    Tasting note: Polished copper coin colour. Pretty, floral aromas evoke dried flowers, figs, raisins, chocolate box and oak shavings becoming leaner and drier in later passes.     In 1865, inspired by the decorative handle of his office window, Maurice Hennessy created the star symbol that he would use to classify his cognacs. Thus was born the Three Star Cognac, better known today as V.S. Hennesey V.S. is a blend of more than 40 eaux de vie from the four premier growing areas of the cognac region. Hennessy V.S has traditionally been enjoyed after a meal, but it is also very popular mixed with ice and soda water, tonic, orange juice or ginger ale, as a long drink.

    Tasting note: Brassy gold with gold hue. Moderately aromatic nose yields subtle aromas of dried fruits, old wood and pepper. An off dry, medium to full bodied palate offers flavours of boiled confectionary and dried fruits with a peppery kick, before a drying tannic finish sets in. Reasonable aftertaste of pepper and sweet leather with a touch of caramel and tumeric. Entry level cognac. 40% alc./vol.

Produced from organically grown Ugni Blanc grapes, Summer fruits feature on the bouquet, including lifted aromas of dried fig, ripe plum and peach over vanilla, hints of fruit cake and a little white pepper. This is delectable VS with a succulence and purity that you don't often encounter. Full bodied, fruity and fresh; dried fig, hints of nectarine and cocoa lead into a spicy finish.     Before establishing the company in Jarnac, and as his father Emmanuel did before him, Felix Courvoisier worked in close association with the Gallois family, important wholesalers in wine and spirits in Bercy. As loyal suppliers to the Imperial Court, they had been honoured with Napoleon’s visit at their warehouses in 1811. Legend has it that Napoleon made sure to bring several barrels of cognac on the ship which took him to St Helen, a treat much appreciated by English officers who named it 'The Brandy of Napoleon'.

    The relations under the rule of Napoleon I lived on through the Second Empire, as Napoleon III granted Courvoisier the title of 'official supplier to the Imperial Court' in 1869. This certificate is now on display at the Courvoisier museum in Jarnac, with many other Napoleonic artifacts memorabilia such as his hat, a redingote and even a lock of the Emperor’s hair. A number of wine-making families have been in business with Courvoisier for generations. Through intimate knowledge of the grapes and time-tested relationships with our wine makers, Courvoisier brings an historical perspective to key aspects of cognac production. Courvoisier exclusively uses Ugni Blanc grapes, from the four finest crus of the Cognac region: Grande Champagne, Petite Champagne, Borderies and Fins Bois. Courvoisier has contracts with more than 1,000 vine growers’ families, who have been linked to the brand for generations. Knowing the grapes and the wine maker gives Courvoisier, through permanent advices and technical backup, a unique advantage and guarantees the highest quality products.

    The double distillation process is specific to cognac, and takes place in a traditional Charentais pot still made of red copper. Produce from the first distillation, the 'brouillis' is distilled a second time for 'La Bonne Chauffe' (The Good Heating). The distiller must then separate the final product into three parts: the heads, the heart (the young cognac, a clear and pure eau-de-vie at 70% ABV), and finally the tails. The stills work day and night from the beginning of November until the 31st of March. Unlike many of its competitors and because a smaller still allows better control of the quality and complexity of the young cognac, Courvoisier uses only the latter for both distillations.During maturation, only French limousin oak, preferred by spirit makers worldwide is used. The Master Blender personally inspects and approves every oak to be transformed into casks. Aged 100-200 years old, their finer grain woods add superb complexity and finesse. After selection by the Master Blender the wood is aged and controlled on our own premises to ensure the highest quality. These venerable oaks, from the state forests in France, are carefully cultivated and replanted to ensure a supply for future generations.Courvoisier ages its cognacs far beyond requirements prescribed by BNIC (Bureau National Interprofessionnel du Cognac), the organisation which maintains cognac standards.

    The Courvoisier challenge is to make the same Courvoisier cognac year after year, a task made even more difficult by the fact that each year brings different vintages, different wines, and cognacs of varying characteristics. During the twentieth century only four people held the important and prestigious post of Maitre de Chai at Courvoisier. Jean-Marc Olivier, the master blender since 1986, is ensuring the high standards of Courvoisier are maintained in the twenty-first century.

    Jean Luc Pasquet Organic VS Cognac (700ml)

    A wonderful discovery, the Cognacs of Jean-Luc Pasquet are equally a welcome relief in a market dominated by mass-marketed brands, many of which seem to be suffering from a lack of freshness, excitement and value for money.

    In his 19th century classification of the crus of Cognac, the geologist Henry Coquand recognised the Grande Champagne area as the 1er cru of Cognac. Located south of the city of Cognac, between the rivers La Charente and Le Ne, covering 13000 Ha, the soils here are made of a thin top layer of limestone with a high calcareous content and Montmorillonite clays, resting on a base of porous chalk from the Cretaceous (campanien sub-period), acting as a buffer for water supply to the vineyards. Such edaphic parameters contribute to fruit quality by avoiding vine stress in warm weather, and at the same time, allowing excellent drainage in case of excessive rains. Thus Grande Champagne holds the potential for optimum flavour profiles to develop in the grapes (which usually fall within the floral spectrum) making it Cognac's most prized terroir; its vines yielding the subtlest, most fragrant Cognacs, and the ones that need the greatest maturation.

    Jean-Luc Pasquet began working alongside his uncle Albert in 1971 on an estate from the Grande Champagne sub-region that had been in the family since 1730. Assuming full ownership in 1973, Jean-Luc has continued crafting Cognacs, now sold under his own name, ranging from 8 year old to 80 year old expressions from the inherited stocks, including the now extremely rare “Oncle Albert-Tres Vieux Cognac”. Jean-Luc’s drive to express the most pure and distinctive expressions from Grande Champagne terroir led to the conversion of the estate to organic viticulture, winning certification in 1998. Today the vineyard consists of single 7.5 Ha plot , majority planted with Ugni Blanc (76%), Montils (8%) and Folle Blanche (16%), the latter reintroduced in recognition of its ability to produce “eaux de vie” of great finesse.

    Traditional, 100% hand-harvest is the norm, in line with viticultural and cellar practices, where indigenous yeasts take care of ferments. Sulphur is no where to be seen on this estate. Instead, base wines are treated with the utmost care and kept in full tanks to protect them from oxidisation until the distillations begin. Double distillation is then carried out on the estate in traditional “Alambic Charentais” (otherwise known as a Copper pot still), for the two months when distilling is allowed. Maturation of the young Cognac Eaux de vies take place in 400 litre Limousin casks, slowly gathering complexity until blending time. If you are a brandy enthusiast, note - the below is not a normal price.

    Cognac must be aged in oak casks for at least two years before being sold to the public. The label designations (VS, VSOP, XO) are based on the youngest eau-de-vie in the blend, but the contents are usually much older. But unlike some whisky producers, Cognac blenders are primarily concerned with balance, complexity and maintaining a house style, rather than age for age's sake. 'VS' denotes a minimum 2 year old product, however this Cognac is 3 years and older.

    Tasting note: Pale gold with a pale straw hue. Vibrant, fresh aromas of dried flowers, ripe pear, ripe apricot and orange zest. A very soft palate entry builds to a full, round and rich mouth feel, delivering bright, fresh flavours of ripe stone fruits, dried figs, honey, clove and cinnamon. Very gentle spirit warmth. Excellent balance. Long, drying aftertaste of dried fruits, cedar wood and cinnamon.

    Since the Trijol family originally settled as growers and distillers in St Martial Sur Né, in the heart of the Cognac region they have built on their expertise as growers and distillers, becoming full time distillers in 1962. An independent family firm, Maxime Trijol has twenty 2,500 litre charentais pot stills and is now one of the largest distillers of cognac supplying many of the larger houses. In recent times the company has concentrated on releasing more of its own cognacs, which have been building a great reputation for quality.

    This novelty bottling in the shape of the Eiffel Tower contains Trijol's standard VS Cognac and makes for an eye catching addition to any bar.

    Tasting Notes: An entry-level Cognac from Petite Champagne. Colour: Honey with caramel highlights. Nose: Honey, stone fruit and strong caramel / burnt sugar aromas. Palate: Caramel is confirmed with a fierce alcohol at first, slowly softening into a burnt rubber and medicinal flavours. Comment: Use as a mixer or a flambé spirit. 40% Alc./Vol.
