while the spirit is identified as being from Camus. The house is known for its originality and has no qualms about leaving the beaten path to champion the minerality of its native Fins Bois terroir. The varietal here is Ugni Blanc, distilled in one of the region's eight traditional stills, driving a style somewhere between saltiness and exotic fruits with hints of tobacco. It is one of just a handful of all-natural cognacs imported to date. Bottled uncut with zero additives, these limited editions are aimed at purists and the adventurous, as well as anyone seeking serious 'malternatives'. 52.2% Alc./Vol.

    Notes from the bottlers... The complex first nose is particularly fruity (apple, pear). Allowed to breathe, it becomes saline and vanilla. Spices (ginger, clove) and white grape flavours then bring us to cognac country. The lively attack is both roasted (tobacco) and mentholated. New fruits have appeared (Mirabelle plum). The mineral (chalk) mid-palate reveals lots of freshness (spearmint). The very end of the palate offers a pear yoghurt. The well-balanced start of the finish is in perfect symbiosis with the nose and palate. It is fruity, lemony, herbaceous, spicy and also oily (olive). On the retro-nasal olfaction, cocoa bean and beeswax bring lots of creaminess.

    [Earlier release tasted] ... Colour: full gold. Nose: this has more power and a very faint ‘good’ soapiness (rose scented soap) as well as a little candy sugar. Also cloves, then more marshmallows and touches of blackcurrant jelly. Very nice nose, globally fruitier and sweeter than the Whisky Fair, more compact. Also raisins… Mouth: we’re much closer to ‘traditional’ cognac than with the Whisky Fair. Much more raisins and prunes, Seville oranges, touches of coffee and just a little pepper. Also some milk chocolate. A fairly big body here. Finish: long, a tad hotter, on candy sugar and raisins. Comments: this one is very satisfying and quite full.     Quite extraordinary: It's Cognac, it has an age statement, possibly drawn from a single barrel, it's bottled at cask strength and has no caramel colouring. Sourced from Denis Charpentier's inventory, who started in the wine business in 1984 and founded the house that bears his name several years later. His wines, Champagnes, Cognac, brandy, and Scotch whisky have all received numerous gold medals and trophies in international competitions.

    Serge from WhiskyFun (one of the most prolific spirits reviewers on the planet) rated this 90 points in Sept 2015 (see below review, and yes, 90 points is a huge score from this man).
    In Cadenhead's words, "A big nose from this single cask Cognac. Sweet toffee; quite oily with bananas, liquorice, brown sugar and coffee beans. Palate Sandalwood; stewed fruits with soft spices; white pepper, cinnamon, star anise and then toffee and faint kiwi fruits. Amazingly rich and rather complex as one would expect after 30 years in the cask. Finish Growing toffee and spiced oak with waxy orange notes and candied ginger. A sit back and relax cognac. Dare we say this would make a fantastic gift for anyone who's looking for an alternative to buying a whisky."

    Tasting note: Brilliant polished copper / brass colour. Spirity but doesn't sting, in fact the aroma is surprisingly harmonious given the ABV. The opening phase releases notes of dried fruit and roasted nuts, followed by banana cake, brown sugar, brandy cream and hazelnut chocolate. Five minutes emphasises dried fig, raisin, vanilla and cedar wood plus more. Punchy and full bodied with a concentrated fig and smokey cardamom delivery; finish adds drier notes of cigar box, cinnamon, pepper and late fruitiness. Solid length and balance, closing slightly acidic, spirity and more restrained than the mid-palate stage. An unadulterated gem. 52.4% Alc./Vol.

    Other reviews... I hope these Scots won’t teach us lessons! I do not think that Charpentier are distillers, so this might be a merchant’s merchant bottling, so to speak. Let’s try it… At least, the strength is right! Colour: gold. Nose: malt whisky! I’m not joking, they’ve managed to select one cognac that smelled pretty much of malt whisky. Well, it smells much less of cognac than all the other cognacs we’ve just tried (which is why I never taste spirits as singletons, without any comparisons). So overripe apples, hay, barnyard, burnt wood, a little paraffin, and even a very remote smokiness. Plus stewed tropical fruits, perhaps guavas. With water: seriously! It’s quite great, it’s just… malty. It’s well known that the old Scots used to add brandy to their whiskies for improving prior to selling them, but the other way ‘round? Now indeed, these very fine notes of peaches… Mouth (neat): a Scottish cognac indeed. Starts like a malt, and develops like a malt. Vanilla and barley. Oh, did it spend a little time in an ex-whisky cask of some kind? That would be illegal – so we’ll never know, ha-ha – but it feels a bit like that. Apples, green melons… And very, very little raisins. Perhaps one tiny raisins? With water: same feelings, but it really gets complex. Herbal teas, menthol, citrons… And peaches. Finish: long, fresh, parfait. I mean, perfect. Comments: metanoical spirit or cross-genre distillate, I don’t know how to call this. What’s sure is that I find it quite superb. The Scots teaching the French a few lessons, this obviously isn’t rugby ;-)

    Of the four or five big names that dominate the Cognac market, Camus has stood its ground as our steady favourite.

    Perhaps it's the fact that it’s the last of the major Cognac Houses to remain entirely family run, but probably more-so for their championing of Borderies, Cognac's smallest appellation, though certainly not its most prestigious. Soils here are a mixture of chalk and clay with a micro climate that's generally the earliest to ripen fruit. Borderies are typically early maturing, full bodied brandies used to give 'backbone' when blending. While eaux-de-vie from all six of the Cognac crus are included in this expression, according to Camus, it’s the Borderies input that gives “…a rounder flavour and greater aromatic length”. Apart from a shared enthusiasm for this appellation (their Borderies exclusive is a must try), the Camus house style also tends to retain slightly more 'freshness' and finesse when compared to often sweeter, broader examples from the likes of Hennessey or Courvoisier.

    Composed of material that’s a minimum of six years old, reportedly, some of the eaux de vie in the Elegance XO blend is matured for as long as 30 years.

    Tasting note: Deep polished copper. Issues a seductive perfume that includes fig paste, apple strudel, honey and cigar box followed by a light to medium bodied, juicy dried fig / apple mid palate with a peppery finish and a fresh, drying orange cake and cigar box aftertaste. Beautifully balanced. Silky and elegantly styled XO. 40% Alc./Vol.

    Other reviews... This copper--penny colored Cognac is best when allowed time to open, since it evolves in the glass. The nose offers notes of dried cherries, toffee and oak. The palate is light at first, with vanilla and warm caramel deepening to an unusually fruity finish full of rounded apricot and orange flavors. It's mouthwatering and delicious, perfect for pairing with fruit tarts and pies.

    Launched in 2010, this is one of the new highlights in Courvoisier’s core range.
    Sub titled “The Connoisseur Collection”,it also marks a departure from convention. The Cognac category has not been able to declare age statements because of BNIC restrictions involving tracking and certification. To get around this, Courvoisier had the idea to establish an in-house tracking system to allow declaration of age on specific eaux-de-vie. That was over two decades ago. It’s a development that's been unpopular with several rival houses, as Cognacs have traditionally been marketed with only rough estimates regarding age. Clearly, Courvoisier's is a strategic move aimed to appeal to other spirits consumers, such as Malt Whisky drinkers.

    Of the new marque, Master Blender, Patrice Pinet comments "21 years old is not only the coming of age for many young adults but also for Connoisseurs who want to enjoy a perfect Grande Champagne." While it reportedly contains up to 8 grams / litre of sugar (up to 15 grams/litre is permitted) it's free from boise. Pinet adds, “It’s not our style…We prefer floral notes, not the tannins that boise would bring”.

    Sourced from the finest eaux-de-vie from Grande Champagne, 21 years is considered the perfect time for eaux-de-vie to develop their full richness and heightened aromatic style. This promises notes of dried hazelnut, dried apricots and figs, followed by cocoa and honey, leather and fine cigar. The aromas follow through on the palate with candied orange and gingerbread, and an exquisite depth that seems to go on forever. Great reviews, but very limited stocks.

    Before establishing the company in Jarnac, and as his father Emmanuel did before him, Felix Courvoisier worked in close association with the Gallois family, important wholesalers in wine and spirits in Bercy. As loyal suppliers to the Imperial Court, they had been honoured with Napoleon’s visit at their warehouses in 1811. Legend has it that Napoleon made sure to bring several barrels of cognac on the ship which took him to St Helen, a treat much appreciated by English officers who named it 'The Brandy of Napoleon'.

    Courvoisier exclusively uses Ugni Blanc grapes, from the four finest crus of the Cognac region: Grande Champagne, Petite Champagne, Borderies and Fins Bois. Courvoisier has contracts with more than 1,000 vine growers’ families, who have been linked to the brand for generations.

    The double distillation process is specific to cognac, and takes place in a traditional Charentais pot still made of red copper. Produce from the first distillation, the 'brouillis' is distilled a second time for 'La Bonne Chauffe' (The Good Heating). The distiller must then separate the final product into three parts: the heads, the heart (the young cognac, a clear and pure eau-de-vie at 70% ABV), and finally the tails. The stills work day and night from the beginning of November until the 31st of March. Unlike many of its competitors and because a smaller still allows better control of the quality and complexity of the young cognac, Courvoisier uses only the latter for both distillations.

Complex aromas of ginger cookie, anise seed, fig bread, suede, praline and vanilla pudding follow through on a round, supple entry to a fruity-yet-dry medium-to-full body with tangy dried citrus, cola, and cocoa notes.     One of Delamain's oldest expressions, Extra comes in an original decanter, designed and blown exclusively for Delamain. In cognac, the 'Extra' classification is essentially the same as XO (at least 6 years of age), however it denotes a quality that's superior to an XO or Napoleon, so the average age is typically 15-25 years. Delamain's goes beyond that.

    Tasting note: Bright amber gold. Shy and dry... vapoury alcohol, pencil shavings, muted dark chocolate, dried fruits. 5-10 minutes air contact expands the bouquet adding hints of honey, orange blossom, dried fig, cedar but the aroma remains relatively restrained. Palate offers a superb, slow-motion release of orchard fruits (apricot, fig, peach), light rancio and an almost chewy feel. Finish accents cedary oak, wild honey, light passion fruit, cocoa and vanilla. Ends fresh, finely tannic, linear, understated and deceptively long with the exotic fruit notes reverberating late.     On the nose, you first perceive old fashioned rose and a hint of cherry blossom, then the wood comes into play and integrates the fruit.     Local demand for XO Cognac has spiked in the last decade with Australia now the seventh largest market. Delamain are making a welcome return with four distinctive blends: Pale & Dry, Vesper , Extra and Le Tres Venere, the oldest in the line up so far. Unlike many producers, Delamain refrain from additives or colouring (e.g. boise or sugar), which can change the flavour profile. The resulting cognacs are delicate, elegant and dry - sometimes bordering on restrained - in contrast to the sweeter style ‘fruit bombs’ you get from many other houses.

    With no vineyard holdings of their own, the focus here is on acquiring the finest Grande Champagne eaux de vie. Of around four hundred samples that are received each year, around 10% make the grade. Cellar master, Domonique Touteau, also bottles well beyond the minimum XO requirement of six years. Their youngest XO blend stands at 25 years old whilst their oldest and most exclusive includes elements up to 55 years old.

    Tasting note: Like the Vesper, this has a relatively tight, dry nose feel, the opening pass hinting at oak shavings and white pepper. 3-4 minutes air contact sweetens the bouquet, highlighting vanilla, honey, fruit cake, dried figs and raisins. Luscious and fruity on entry. Excellent concentration with a lovely rush of passion fruit and nectarine through the finish. Ends long, dry, understated, elegant and very natural with the fruity notes rising again. 40% Alc./Vol.

    Launched in the 1950s, Vesper (Latin for “evening” or “evening star”) is a special cuvée with an average age of around 35 years. Each component is separately aged. Following assemblage, the blend is returned to oak casks for a further two years to marry in a single 350 litre Limousin oak cask. Delamain Export Manager, Olivier Jadeau likes this expression matched with dark chocolate.

    Tasting note: Brilliant topaz. Leaner and drier on the nose than the 'Pale & Dry', with more pepper and oak (wood shavings, fresh cut cedar, cigar box). Later, subtle dried fig, orange peel and bitter chocolate. Creamy entry is momentarily full and rich with a burst of vanilla and stone fruit (peach / nectarine / fig). Finishes vibrant, succulent, then finely astringent, dry, medium long. 40% Alc./Vol.

    ...A shame that they bottled this old beauty at 40%, though, hope it won’t feel too weak or even only shy. Colour: amber. Nose: indeed it is a little shy, discreet, almost evanescent at first nosing. It’s only after one good minute that some subtle notes of dried figs and raisins start to rise to your nostrils, together with a little milk chocolate and the lightest pipe tobacco. Also pine needles, but that’s after two minutes. Mouth: extremely good, no doubt about that, even at 40% vol. Sure you need more, which is a little frustrating, but these bright oranges and juicy ripe peaches just work. This, at 45% vol., would make for one of the greatest Cognacs. Finish: a little short and fragile, rather sadly. The core is superb, though, I especially enjoy these notes of cherry jam. Comments: a great Cognac, but also a missed opportunity, in my opinion. Even if I very well know that many regular Cognac drinkers don’t really dig higher strengths, which may pose a dilemma.

    Maison Hardy owes its name to an authentic English gentleman, Anthony Hardy. Like any conscientious wine and spirit merchant, Hardy liked to get out of London as often as he could and head down to Charente to check on the progress of the finest Cognac crus. He finally succumbed to the region’s charms in 1863, relocating permanently and founding Maison Hardy. As a mark of his great affection for France and the French, he went so far as to adopt the Gallic form of his Christian name, henceforth being known as Antoine Hardy. He also adopted the iconic French cockerel as the emblem of his new company.

    Hennessy has chosen to mark a milestone with this aptly named '250th Collector Blend', a limited-edition that brings together spirits from four different decades in one elegant bottle. An achievement of Master Blender, Yann Fillioux who started training at Hennessy when he was only 19 years old, it represents a middle ground between cognacs like Paradis and Richard Hennessy - so is perhaps best thought of an entry point to Hennessy's super premium offerings. The cognacs in the blend are all between 15 and 40 years old and no more will be made beyond the 250 x 250 litre barrels. Evaporation, dilution, and some other factors mean the exact outturn is impossible to determine, but one can assume it was around 50,000 bottles. Collectible. One only from a private collection.

    Almost beyond all other spirits, cognac requires ageing. Only in this way can its delicate properties be fully realised and its grapey rawness mellowed. The culmination of time and quality can reap ethereal results. Originally created in 1870 by Maurice Hennessy using very old eaux de vie, X.O was reserved exclusively for his family and friends. X.O is blended from more than 100 eaux de vie (some of which have been ageing in the Hennessy warehouses since the early part of this century) specially selected from the four premier growing areas.

    Traditionally X.O has been enjoyed following a meal, however more and more people are discovering the simple pleasures of X.O “On the Rocks”.

    Deep amber in colour indicative of its age, this is a very developed style that has a lovely soft, round mouthfeel and fantastic complexity. The nose displays spicy aromas of oak and leather with the sweeter essences of flowers and ripe fruit. Pepper and rancio testify to the long ageing. The finish is again, complex and long-lasting. 40% alc./vol.

    The House of Hine stands on the banks of the River Charente, deep in Cognac country. It is one of the oldest houses in Jarnac with over 250 years of history.

    Hine has recently upgraded its XO from Fine Champagne to Grande Champagne (as well as its packaging), meaning that all the eaux-de-vie used in the assemblage are from the best region of Cognac. This bottling is aged a minimum of 10 years.

    Tasting note: Burnished copper colour. Several minutes in the glass yields moderately intense, semi sweet scents of dates, vanilla, marzipan and cedar. Medium bodied, soft and round with a slightly creamy texture, the palate is gently spicy and semi sweet; dried fruit (prunes, dates) and spice flavours are perfectly balanced against fine drying tannins. Finishes clean and warming with a subtle aftertaste of roasted nuts, vanilla and spice. A nicely integrated XO. 40% Alc./Vol.

    Other reviews... The wee house Pasquet is located in Eraville near Segonzac, the capital city of Grande Champagne. It is, of course, own-estate Cognac, here a mid-life vatting of several vintages ranging from 1991 to 2000, all matured separately until the year 2008, then blended together, then bottled nine years later. Colour: gold. Nose: we’re much more on flowers this time, dandelions, orange blossom, honeysuckle, buttercups… There are wee notes of orange juice as well, a touch of chocolate fudge, and hints of roasted cashews. Whiffs of sandalwood as well. Very elegant, especially after the rather boisterous - yet excellent - François Voyer. Mouth: it’s tenser, tarter, more citrusy than the others. Lovely notes of blood oranges, pink grapefruits, tangerines, even bergamot (really reminds me of those marvellous Bergamottes de Nancy – those are sweets that you should try). A very faint salty touch in the background, as well as a little miso or even umami. That’s pure fun! Finish: longer than the others, a tad more restrained and grassy, perhaps a little less ‘commercial’, whatever that means. Excellent. Comments: a serious style, extremely good.     A wonderful discovery, the Cognacs of Jean-Luc Pasquet are equally a welcome relief in a market dominated by mass-marketed brands, many of which seem to be suffering from a lack of freshness, excitement and value for money.

    Jean Luc began working alongside his uncle Albert in 1971 on an estate from the Grande Champagne sub-region that had been in the family since 1730. Located south of the city of Cognac, between the rivers La Charente and Le Ne, covering 13000 Ha, the soils here are made of a thin top layer of limestone with a high calcareous content and Montmorillonite clays, resting on a base of porous chalk from the Cretaceous (campanien sub-period), acting as a buffer for water supply to the vineyards. Such edaphic parameters contribute to fruit quality by avoiding vine stress in warm weather, and at the same time, allowing excellent drainage in case of excessive rains. Thus Grande Champagne holds the potential for optimum flavour profiles to develop in the grapes (which usually fall within the floral spectrum) making it Cognac's most prized terroir; Its vines yielding the subtlest, most fragrant Cognacs, and the ones that need the greatest maturation.

    Assuming full ownership in 1973, Jean-Luc has continued the enterprise, now selling Cognac under his own name, ranging from 4 year old to 80 year old expressions from the inherited stocks, including the now extremely rare “Oncle Albert-Tres Vieux Cognac”. Jean-Luc’s drive to express the most pure and distinctive expressions from Grande Champagne terroir led to the conversion of the estate to organic viticulture, winning certification in 1998. Today the vineyard consists of single 7.5 Ha plot, majority planted with Ugni Blanc (76%), Montils (8%) and Folle Blanche (16%), the latter reintroduced in recognition of its ability to produce eaux de vie of great finesse. Traditional 100% hand-harvest is the norm, in line with viticultural and cellar practices. Sulphur is nowhere to be seen on this estate and with the youngest component of XO's required to be only 6 years old, Pasquet's pushes an average of 25. If you are a brandy enthusiast, note - the below is not a normal price. This is superb Cognac at an extraordinary price, in fact around $50 cheaper than most other XOs that we’re aware of on the market with no compromise on quality whatsoever.

    Released in November 2016, Martell Intense Heat Cask Finish utilises a first-of-its-kind finishing process for the brand, with the company describing it as “its most ground-breaking Cognac to date". Originally available at key travel retail locations throughout Asia, we have secured a small volume for Australian fans of Martell.

    As with the regular Cordon Bleu, this is also assembled from over one hundred eaux-de-vies (primarily Borderies), however the final spirit is finished in barrels that have been extra charred. The process leaves the barrel’s staves ‘charcoaled’, taking on the appearance of a crocodile’s scales. The spirit cycles in and out of the wood infusing nutty, spicy notes as well as vanilla, coffee, cinnamon and fudge (no, it's not extra spicy or 'hot', which is where some people get confused by the title). The deep blue box is embossed to replicate the crocodile leather-like pattern that results from the toasting method, with flashes of gold creating the illusion of glowing embers. 40% Alc./Vol.

    Made at Naud's famous 'hidden distillery' in the middle of the woods in the Cognac region. The family firm now run by Jean-Michel and Pierre Naud create this expression using some of the oldest spirits in their archives. A multi-region blend and easily the darkest XO we've tasted (comparable to a sherried single malt), it offers aged character at an entry level price. The aromas open sweet and woody, followed by moderate scents of dried apricots, figs, cinnamon and pipe tobacco. The savoury, light to medium-bodied delivery hints at figs and prunes, followed by a dusting of wood spice, suggestions of leather armchair, warming cinnamon, walnuts and rancio.     The Giraud family have been growing grapes around France since 1650, yet only decided to produce Cognac under their own name in the 1980s. A long time associate of Giraud informed us "He became frustrated selling his thirty-five year old cognacs to Remy-Martin. His cognac was destined to become a part of the blend, Louis XV [currently selling for around A$2000.] This was a very brave move during such times - he was one of the first to do so, but we are thankful he did, he paved the way for many more to come."

    Produced from Ugni Blanc and Folle Blanche grapes grown on the family's vineyards located in the heart of Grande Champagne, this venerable Cognac has been aged in excess of 25 years.

    Tasting note: Pretty gold amber colour. Sauternes-like opening sniff is superbly pure in its dried apricot, honey and candied fruit delivery. Second phase finds no diminution in the stunning honey, cream and apricot aspect with sweet spices (vanilla and clove) entering the mix. Returning to the glass several minutes later introduces rose petal and hints of mandarin peel to round off a dazzling cognac bouquet. Palate is concentrated / full weighted but graces through the mouth with a sense of lightness; dried fig, cedary oak and toasted almond feature. Finishes gently tannic, lip smacking and dry; the yellow fruit phase is again suggested in the aftertaste - in particular apricot - followed by a prolonged, subtle vanilla and toasted almond fade. First class. 40% Alc./Vol.
