    Gently pressed to tank where it is fermented cool and matured for 6 months on lees before being blended with reserve wine. The wine is secondary fermented in tank (charmat method) to achieve carbonation, before being transferred to bottle.

    A multi vintage Sparkling Shiraz that contains reserve wines going back to 1997, Bleasdale freshening up the base blend every Spring by adding a portion of new vintage Shiraz to it. Fermentation takes place in open vats before maturation in a mixture of seasoned oak barrels and stainless steel tanks.

    A frothy purple tinge mousse shows good hold over a black dark coloured base wine that’s finely threaded by a nibble stream of tiny bubbles. Lifted blackberry, dark chocolate and liquorice scents combine with vanilla, light toast and traces of earth. Rich, full and satiny, the palate is awash with blackberry and liquorice fruits which create a luscious textural feel. Vanillin oak, subtle dark chocolate and earth elements also chime in. Excellent depth and concentration with a long succulent aftertaste. A great match for the Christmas Turkey.

Pale straw in the glass with a fine persistent bead. Aromas of crunchy green apple, lemon, grapefruit and juicy white peach undercut by hints of crushed stone, white flowers, sea spray, cut fennel and lighter tones of apple danish and almond meal. Excellent tension and drive across the palate with a porcelain line of acidity, pure citrus and apple tones finishing long, true and moreish. Drink by 2030.

Great everyday drinking.

    Moet and Chandon established Chandon Australia in 1985 with the purchase of land in the Yarra Valley and the creation of a sparkling winemaking facility. Their sparkling wines have been consistently excellent, which has in part been due to their ability to source a wide variety of grapes from cool climate growing regions from around Australia.

    Grapes for this sparkling are sourced from a range of premium cool climate vineyards in the South Eastern Australia, including the Yarra Valley, Strathbogie, the King and Buffalo Valleys in Victoria, and Coonawarra in South Australia. A blend of Chardonnay and Pinot Noir the wine pours with a good white creamy mousse that’s relatively short lived. Pale straw coloured base wine with very fine bead showing excellent persistence. The nose displays aromas of brioche, yeast lees and biscuit with a lemon sherbet like end note. Clean delicate palate flavours of biscuit, yeast lees and lemon with a light toast overlay. Crisp clean finish. Aftertaste of biscuit and lees with some light toast also emerging.

Hints of chocolate and spice on the nose, with a slight effervescent sensation on the palate. Dry tannins overwhelm the fruit component. Aftertaste of plum and stewed fruit.

    The colour here is something else; it makes deep purple look insipid. Blackberry and violet, dark boiled XMAS cake, chocolate and leather, with a slightly briny character too. It’s dense and tannic, full of juicy purple flavour, along with raspberries, salt beef and spice. It’s almost more savoury than simply sweet, and has layers of complexity and a full throttle finish rolling with dark chocolate and a thick pillow of tannin. Pretty much, this is how you do it. Almost ready now, but will really be better still in a few years. Drink 2017-2029+
