It combines one part from an older reserve base tank (dating back to 2010) and one part from the current vintage. The wine undergoes full malolactic fermentation, an addition of a touch of new oak, and brandy spirit.

Citrus, honey, some red fruits and just enough freshly baked biscuits to make it interesting. The palate is just dry enough, finishing clean and crisp.

    Gently pressed to tank where it is fermented cool and matured for 6 months on lees before being blended with reserve wine. The wine is secondary fermented in tank (charmat method) to achieve carbonation, before being transferred to bottle.

    When it comes to Pinot Noir in Champagne, the grand cru villages of Bouzy and Ambonnay rank amongst the greatest in the region. And one of the most talented exponents from here is the Clouet family based in Bouzy. Champagne Andre Clouet have been producing Champagne for over two centuries, and under the guidance of Jean Francois Clouet the wines have never looked better. While his wines are exuberant and concentrated, Jean Francois manages to counter this with immaculate finesse and detail on the palate.

    Dream Vintage by Andre Clouet is dedicated to the grand vintages of Champagne. In contrast to their other wines, Dream Vintage is 100% grand cru Chardonnay from their vineyards in Bouzy. Label inspiration comes from the striking colours of Cadillac cars from the 1950's.

    The 2006 Brut Dream Vintage is powerful and a touch austere, but pleasantly so, as there is good energy and enough depth to support at least a handful of years of fine drinking once the wine relaxes a bit. This deceptively medium-bodied wine has quite a bit of punch. Drink 2018 - 2026

    Sparkling Shiraz is a unique Australian wine that’s synonymous with the Great Western region having been in production since the early 1900’s. The base wine for this cuvee is left on yeast lees in bottle for 24 months or more and disgorged in the traditional method. The dosage liqueur contains a small quantity of very old Best’s Liqueur Muscat.
    Pours with a thick frothy purple tinged mousse that hold well over a dense dark red coloured base that has a very fine yet steady bead flowing through it. Heady ripe blackberry, dark plum, liquorice and dark chocolate aromas fill the nostrils with some earthy vanillin oak background notes. Very concentrated, rich and powerful the mouth is completely engulfed with opulent blackberry, dark plum, liquorice and dark chocolate flavours. Vanillin oak and earth elements also chime in. Creamy textured it finishes dry and slightly chalky with a long decadent finish.

    Geoff and Susan Bull founded Freycinet Vineyard in 1979 on Tasmania's East Coast, near the Freycinet Peninsula. This area, named after French explorer Louis de Freycinet, is at latitude 42 degrees. The 15-hectare vineyard is family-owned, and all the wines are made exclusively from grapes grown, produced, and bottled on the estate. The vineyard benefits from a warm and sheltered location in Tasmania's otherwise cool climate, allowing for the careful cultivation of moderate yields of fully ripe and healthy grapes. Radenti R3 is a multi vintage blend of three vintages (40% 2012, 44% 2013 16% 2014) with overall blend proportions at 70% Chardonnay and 30% Pinot Noir. Further complexity is gained through long elevage in tank on lees and a further 7 years of maturation in bottle before being disgorged.

    If you’re looking to spend $65 on a bottle of sparkling wine, then this is a fine choice, and money well spent. It’s made using a 70/30 blend of chardonnay/pinot noir but more to the point, it’s a blend of three vintages – 2012, 2013 and 2014.
    Beautiful intensity and indeed complexity here. Honey, stonefruit, nuts and cooked apples, with cream, toast and lees laid on. It’s a meal, a delicious meal, in a glass, though both freshness and cut are still well maintained. The honeyed, toasty overtones of this are quite wonderful. Drink 2022 - 2025.

    A newly re packaged Methode Champenoise and at its price point, very impressive. Bright pale straw colour followed by very fine and very persistent bead. Excellent nose with distinct yeast autolysis and a hint of grapefruit and citrus. Full bodied creamy palate, excellent finesse followed by persistent biscuit, yeast flavours and crisp acid finish. Great everyday drinking.

    Fruit was sourced from McLaren Vale and Langhorne Creek with the resultant wine fermented and matured in American oak of which 45% was new. A fluffy purple tinged mousse holds well over a deep black dark red coloured base that has an exceptionally fine bead coursing through it. Ripe blackberry and dark chocolate aromas fill the nostrils followed by some toasty vanillin oak and earthy mocha notes. Rich and mouth filling, the weighty palate showcases Mollydooker’s trademark exuberance with ripe blackberry, liquorice and dark chocolate flavours melding into a toasty vanillin oak, earthy mocha and spice back drop. Opulently textured it concludes long and decadent.

    Moet and Chandon established Chandon Australia in 1985 with the purchase of land in the Yarra Valley and the creation of a sparkling winemaking facility.     Grapes for this sparkling are sourced from a range of premium cool climate vineyards in the South Eastern Australia, including the Yarra Valley, Strathbogie, the King and Buffalo Valleys in Victoria, and Coonawarra in South Australia. A blend of Chardonnay and Pinot Noir the wine pours with a good white creamy mousse that’s relatively short lived. Pale straw coloured base wine with very fine bead showing excellent persistence. The nose displays aromas of brioche, yeast lees and biscuit with a lemon sherbet like end note. Clean delicate palate flavours of biscuit, yeast lees and lemon with a light toast overlay.     Pirramimma sources fruit from their own Estate vineyards in McLaren Vale together with some from the Adelaide Hills to produce this moreish sparkling Shiraz.
    Pours with a fluffy dark red tinged mousse that holds well. A fine steady bead flows through a deep dark red black coloured base. Filling the nostrils is a mix of ripe blackberry, dark plum and dark chocolate scents which are trailed by some liquorice, earth and vanillin oak notes. Rich, mouthfilling flavours of dark plum, liquorice and dark chocolate create a creamy textural feel across the palate. Subtle earth and vanillin oak characters linger on the back half. Possessing excellent concentration, volume and depth it finishes long and opulent.

    Ah, now we’re talking. Sparkling shiraz, one of Australia’s great wine styles and a personal favourite of mine, especially at Christmas... actually any time. Sourced from McLaren Vale and the Adelaide Hills. This is not a monster but has tremendous fruit flavours revealing typical savoury plum, dark chocolate and spices with a captivating overriding perfume. Smooth and beautifully poised through to its finish. Lovely sparkling shiraz. Cellar: 10 years.

    Never understand why we see so little of this most joyous style of wine. That foaming purple filling the glass, surely brings a smile to every face. This is all chocolate, truffles, mocha, spices and coffee beans. Lovely blackberries and dark plums. A blend of fruit from both McLaren Vale and the Adelaide Hills. Very gentle sweetness, as one expects with the style. Good length. No reason it can’t be cellared, but it seems a better idea to drink it now and then buy more. Delicious.
