Tasting Notes sourced from Moet & Chandon:
The Moet & Chandon Non Vintage is a blend of wines from a specific year, with the addition of different reserve wines from earlier years (the precise proportions vary from year to year) in order to achieve consistent quality and character. Moet & Chandon sources grapes from nearly all the different classified vineyards of Champagne which greatly assists to acheive this consistent quality.A blend of Chardonnay, Pinot and Pinot Meunier. Pale yellow colour with a tinge of green. The nose is delicately vinous, with an initial aroma of both lime and vine blossom. The palate shows predominantly Pinot characteristics. Light, persistent sparkle. Very ample in the mouth, with a discreet finish. Esentially an aperitif, but is also a good acompaniment to fish.

While we have been able to enjoy Australian-made prosecco rose for a couple of years, the home of the grape – Italy – approved production only last year. The wait, it must be said, has been worth it.
BABO is claiming bragging rights as one of the first prosecco roses to be available in Australia and, what’s more, that it has been made to suit Australian tastes in that it is a brut style (ie. less than 12 grams of sugar/litre).
To label a wine Prosecco rose D.O.C., producers are obliged to follow a number of rules, the most important relating to the grapes. The only grapes permitted are glera (originally called prosecco) and between 10-15% of the red pinot nero (pinot noir) grape which provides the blush. I like the concept of a vintage prosecco rose, it not only gives extra cred to prosecco and the house style but ensures a potentially longer ageing – and therefore drinking – period. The clear bottle is marketing gold. The wine’s pretty pale, dusty pink blush will walk off the shelves once drinkers catch an eye full.  It’s reassuringly classy to look at. Ditto the taste. This is a delicate sparkling with a pulsating bubble, intense mousse and the lifted scent of musk, nougat, strawberry and red berries. Juicy to taste with a light, fruit tingle sweetness amid the musk-confection, red fruits and nougat. So fine it almost melts in the mouth with a brisk, fine-edged acidity. And it’s well-priced.
    Molto bene!

The 2018 Bouvet Saphir Saumur Brut Vintage is a sparkling blend of 90% Chenin Blanc and 10% Chardonnay, both vinified in stainless steel. Aged on the secondary lees for two years, the wine exhibits a radiant citrus color along with delicate bread and pure chalk and lemon aromas that come along pretty expressive after some minutes in the glass. It is round and fruity on the palate yet also firm and mineral, with a chalky/lemony expression that is balanced by roundness (from the dosage). Drink 2021-2026.

A fine plentiful mousse shows good hold over a pale straw coloured base wine that has pale gold edges. Exceptionally fine and persistent bead. Showing good aromatic lift notions of yeast lees intermix with citrus, subtle baked bread and fresh pear notes. Energetic with a light airy feel, there’s a subtle creaminess to the well meshed flavours of pear, citrus, light baked bread, yeast lees and green apple. Dry stimulating finish with an aftertaste of pear, baked bread, citrus and yeast lees.

This fragrant wine is ripe with hazelnut and peach flavors. Crisply textured, the wine is balanced, taut, mineral and still young. Its tightness suggests the aging potential while also hinting at the wine's inherent fruitiness.

A blend of Chardonnay and Chenin Blanc grapes the newly released 2013 vintage of Bouvet Saphir has already picked up gold medals at the 2016 Decanter World Wine Awards and 2016 Sommelier Wine Awards. It pours with a white frothy mousse which once dissipated reveals a pale straw coloured base wine with pale gold edges. Very fine bead showing excellent persistence. Pear and baked apple aromas emerge from the glass with hints of dried honey, light lemon sherbet and yeast lees also evident. Light, refreshing and with plenty of flavour the palate possesses pear, red apple and citrus characters over some light toast and yeast lees. Made from Chenin Blanc and Chardonnay grapes this excellent sparkling cuvee has been fermented and aged in oak barrels to add further complexity to the blend. Pours nicely with a frothy white mousse that shows good hold. Pale straw colour with pale gold edgings and an exceptionally fine bead that’s very persistent. Elevated baked bread, citrus and yeast lees top notes are followed by pear and subtle creamy cashew. On the palate initial yeasty baked bread characters are counterpointed by some refreshing citrus and pear flavours with an undercarriage of subtle oily toast nuances. Refined creamy like mouthfeel with a dry mouth watering finish. Long conclusion of bready yeast lees, subtle cashew, citrus and faint oily toast like characters.

Hands down the best sub $20 Sparkling on the market today.

A lacy white mousse sits over a very pale straw coloured base with a slight tinge of pale gold around the edges threaded by a very fine bead that shows great persistence. Lifted pear and baked apple aromas intermingle with citrusy yeast lees characters and hints of breadiness. Deliciously appetizing with both a stimulating freshness and delicate creaminess that give it a light airy mouthfeel, the flavours of pear, baked bread, subtle cashew and yeast lees are more finely meshed than ever before. A bite of refreshing citrus and crisp acidity present on the dry finish. Ends with a pear, baked bread, yeast lees and citrus aftertaste.

A fine satiny mousse holds well over a pale straw coloured base that has shades of pale gold around the edges. Flowing through the core is an exceptionally fine bead that shows great persistence. Sailing out of the glass with good intensity is an array of pear, green apple, yeast lees, subtle toast and citrus aromas. Impresses with it’s length, refinement and Champagne like qualities.

The Instinct Cuvee du Millenaire was created by Bouvet in 2000 as the pinnacle of their Sparkling wines. A very fine lacy white mousse showing good buoyancy, sits over a base that’s pale straw in colour with pale gold edges. Very fine and persistent bead. The nose shows a little more richness than the other Bouvets due to its extended bottle age with aromas of pear and brioche combining over yeast lees, oily toast like characteristics and bready citrus end notes. Fuller and richer in the mouth the palate has a Champagne like flavour profile of baked bread, oily toast like characters and citrus with lightly roasted almond and brioche nuances following on. The mouthfeel shows great refinement and good tension with a dry mouth watering finish. Excellent persistence with a long creamy aftertaste of baked bread, light cashew, citrus, yeast lees and faint brioche.

From Champagne's most obscure appellation comes a collection of idiosyncratic cuvees, produced by one of the last remaining family-run houses in Champagne. This delightful new discovery is your opportunity to take part in a very limited trial shipment. Be quick The Moutard-Diligent family can trace its roots in Champagne back to 1642 and their vinegrowing history spans centuries. The family first produced Champagne under its own name in the 1920s, and today manages 22 hectares of family owned vineyards in what is the least known of Champagnes four main districts, the Côte des Bar (also known as 'Aube'). Until 1927 when the Champagne appellation came into being, the Cote de Bar was thought to be an inferior sub district, bestowed with the somewhat misrepresentative title of "Champagne Deuxieme Zone". Yet many prestigious Grande Marque houses based in Reims and Epernay have used Cote de Bar grapes in their non vintage brands. UK wine writer, Oz Clarke remarks, "Nowadays there is less ill-informed opinion and winemakers from the big houses are increasingly open about the merits of the region... It is considered one of Champagnes most important sources of full flavoured, ripe Pinot grapes (its major varietal) and it accounts for around half of Champagnes supply of this varietal". While most Cote des Bar vignerons continue to send their wines north for blending by the biggest houses, others are beginning to bottle under their own labels. One of these is Moutard's owner/winemaker, François Moutard who remains an unashamed enthusiast for the region in which he was born. Apart from both buying and growing premium Chardonnay, Pinot Noir & Pinot Meunier fruit, Moutard's fascinating range employs the lesser known Champagne varietals, Arbanne, Petit Meslier and Pinot Blanc. While these varieties are permitted and were once largely planted around Aube, they're now rarely encountered in Champagne (less than .05% of total plantings), having fallen out of favour due to their sensitivity to frost, amongst other factors. Tasting Notes: An impressive N/V. Excellent creamy mousse with very fine bead, showing very good persistence. Straw colour base wine. Aroma of biscuit and yeast lees – just a touch restrained at first. The Champagne follows through to a generous full bodied creamy palate with nuances of biscuit, winter strawberry and just a touch of citrus on the back palate. Clean finish. Long biscuit aftertaste. Extremely limited quantities.
