Its genesis lay in the requirement for an elixir to combat the repetitive stomach disorders that soldiers were suffering from. After four years of trial and error, researching and analysing the qualities of tropical herbs and plants, Siegert finally arrived at a unique blend of materials which he called 'Amargo Aromatico' or aromatic bitters. Its first public release in Venezuela in 1830 was an instant commercial success. By 1850, he had resigned his commission in the Venezuelan army, to concentrate on the manufacture of his bitters, since by then demand had leapt ahead of supply.

    Rum based, this skilfully blended aromatic preparation of gentian in combination with a variety of vegetable colouring matter, must be on every bar shelf. It has a particularly pungent aroma with a concentrated flavour and high alcohol content (44.7%). That means you require only a dash or two at a time. Angostura is never drunk on its own, but is indispensable in the creation of many classic cocktails and is applauded with gin, the monotony of which has been forever altered thanks to Angostura.

    In the last few years we've witnessed a renaissance period for cocktails and a subsequent demand for traditional ingredients. Many cocktail classics call for Orange Bitters, which for a long time was notoriously difficult to find. With the resurgence of interest has come enough demand to inspire Gary Regan to produce his now famous Regan's No. 6 Orange Bitters. Following Regan's success, others have followed, each putting their own spin on Orange Bitters. Regan's is intense, assertive, extremely bitter and very heavily spiced, Fee Brothers' much lower alcohol version focuses more on capturing the essence of sweet, ripe orange. Angostura's interpretation lies somewhere in between the two. Clean citrus characters are enhanced by a clean spirit, and a balanced dose of spices.

    Apart from being an essential addition to classic cocktails such as the Manhattan, Sazerac or San Francisco, we suggest you try a dash in your next martini, with lime and soda, in orange cake or add to Crepe Suzette. One staff member insists a couple of drops is the secret to his self assessed 'stunning' Beef Teriyaki recipe. The jury is still out. 28.0% Alc./Vol.

    2017 Batch tasted... Deep cherry red with garnet / crimson edges. Powerful, fresh bitter-herbal bouquet evokes semi-ripe blackberries, mint, thyme and citrus peel with later passes accenting blackcurrant and lime juice. Drinks as a silky, medium bodied amaro with attractive fruitiness countered by a surge of bay leaf, peppermint, citrus peel and delicately bitter, drying, herbal tea-like notes at the finish. Complex and refreshing.

    Bittermens Burlesque bitters combine hibiscus, Açai berry and long pepper to create a palate of sweet, spicy and slightly tart sensations. Perfectly paired with Italian amaros, Mexican tequila, British gin and Caribbean rum. Try it in a Genever Old Fashioned, a Pisco Sour, a Negroni or the producers recommended Gold Baron cocktail.

     The flavours of old New York, inspired by the pickle vendors of Orchard Street. Use a few drops to add a briny flavour to foods and drinks.

    During colonial times, shrubs were extremely common – vinegar-based refreshers, many times combined with alcohol or allowed to ferment so they had a bit of a kick. One of the classic flavours during the tenement era was Dr. Brown’s Cel-Ray Soda, a celery soda so popular during the ’30s, it was nicknamed the Jewish Champagne. Though the only flavour that was declared was celery seed, it's likely there was a bit of ginger and apple added in too.

    In this latest effort, Bitterman's have taken all of these ideas and run with them. Brine, celery, apples and vinegar - all dedicated to Orchard Street, home of the Lower East Side Tenement Museum. In conclusion they comment, "Funny that something that we made to honor the Eastern European immigrant experience works so damned well with Scandinavian Aquavit!"

    After the rousing success of their ‘Elemakule Bitters, Bittermans have produced a new bitter that celebrates both the return of summer and their return to Boston after 14 years. It’s citrus, citrus, citrus and more citrus, supported with a heavy dose of chamomile. Try it in your favorite fizz, sour or bright tropical drink. It works extremely well with pisco and scotch as well.

    1 x 750 ml bottle White Rum
    500grams Sencha Green Tea
    375ml Noilly Prat Dry Vermouth
    180ml St. Germain Liqueur
    15ml Bittermens Boston Bittahs

    Combine all ingredients and chill in a refrigerator. Serve in a bowl with a large block of ice. Garnish each serving with grated nutmeg.

    Created by the Bittermens team in response to their lack-lustre experiences with many orange bitters currently on the market (many contain burnt caramel in their base): "Riffing on an orange cream soda syrup, we created a concentrated orange cream tincture and modified it with a heavy dose of citric acid (instead of using phosphoric acid like the soda jerks used to use). The result? The Orange Cream Citrate. Sweet, sour, tart and creamy, but not bitter by any sense.  So, please don’t call this our Orange Bitters. If anything, it’s our orange anti-bitter."

    This bitters recipe was conceived when the question was posed whether the company ever considered making Falernum (a sweet syrup containing flavors of almond, ginger and/or cloves, and lime). Since the company do not indulge in cordial production, it was decided to see if it was possible to create a bitter designed with tiki cocktails in mind. The end result incorporates flavours of Cinnamon and Allspice with a strong cast of supporting spice flavors from both the Eastern (Polynesia) and Western (Caribbean) schools of tropical cocktails.

    This latest incarnation from the Bittermens stable is best introduced buy the producers who have an obvious preoccupation with all things spicy...

    "...at Bittermens, habaneros appear in everything from cream sauces to omelets at home. However, we have found that when people try to make spicy cocktails, much of the time the flavor falls short.

    The problem as we see it isn’t the heat – it’s how the heat is incorporated into the cocktail. Infusing jalapeño peppers into tequila is perfect if you want a tequila drink. However, simply putting commercial hot sauces, sambal or sriracha into a cocktail usually throws off the cocktail’s balance.

    The way that most hot sauces are made is by blending peppers with vinegar, salt and other spices. Vinegar, eh? That sure sounds like a shrub to us. Shrubs are classically refreshing fruit and vinegar-based syrups that were sweetened and diluted to make a beverage since revolutionary times. Instead of making a berry shrub or an orange shrub, why not make a hot pepper shrub?

    We’ve fortified the shrub with alcohol (to better extract the flavors from the spices) and made it much more concentrated, so you only need to use drops instead of ounces to get the desired effect… which, in this case, is a good ol’ bit of heat."

    Avid beer drinkers may be aware that certain varieties of hops, when used in high concentration, deliver a strong grapefruit flavor. Bittermans have decided to use the grapefruity quality of high alpha-acid hops along with grapefruit peel to create a concoction with layer upon layer of vegetal bitterness aptly named Hopped Grapefruit Bitters. This style of bitters is designed to enhance young (white/silver) rums, tequilas and mezcal, the grapefruit bitters play well with most cocktails where you need a little citrus punch. Try it in a daiquiri, gimlet, or even a gin and tonic (with a splash of maraschino).

    Inspired by the classic chocolate Mole sauces of Mexico, Xocolatl Mole Bitters are a combination of cacao, cinnamon & spice. This bitter was originally designed to pair with aged tequila, but will work beautifully with aged rum, bourbon and rye as well. Add a dash in your Old Fashioned or Manhattan along with the recommended Latin Quarter recipe below.

    -1/2 barspoon Sugar Cane Syrup
    -1 dash Angostura Bitters
    -1 dash Bittermens Xocolatl Mole Bitters
    -3 dashes Peychaud’s Bitters

    -Lemon Twist

    -Absinthe Rinse (or Herbsaint or Ricard)

    Fill a double old fashioned glass with ice and a small amount of Absinthe. Stir the Rum, Sugar Cane Syrup and bitters in an ice filled shaker glass. Dump the ice from the old fashioned glass and rotate the glass to ensure that the rinse coats the entire inside of the glass. Strain into the glass.

    Bob originally developed his chocolate bitters to support the launch of Glenmorangie’s Signet Whisky. The product subsequently gained a cult following among London mixologists and a chocolate-y star was born. Bob’s Chocolate Bitters can also pep up after-dinner coffee, add elegance to ice cream and we’ve heard a Michelin-star chef in Japan includes it in a rather stunning venison dish. Expect strong cacao aromas with hints of hazelnuts and malt, while the palate is naturally dark chocolate with espresso coffee notes and a barky, bitter finish. 30% Alc./Vol.

    C.W. Abbott's Angostura Bitters were originally produced in Baltimore in the 19th century, but soon became popular across America adding a unique spiced note to cocktails such as the Manhattan. After a court ordered a change of name due to legal action brought by Angostura Bitters combined with the difficulties of prohibition and restriction on the use of tonka bean, Abbott's bitters ceased production in the 1950s and faded into obscurity. What had become a forgotten relic became a mystery to be unraveled by intrepid cocktailians on the DrinkBoy forums in the mid-2000s.

    With no recorded recipe for the original Abbott's Bitters, Bob set about recreating this old classic through careful tasting and testing of a surviving original bottle supplied by renowned bartender, Jake Burger of Portobello Star, London. Bob and Jake’s reformulated version of Abbotts Bitters took five years to perfect and uses a variety of aromatics including lively peppermint, sweet cinnamon, and warming spices. To make it truly sublime, one or two secret ingredients steeped in Scotch whisky are also added to Bob and Jake’s 21st century recipe. Once filtered, the bitters are aged for six months in a medium-charred American white oak barrel. The resulting liquid brings an age-old product back to the modern bartender’s toolkit, with a distinctive, well-rounded flavour profile.

    The result is a rich and delicious collection of sassafras, cinnamon, vanilla, clove, cassia, gentian and nutmeg best enjoyed in a Manhattan, Old Fashioned, or El Presidente. Use whenever an aromatic bitters is called for. 40% Alc./Vol.

    Like most liqueur / aperitif producers, the Campari company considers its recipe as the key to its ongoing success. Consequently, secrecy is paramount. The complete recipe, kept in a bank vault, is known only to the company's President who overseas weekly production. With worldwide annual sales now exceeding tens of millions bottles, this cautionary attitude is perhaps understandable. What is known is that it contains quinine, ginseng, orange peel, herbs and rhubarb that are steeped in a mixture of water and alcohol. The drink is then coloured with cochineal. It's typically served very cold without ice but with a dash of soda to release the flavours.

    Other reviews...Light red color. Dark berries and spice on the nose. A smooth attack leads to a somewhat sweet, medium-to full-bodied palate with ripe and tart black cherry and dark fruit flavors that give way to a barrage of extremely bitter herb and fruit pit elements that dominate the back palate and linger as the fruity sweetness dissipates. A complex and dynamic aperitif that could use a mixing element to calm down the bitterness.

    Cherry-red color. Nose is snappy and expectedly bitter in a woodsy, earthy, quinine-like way. Palate entry is mild in a sweet-sour fruity manner; midpalate is sweet and only moderately bitter. Finishes long and mildly quinine-like. While I’m not a bitters aficionado (more a bitter aficionado, really), Campari and orange do positively click.     Small batch bitters are surely making their mark on the cocktail scene, with cocktail enthusiasts and bartenders rediscovering the long lost recipes of the golden era and making it their own.

    Dale De Groff is an iconic figure in the field of mixology, credited as 'King Cocktail' after a long and innovative career in top establishments such as New York's Rainbow Room and later in educating young up and coming bartenders. He is also credited by some as the creator of the Cosmopolitan. A signature element common throughout his drinks was a spicy liqueur called 'Pimento Dram', inspiring this bitters formulation utilising whole botanicals with no essential oils, commercial flavourings or dyes.

    Produced by the reputable Combier Distillery in Saumur, France - famed for the production of the world’s first Triple Sec liqueur in 1834 and the superb Perique Tobacco Liqueur. Pimento berry, otherwise known as allspice, is blended with baking spices similar to those found in Angostura Bitters, being ginger, nutmeg, cinnamon, clove, anise and touch of dried orange peel.

    Recommended cocktails from DeGroff himself include the intriguing variation of the famous Sazerac cocktail created by Antoine Amedee Peychaud, detailed below.

    Tasting note: The deep burnt sienna brown colour shows gold ochre at the edges and moderate viscosity. Offers an intense, complex amalgam of clove, liquorice bullets, sarsaparilla, citrus peel, soy sauce (and more) making for a wonderful sniff. Initially light and gently bitter; mid palate is fresh, warming, properly bitter but balanced, intensifying towards the finish with dried citrus peel, herbs and bitter liquorice-like flavours evident. Clove emerges into the fade and relieves the bitterness somewhat. A superb and seemingly endless potpourri of flavour. 45% Alc./Vol.

    Cocktail Recipe: Pimento Sazerac

    "The variation below utilizes equal parts of Rye Whiskey and Cognac. I may be playing with fire by suggesting my pimento bitters rather than the traditional Peychaud's, simply because the flavour profile hits the same flavour note as the Peychaud’s. I offer this variation with humility and reverence for the original drink."

    2 dashes DD’s Pimento Bitters

    30ml Rye Whiskey

    30ml Pierre Ferrand Cognac
    Splash of absinthe
    1 small sugar cube

    Take 2 rocks glasses, fill the first with snow ice and set aside to chill. Place sugar cube in the bottom of the second glass. Add the bitters and a teaspoon of water; muddle until sugar cube is completely dissolved. Add cognac and the rye whiskey and a few large ice cubes. Stir with ice cubes to chill. Take the first glass and empty the snow ice and splash with absinthe; give it a spinning toss in the air. This will effectively coat the glass and some nearby bar patrons with absinthe. Strain the chilled drink off the ice into the seasoned glass. Garnish with a lemon zest twisted over the drink. Some guests prefer that the lemon zest be discarded.

Dandelion & Burdock is a traditional British beverage dating back to the 1300s where it was believed to have been created by the Italian priest Saint Thomas Aquinas. They were famed for their alleged medicinal properties, like the many cocktail bitters that followed in later years.

    Sourcing knowledge from patent bitters recipes, old formulae and medical journals, Adam Elmegirab has reformulated the defunct Gainer's Spanish Bitters (a recipe made popular in the 1800's for their alleged medicinal properties and complex flavour profile which included layers of chamomile, citrus, spice, violet, and berries) to produce his personal rendition based predominantly on citrus and chamomile. Botanicals are steeped in overproof spirit for no less than two weeks, which are then filtered, diluted to bottling strength with Scottish water, and coloured with a hint of caramel.

    Here is what Adam had to say when asked about his new creation:
    "I’ve not come across anything like them to be honest. The really interesting thing for me is the fact that these are essentially classic bitters, but they also have a very modern feel. As with any quality bitters they should have multiple uses so, although the dominant flavour is chamomile, the support flavourings of citrus, coriander, honey, soft spice, and violet give them great versatility in drinks calling for citrus, floral, spiced, earthy, fruity, and bitter notes."

    Cocktail Recipe: The Union Flip

    -1 barspoon Caraway Seeds
    -4 crunches black peppercorn
    -1 whole egg
    -30ml Appleton 8 Year Old rum
    -30ml Licor 43
    -4 dashes Dr. Adam Elmegirab’s Spanish Bitters
    -1 teaspoon simple syrup

    Muddle caraway seeds in base of mixing glass, add remaining ingredients, and dry shake for five seconds. Fill with cubed ice and shake hard for a further ten seconds. Fine strain into a small frozen wine glass and garnish with grated nutmeg.

    Founded by John G. Boker in 1828, Boker’s Bitters gained popularity in New York and around the World as the finest bitters of the Golden Age of mixed drinks (1860-1920). Boker’s Bitters were famously the preferred brand of Professor Jerry Thomas and featured throughout his book, ‘How to Mix Drinks or The Bon Vivant’s Companion’, now recognised as the World’s first bartender’s guide. Despite being unequalled when used in the refined drinks of the bar, the devastating effect of Prohibition closed the Boker’s company in the 1920s.

    What initially started as a quest for knowlege has today resulted into a re-emergence of Bokers Bitters by Adam Elmegirab of the Evo-Lution consultancy, with seemingly successful results. The genesis of many early bitters formulas lay in the requirement for an elixir to combat ailments. Whether it's a wine or spirit that forms the base, the alcohol serves to function as a solvent for botanical extracts (typically gentian, quassia, wormwood, orange peel, etc.), as well as being a preservative.
