    The recipe for classic Aalborg Taffel Akvavit has been the same for more than 150 years and its consistent quality has confirmed Akavavits position as Denmarks national drink. The Danish poet Jørgen Vibe wrote: "Aalborg Taffel Akvavit lights the fires of delight. And keeps our spirits burning bright".

    Other reviews... Crystal-clear in appearance, the nose exhibits distinct caraway character. An extremely pure caraway flavour dominates the palate filling every corner of the mouth followed by a faint trace of orange. This is a full bodied akvavit, best served chilled as an accompaniment to herrings on rye bread or other full flavoured seafood and spicy dishes. The best known brands are the Swedish O.P. Anderson , the Norweigian Gambol of Linie and the Danish Aarlborg. The drink, traditionally made with carraway and an arak spirit base was supposedly discovered by alchemists searching for the secret of eternal youth and beauty. The akvavit produced for the first two hundred years or so was not particularly attractive however - in fact, it was actually a bit cloudy and coarse. But ever since Aalborg began production in 1840, the golden, crystal-clear drops of this particular beverage have been a pleasure both to look at and to taste. To be at its best, Aquavit should be served in small aquavit glasses and chilled. We discovered this enthusiastic description of how Aquavit should be imbibed in an old Norweigan cook book:

    "There is solemnity in the ceremony of drinking aquavit. One lifts one's glass and holds it with loving patience, while joining with the others in a bacchanal hymn, ending on as high a note as one's voice will reach.Then one makes an all-inclusive sweep with eye and glass, drinks the aquavit in one gulp, finishes the song on an even higher "tra-la-la," and then bites into the herring previously placed on a piece of bread. The second glass is usually served only half filled but is drunk with the same profound ceremony and there is a promise in the song of a third glass."

    Aalborg Jubilæums Akvavit is a fine example of the spirit. It was created in 1946 to celebrate the centenary of AALBORG TAFFEL Akvavit. Golden in colour Aalborg Jubilæums Akvavit posesses simple, elegant aromas. The characteristic flavour of this clean and fruity akvavit is dill in combination with coriander with a trace of star aniseed and citrus. Like most Aquavit, it is perfect for fish - preferably oily fish fried in the pan. Duck and chicken with a light gravy also make a perfect match. Best served chilled. 40% Alc./Vol

    Aquavit is most frequently enjoyed straight and in Denmark & Scandinavia, is still used as an accompaniment to traditional seafood and salty, pungent dishes. Many Norwegians regard Linie as the essential companion to pork and other fat meat.

    Linie has a limited shelf life of approximately two years. Avoid exposure to sunlight.

    Other reviews... One of my all-time favorite spirits that I’ve not reviewed since 2003. Pale gold in color; unblemished clarity. First sniffs respond favorably to the delicate hints of caraway seed, rye bread dough and fennel – a fantastically inviting and understated opening bouquet; after another seven minutes of exposure to air, the aromatic profile focuses mostly on the caraway seed, but also entering the picture are subtle notes of chalk, Amontillado sherry, baker’s yeast and mint – an amazingly complex bouquet. Entry is seed-like, toasty, bready and peppery; midpalate shows more of the sherry aspect along with deep notes of oak and resin. A sublime, delicately bittersweet and woody end tops off a great spirit experience.

    Made using cumin, dill seeds and coriander, its robust character with hints of orange, almond and coriander is a taste that impressed the judges at the International Spirits Challenge, where Jule Akvavit received the highest award. The style suits virtually all traditional Danish Christmas food - from marinated herring and salmon to roast pork, liver pate and meatballs. Since its launch in December 1982, the alcohol percentage has remained exactly 47%, which corresponds to 8 degrees of 'spendrup' - the unit of measurement for alcohol in the late 1800s. Only the bottle design has changed from year to year while maintaining a festive theme.

    The latest member of the Aalborg range brings new flavours to the table. This schnapps is based on aquavit matured in sherry barrels for four months, with added warmth from well-aged Caribbean rum. While there's less traditional cumin flavour, the rum comes through clearly, yet the taste is mild, round and warm. A little pomegranate and lemon peel mix with vanilla for added complexity.  As far as food matching goes, this is perfect for salty and smoky dishes such as meat and fish. Blue cheese and firm aged cheeses also work, as do chocolate desserts. 37.5% Alc./Vol.

    'Klar' is O.P. Anderson's new aquavit variant, guaranteed to surprise traditionalists who think they've tried it all. Made in Sundsvall, Klar originates from the west coast, where Carl August Anderson launched O.P. Anderson in Gothenburg in 1891. A clear and fresh aquavit made using select organic spices, seasoned to pair particularly well with fish and shellfish, Klar is also the only aquavit in the O.P. The palate has a juicy mouth feel with concentrated anise and sweet rye flavours delivered over a pure, silky, soft and very gently warming spirit. Good length.     First introduced in 1931, Skane is a tribute drink to the provence of Skane in Southern Sweden where, for five hundred years aquavit and vodka have been produced.

    Including traditional ingredients such as cumin, anise, coriander and fennel, Skane is enjoyed by those who prefer a smoother Aquavit with milder spices. Light notes of fennel and aniseed nicely complement Skane's subtle caraway flavour making it an appealling 'all-purpose' aquavit to drink with shell fish, sushi, fish soups and the like. It also makes a surprisingly good accompaniment to caviar and sour cream on toast. Serve chilled. 40% alc./vol.
