Vermouth

Originally known as “wormwood wine”, this aromatized fortified has two basic types: White Vermouth (originally from France and typically drier) and Red Vermouth (dark in colour, sweeter and probably conceived in Italy). Vermouth is making a comeback worldwide, especially in trend struck Barcelona where bars even specialise in this refreshing aperitif. Outside Europe, Australia is now producing some world class examples. If you're partial to Martinis, Manhattans or Negronis, remember that a cocktail will never be any better than the quality of the cheapest ingredient in it. Quality vermouth is key.

    A Bianco based on Piedmontese white wines, including some Moscato, and infused with more than thirty different botanicals, many of them grown in the Occitan Alps near the winery.     Drinks writer, David A.Embury stresses that a cocktail will never be any better than the quality of the cheapest ingredient in it, and hence he proselytizes constantly for the highest quality spirits, liqueurs, cordials, and modifiers (fresh squeezed lemons, etc.) It's a philosophy we completely agree with. However, good quality Sweet Vermouth has remained elusive, that is until we discovered Antica Formula. Bearing the name of the Italian distiller, Antonio Carpano the man most famous for inventing Vermouth, this is arguably the finest example of the style available today - an artisan product, produced in tiny quantities from the very finest ingredients.

    To use a frank analogy - to go to the effort of making a great cocktail that requires sweet vermouth, without using Antica Formula is like wearing thongs with a tuxedo. Classic cocktails such as the Manhattan, Negroni, Bronx or Corpse Reviver will be taken to new heights, while its bitter-sweet balance and generous, silky mouthfeel, means it can also be consumed neat as an aperitif or with desserts. A large measure with soda and ice gives a sarsparilla like experience. The only limit is your imagination.

    Tasting note: Burnt sienna brown colour with gold ochre hue. Inviting nose of liquorice, dried citrus peel, cinnamon, and clove. A sophisticated Sarsaparilla! The palate is a joy. A rich velvety texture delivers initially sweet flavours; aniseed, portello, cinnamon sugar and spicy fruit cake, before the palate turns and takes on a slightly bitter character driven by orange marmalade and warm spice which persists into the very long aftertaste.     Vermouth is making a comeback worldwide, especially in trend struck Barcelona where bars even specialise in this refreshing aperitif. A new arrival to Australia is Vermut Negro, from a pioneering vermouth house founded in 1945 outside Catalonia in North East Spain - Casa Mariol. Their vermouth is made from a base wine of 100% Macabeo grapes sourced from vineyards in the Terra Alta region 700 metres above sea level. A neutral grape spirit (also made from Macabeu grapes) is used to extract the flavours of up to 150 botanicals including green walnuts, rosemary, thyme, orange peel, wormwood and cardamom. After the fermentation process, the vermouth spends six months aging in a solera system enhancing its distinctive dark colour and herbaceous flavour.

    One of the main differences between this and other Vermouths is the very low use of caramel. The result is a lighter, more fragrant expression with greater balance and complexity. It's recommended served on ice with a slice of orange and a green olive (topped with soda if desired) or in Martinis, Manhattans or Negronis.

     Tasting note: Deep sienna brown with a gold ochre hue. Opens pleasantly fragrant with sweet spices (cardamom, cinnamon) mixed with stewed fruits and tangerine peel; second pass finds sweet oregano and hints of sarsaparilla. Light and fresh in the mouth with a softly textured, delicately bitter herb / cola / mulled wine combination and light cardamom and grapey freshness in the finish. Shows deceptive staying power.     Vermouth is the most widely used aperitif. The first known branded vermouth was “Carpano” produced at Turin, Italy in 1786. This was a rich, sweet red style. Rosso, or red vermouth is traditionally made using red wine. Today however, virtually all red vermouth is produced using white wine and blended with caramel to receive its distinctive red or amber colour. This dark, more richly flavoured Italian variety is imperative in many cocktails, but can be drunk alone, with cassis or as an aperitif, or mixed with lemonade, tonic or orange juice.

    Ingredients in Cinzano Rosso include marjoram, thyme, musk yarrow and an alpine herb called ‘Achillea Moscata.

    The house of Cocchi (pronounced co-key) is a Torino winery known for an array of still, sparkling and fortified wines. In 2011 as part of Cocchi's 120th birthday celebrations, they revived their house vermouth (originally produced in 1891), resulting in the first genuine Vermouth di Torino (protected designation of origin).

    Tasting notes: Copper / sienna brown colour with a bright copper hue. Moderate scents of cocoa, followed by ripe citrus (blood orange?) making for a nuanced jaffa-like profile. Mildly bitter herbal notes, including sarsaparilla keep the sweetness muted. Light to medium bodied and bitter-sweet, the palate offers flavours of citrus peel, spiced raisins and sarsaparilla. Concludes gently bitter with an aftertaste of quinine, citrus peel and cocoa. A more delicate expression than the likes of Antica Formula, which some find too easily overpowers cocktails. 16% Alc./Vol.

    First there was "Dry". Now there's "Extra Dry." Released in the year of Cocchi’s 130th anniversary, this classic-style vermouth is based on a Piedmontese recipe using local ingredients. The base wine is Cortese, the same grape used for Gavi DOCG. The Artemisia Absinthium is entirely harvested from the Piemonte mountains. The aromatic profile is characterized by Menta di Pancalieri, a local variety of peppermint, and lemon, traditionally used to garnish vermouth in the region. Other botanicals include angelica, coriander and cardamom for a fragrant and balanced character. This vermouth will enhance classic cocktails such as the Martini or the Bamboo (40ml Cocchi Extra Dry stirred with 40ml Dry sherry, garnished with lime zest or basil leaf), but it also shines when served with tonic water (elderflower tonic is the preferred choice) or simply sipped over ice. Production involves maceration of real plants rather than pre-prepared infusions, and the unique addition of sugar as opposed to other sweeteners. The finished Vermouth contains 75-80% base wine, much more than that employed by many international brands, with the majority of grapes sourced from the Armagnac vineyards of the Gers in addition to local/regional producers. Enjoy as an aperitif on ice, with a twist of citrus, or in a broad array of traditional cocktails.

    Tasting notes... Clear with a very pale green tinge. Moderate, Fino Sherry-like aromatics include yeasty, nutty notes with a hint of quince. The palate is again reminiscent of dry flor sherry, though heavier and with a slightly oily texture. Flavours of almond, dried apricot and flor yeast-like characteristics are evident.     As well as having a long history of making sherry and local specialties, like Ponche, there's a tradition of producing vermouth in Jerez. Lustau's is based on an old recipe, starting with high quality sherries to get a more 'natural' character than vermouths fortified with raw alcohol. This Blanco is a perfect example. A blend of two wines - a dry, minerally and crisp Fino sherry and a sweet and floral Moscatel resulting in a Summer sipping vermouth that's brimming with flavour.

    Shaun has been tinkering behind the bar of Melbourne martini haven Gin Palace for over 5 years. This has helped him nurture his interest in capturing and enhancing natural flavours, arising in house-made concoctions and a sophisticated understanding of palates.

    Born of a French wine family, Gilles has wine flowing through his veins. He crossed the globe to take over the position of Winemaker at the dynamic Sutton Grange Winery.

    The two were bought together by their love of Vermouth; Gilles bringing with him the traditional alchemy of pastoral Europe to complement Shaun’s knowledge of the vibrant food and drink culture of Australia’s young cities.

    Tasting note: Bright crimson / cherry appearance. Moderate aroma issues an attractive combination of citrus peel and black fruits with subtle herbaceous undertones. A soft, silky entry is followed by a light to medium bodied mid palate with semi sweet flavours of blood orange and sweet spices. Finish is gently acidic and cleansing - certainly not overly sweet by any measure. Nicely balanced. Concludes with refreshing grape fruit and dried berry notes followed by a gently bitter fade.     The 'Dry' completes a superb triptych of Vermouths and represents their finest effort to date.

    Tasting note: Pale straw gold colour. Perfumed aromatics open with a fruity / herbaceous burst that includes bay leaf, clove, indian spices and more over a fresh and fruity base wine. The fruitiness comes to the fore after exposure leaning towards stewed apricot / fruit mince pie. Exceptional complexity. The palate is lean, light yet with good depth opening spicy with a dried citrus peel and apricot burst before turning deliciously nutty, spicy and refreshingly acidic towards the finish. Concludes bone dry and delicately bitter as the gentian asserts itself with hints of clove and a medley of flavours reverberating into the lengthy fade. Beautifully composed.     A bartender by trade, in 2011, Giancarlo Mancino started working with a small family operated distillery in Piedmont. His aim was to create a range of high quality vermouths. Using a range of botanicals ground in a traditional mill, the ingredients were then steeped in sugar beet spirit to extract the aromas and flavours, before being blended with a local wine base.

    Another product that stemmed from these efforts is "Chinato".     In 1800, Joseph Noilly decided to break with tradition. He began producing the first ever Dry Vermouth to compete with the sweet Italian ‘Turin’ styles. He achieved this by making three fundamental changes to the method of vermouth production. The first change involved the addition of local flowers and fruits to his original recipe of 20 herbs. The second saw to the use of dry wines made from the Picpoul and Clairette grapes from the Languedoc. After macerating and blending, the third point of difference was to adopt a ‘new’ method of ageing which was known locally as "vin cuit" (‘cooked wine’.) This essentially involved transferring the wine into small oak barrels to be left outdoors. This exposure to climatic extremes lasts 12 months and actually speeds the wines aging process by up to four times. The barrels are finally emptied into huge blending vats, fortified and then left a further twelve months to marry before bottling.

    The Bianco offers strong notes of bergamot, yarrow muscat and elderflower. The sugar level is kept relatively low (14%) to ensure the final product is drier and slightly more bitter than most other examples. Recommended in a spritz or with white spirits such as gin, tequila and pisco.

    Like Antica Formula, Punt e Mes is a vermouth of outstanding quality, but features a dramatically different flavour profile. Whilst the two share a similar, sweet luxurious palate entry, Carpano's back palate is sweet, soft and luscious, while the back palate of Punt e Mes offers very bitter flavours similar to Campari.

    Philibert Routin created this Blanc Vermouth more than a century ago incorporating plants, flowers and spices macerated in local Chambéry wine for several weeks. It continues to be produced in Chambéry using white Sauvignon and local Jacquère wines and an artful blend of eighteen botanicals (wormwood, Bourbon vanilla beans, thyme, cinnamon, elderflower and more). With a floral/herbal bouquet characterised by aromatic thyme, as well as light spice, its sweet, fruity taste make it delicious served straight, on ice, with a lemon wedge or a slice of pink grapefruit.     Founded in 1888, Bordiga's motto, 'tradition is our future', neatly sums up this great artisan distiller from near Cuneo, in the foothills of the Maritime Alps. Pietro Bordiga was a bar owner in Turin before he relocated to Cuneo at the end of the 19th century, with the distillery just out of town on a road leading into the mountains. This location was essential for Pietro, as the Occitan valleys are home to a vast array of herbs and other botanical ingredients, essential to making traditional vermouth, aperitivi and amaro, as well as wild juniper that became the basis of Italy's oldest continuously produced gin. Even today, most of Bordiga's botanicals grow wild in the varying valleys of the Maritime Alps, with the unique, elevated environment ideally suited to developing and retaining the essential oils. All the wild, and naturally organic, botanicals are still collected by hand at distinctly different moments, so as to capture the best expression of their individual natures, whether they be the root, leaves or flowers.

    They are then dried either in the open or on drying racks, with the elevation and cool of the macroclimate preserving pristine aromatics. Extraction of these aromatics is achieved through maceration in triple-distilled grain alcohol in Bordiga's original wood-burning copper still, with each botanical steeped separately, so as to ensure the optimal expression, as timing differs to target the sweet spot for each.

    Their vermouth is made from a base wine of 100% Macabeo grapes sourced from vineyards in the Terra Alta region 700 metres above sea level.

    A neutral grape spirit (also made from Macabeu grapes) is used to extract the flavours of up to 150 botanicals including green walnuts, rosemary, thyme, orange peel, wormwood and cardamom.     Vermouth Del Cavaliere has been revived from the liquor tradition of the Vena family which stretches back to the late 19th century. Production started out a few years after their famous amaro, but was interrupted during the First World War and only recently re-commenced. The main ingredient is red wine from Piedmont. The predominant aromatic herb is Artemisia Absinthium. Oregano, coriander, orange and angelica are also included.
