    Akishika was founded in Osaka prefecture in 1886, and under the present 6th generation owners this tiny brewery is renowned for creating some of Japan’s most exceptional and unique sake. All of their sake show great structure, acid and body which enable them to age extremely well. Known as the "King of Sake Rice", Kobo #7 is made using Yamada Nishiki rice, and along with the traditional Yamahai yeast starter method, Akishika aim to produce an extremely pure and expressive sake. This sake is also unfiltered (muroka), unpasteurised (nama), and undiluted (genshu).

    Tasting note: Pale lemon in colour, this sake is highly aromatic with pure fruit flavours leaping from the glass. Cantaloupe, green melon, banana, vanilla yoghurt and nougat, all very fresh and inviting. The palate is similarly pure, showing flavours of green melon, pear, light tropical notes and quince spice, along with rice and nougat. Umami is well balanced with bright, clean acid and an impressive long, dry finish. All together a very accomplished, pure, and flavoursome sake. Drink chilled. [2016 vintage tasted].

The drink has been consumed for over 1000 years in Japan and to the present day, ume-fruit liqueur and/or wine remains a familiar beverage in Japanese households. This lovely aromatic daiginjo displays plenty of intense, fragrant floral and melon notes, fresh without the unpasteurised zing of nama sake. It is smooth and richly flavoured with melon, pear, peach and touches of coconut and cinnamon. There is a lovely rich texture and elegant, long dry finish.

    Tasting Note: Pours a pale, water white colour in the glass. Displays a highly engaging nose of white florals, strawberry and cream, along with green melon, honeydew, and a hint of spearmint lift. The palate is equally as pretty with flavours very much fruit driven rather than the more common rice and yeast notes. Green melon, white peach, and pear lead out, supported by nougat, cream, with a touch of jasmine rice and subtle sweetness on the finish the only clue to its origin. What stands out is how elegant and pure this sake is, showing more in common with an aromatic white wine that is the norm. A very modern take, and one well suited to clean and fresh food matches such as kingfish sashimi or shellfish dishes. Highly recommended. Serve chilled.

    Japanese rice wine is not a liqueur, although it is often brewed to liqueur-like strengths by simultaneous processes which convert sugar starch to sugar and then to alcohol. The ferments are Koji and Sake yeast. Gekkeikan claims itself as the largest selling sake in the world.

    The company is based in Fushimi, Kyoto, and was founded in 1637 by Jiemon ÅŒkura. One of the world's oldest companies, it is today a member of the Henokiens group. The name 'Gekkeikan' literally means "laurel wreath". 14.5% alc./vol.

    Located in the Wakayama prefecture in Japan, Heiwa aim to produce drinks reflective of the climate and landscape where the raw materials are grown. Their Nigori (cloudy) Umeshu is made with local Nanko Ume fruit, and they also add its pulp into the Umeshu liqueur to further heighten the texture representative of the fruit itself.

    Tasting Note:  Being classified nigori it's no surprise this is very cloudy, displaying a deep peach hue in the glass. Aromatically this is incredibly complex, with red plum present but complemented by a swathe of ripe stone fruit in the form of peaches, nectarines, and dried apricot. Add to this the subtle sweet elements of vanilla and tonka bean and it's an exceptionally pure and inviting nose. On the palate the viscosity is immediately apparent, yet the fresh acidity keeps the notable sugar in perfect balance. Flavours are a near replica of the nose, showing red plum and waves of ripe stone fruit, supported by white chocolate, vanilla bean and creme brulee. Outstanding. 10% alc

    Serving suggestion:  Drink chilled on the rocks or with soda water, or mix it up in a cocktail like a Spritz. Can be stored in the fridge for at least 8-10 weeks once opened.

    Yuzushu can be likened to a Japanese version of limoncello, substituting lemon for the local Yuzu fruit, and combining the juice with Sake. Heiwa produce their Yuzushu with a high 1:1 ratio of one year old Sake and Yuzu juice. The Yuzu fruit is sourced from Wakayama, and is juiced with the peel ensuring all the sweet, sour, and bitter flavours of the fruit are retained.

    Tasting Note: While it's a touch cloudy in the glass, this still presents as an incredibly vibrant medium lemon colour. The aromatics are very lifted, with pure yuzu and citrus zest, along with faint hints of lime and herbal grassiness. On the palate the flavours are equally expressive and pure, only hinting at the quality sake base on the finish. Having such a high ratio of yuzu juice there was a risk this would be too sour, and while it's definitely salivating, the acidity is more than matched by the freshness and intensity of flavour. Length on the finish is also a stand out. 7.5% alc

    Serving suggestion: Enjoy chilled and served on the rocks, or as a long drink with soda water. Incredibly refreshing on hot summer days. With such purity and intensity of flavour it's easy to see why so many bartenders have taken this on as a cocktail mixer as well, leading to drinks with slightly more savoury citrus tones. Can be stored in the fridge for at least 8-10 weeks once opened.

    Located halfway between Tokyo and Osaka, Houraisen is situated in the Aichi prefecture and they own about 20 ha of their own rice paddocks. The brewery sits in the mountains at around 500m above sea level, and the water source available to Houraisen is some of the softest water in Japan. Having no magnesium or calcium in the water means the sake they produce is very 'soft'.

    Tasting note: Brilliant pale lemon colour. Elegant nose of light tropical fruit, green melon and honeysuckle, along with hints of vanilla bean and cream. It's delicate on the palate with fruit quite subdued, showing more dairy and sweet vanilla notes, white chocolate and earthy mushroom. With time more guava and papaya fruit emerges, while the finish has a touch of pithy grip. A well weighted and food friendly style with a dry finish. Serve room temperature or warm.

    This pure rice (Junmai) sake is unfiltered (Muroka) and hails from the middle take of the press (Nakadori) which is considered the finest take of the batch for its clarity, well-balanced aroma, and purity of flavour. Being unfiltered gives this sake more breadth of taste compared to others in the Juyondai range, while still retaining its fruity and floral aromas. Polished to 55%, this sake still maintains a good amount of umami.

    Kitajima Brewery was established in 1805 in Shiga Prefecture near lake Biwa. As one of the oldest and most respected sake breweries in Japan, Kitajima produce a range of full flavoured and fruitier styles. Miyosakae is their traditional core range, while in 2002 they developed the Kitajima range for more innovative releases using the kimoto natural starter method. This Muenso release uses the highly coveted Yamada Nishiki strain of rice.

    Tasting note: Very pale water white in the glass with a faintly cloudy appearance. Initially aromas are quite exuberant in fruit, with a wealth of green melon, cantaloupe, pear, white peach and plum aromas. The earthy rice driven notes are there, yet it expresses fruit first, finishing with some white pepper and salt lift lending character. On the palate there's a similar approach with fruit flavours up front and savoury elements follow through the finish. Green melon, white peach, edamame, leading to nougat and cream, and that hint of crusty salt and pepper seasoning to close. There's commendable concentration of flavour in an elegant, broad appeal style. The mix of fruit and savoury elements work well, and the barest hint of sweetness only adds to this very enjoyable sake. Serve chilled.

As evidenced in the name, the premium Oumi rice is used here

    Tasting note: Showing very pale water white with a glint of champagne at the core. Aromas are fairly neutral with meringue and nougat supported by some yellow melon and starfruit peeking through. While initially it's quite restrained, with air the floral jasmine and white leaf tea notes emerge. Similarly restrained flavours are present on the palate, notes of white nougat, white chocolate, and jasmine florals, all very pure and refined. Indeed this is incredibly crisp and clean in profile, perhaps looking more wine like than some of the more robust earthy sake styles. In that style it would match well with sashimi and other lighter fresh seafood dishes. Serve chilled.

The Whale of Biwa Lake sake is unfiltered (muroka), unpasteurised (nama), and undiluted (genshu).

    Tasting note: Crystalline, shimmering pale lemon colour in the glass. Initial aromas show sugar snap peas, a hint of lime zest, green melon, though it's quite restrained. After time an earthy mushroom and rice bran element emerges. Tasting chilled it's all very restrained, though as it warms the wheat and grain elements develop, supported by the pithy green fruit notes. Once at room temperature the robust nature of this genshu (undiluted) sake is more apparent, and the depth of savoury notes work well with the lean fruit profile. This should pair with a range of foods, able to match with many fatty fish dishes, and even hold up to flavourful Asian marinades and sauces. Grilled eel would be a perfect choice. Served chilled or at room temperature.

    From Shiga brewers Kitajima, comes an alternative take on Yuzushu, made using local sake, but with a small addition of sea salt and four times the Yuzu of regular Yuzushu. That's evidenced in aromas of fresh grapefruit and lemon butter but more-so in surprisingly tart flavours of unsweetened home-made lemonade. The finish is citrus-peel fresh (oranges and lemons) with a lick of salt in the aftertaste rounding the profile off like a Margarita cocktail. Use it as a Summer refresher or mix when natural citrus flavours are in demand. 7% Alc./Vol. Refrigerate after opening.

    Based in the Mie prefecture of central Japan, Moriki Shuzo is a tiny family owned brewery run by Rumiko Moriki and her husband Hideki. They only make pure rice (Junmai) sake, with 25% of the production from their own organically farmed rice with the rest sourced from areas producing rice similar to the style they wish to use. Along with the modern approach to pressing sake for maximum volume, Moriki also make a version of each of their sake (including this Suppin Rumiko No) using the Arabashiri method whereby freshly brewed sake (liquid and solids) is stored in cotton sacks and the free run liquid slowly seeps out under the weight of each sack.

    Tasting Note: Displays a vibrant, pale lemon colour in the glass. Aromatics take some time to emerge, and while only mildly intense the aromas are quite complex with notes of white flowers and acacia, layered over pear, green apple, custard and white chocolate. There's a good weight to this sake on the palate, creamy and textural, showing excellent umami feel. As with the nose this is notably complex with flavours of pear, apple, hints of lychee and green melon, custard and white chocolate. Excellent. Serve chilled.

    Tasting Note: Medium lemon colour. Quite earthy on the nose, showing mushrooms, nougat, and bread dough, along with some white floral notes and herbaceous hints of capsicum.     Akishika was founded in Osaka prefecture in 1886, and under the present 6th generation owners this tiny brewery is renowned for creating some of Japan’s most exceptional and unique sake. All of their sake show great structure, acid and body which enable them to age extremely well. There's no better evidence of this ageing potential than their signature sake Okushika, released at the start of its drinking window as a 4 year old. Junmai Ginjo sake that is unfiltered (muroka), unpasteurised (nama), and undiluted (genshu).

Displays a highly engaging nose of white florals, strawberry and cream, along with green melon, honeydew, and a hint of spearmint lift. The palate is equally as pretty with flavours very much fruit driven rather than the more common rice and yeast notes. Green melon, white peach, and pear lead out, supported by nougat, cream, with a touch of jasmine rice and subtle sweetness on the finish the only clue to its origin. What stands out is how elegant and pure this sake is, showing more in common with an aromatic white wine that is the norm. A very modern take, and one well suited to clean and fresh food matches such as kingfish sashimi or shellfish dishes. Highly recommended. Serve chilled.

    Dewazakura have played a significant role in the Yamagata prefecture developing their own rice suited to their region with the local agricultural bureau, and this is known as Dewa Sansan, which Dewazakura uses for a selection of their sake. They have also developed special yeast to suit the climate. The brewery is known for their distinctive 'fragrant' sake, which can be attributed to their yeast selection as well as their low temperature fermentation techniques.

    Tasting note: Pale lemon in the glass. Highly aromatic nose of citrus fruits, orange and tangerine, ripe melon, custard and mushrooms. More restrained on the palate, while there is some melon, pear and white peach flavours, it also tastes of earthy mushrooms, faint herbal notes and (not surprisingly) rice. Very clean on the finish. The milky weight on the palate works well in this versatile style of sake. Serve chilled or warm.

    Tasting note: Slightly hazy pale lemon colour. Unique nose showing both some sweetness of banana and custard, along with spicier herbal notes of dill and fennel. On the palate it starts quite fruit driven again with the banana and custard, custard apple, but finishes light, fresh and clean. This is one of the more textural sakes with a pleasing umami mouthfeel, and the complex fruit and savoury notes ensure this is one of the more distinctive sake on offer. Serve chilled or warm.

Rice used to produce these special-designation sakes must be polished to a legally defined degree. At least 15 percent of the rice used must also be affected by koji-kin, a filamental fungus which helps to break down starches into sugar. The name "Juyondai Soko" means double rainbow.     Kinmon are based in Akita prefecture and are known for their plum wine and aged sake (koshu). One of their more unique offerings is their X3 Rose Sake made using Menkoina (red) rice, along with adding a small amount of koshu.

    Tasting Note:
    Presents as a pale Champagne colour with a peach blush. Aromatically the first sniff is dominated by strawberries and cream, not overtly sweet but very inviting. With air more red fruit emerges; cherries, raspberry, red apple, along with some notes of bread dough, pastry crust and vanilla bean. On the palate the delicate red fruit theme continues with strawberry, red apple, cranberry, mixed in with hints of short crust pastry and biscuit. Has excellent flavour intensity while still being light on its feet with just a hint of subtle sweetness on the finish. All told it's an elegant and balanced drink that shows more similarities to rosé wine than sake. Drink chilled.

Aromas are moderate and take some encouraging in the glass, but they are very fresh showing green fruit, apple, pear, watermelon rind, along with some faint earthy notes of mushroom and milky tones. With air some citrus notes of ruby grapefruit emerge. On the palate there's good weight and a touch of umami texture, with flavours of ruby grapefruit, orange zest, green apple, along with mild earthy notes of mushroom and bonito flakes. Would be a great food match. Serve chilled.
