Old Hobart Distillery is a family owned business, with operations headed by Casey Overeem (a long time friend of Bill Lark who may or may not have participated in some trial batch 'garage' whiskies some twenty years ago). Casey officially reports his interest started back in the early 1980s when he had his first experience of distilling at a relative’s house in Norway. “Many people had micro-distilleries in their cellars and I really admired them, so I started experimenting when I got home” says Casey. Following years of research and trial, Old Hobart Distillery secured a distiller’s licence in 2005 with stills built by Hobart's Knapp Lewer engineering, a company that have built stills for several distilleries around Australia. A trip to Scotland shortly followed with visits to around 15 distilleries to gain a better knowledge of the whole production process. Thankfully, the Scots were open to offering advice!
We first met Casey and his whisky at the Tasmanian Whisky Appreciation Society Tasting in 2009 (TWAS). We noted "…a wonderfully jolly and friendly character, like just about everyone else in Tasmania". That is, until we pestered him about wanting to sell his whisky now instead of when his business plan has slated. "Suddenly a staunch and serious man emerged and it became clear, Casey was not mucking around, nor was he in a hurry. He's out to produce the best whisky possible, and he believes that won't happen until the spirit is of at least four years old. A change of subjects is enough to revert his character for the better..."
The Old Hobart distillery has seemingly pursued the way of the boutique distiller, employing the favourable use of 'quarter casks' 100 litres in capacity to mature their whisky. These French oak casks have been re-built by the local S.A. Cooperage from larger barrels previously holding sherry and port respectively, for which the whisky remains in its entirety until ready.
The quarter cask method has always proven to be the more costly approach in the maturation of whisky; however it finds its favour with boutique distilleries due to the high concentration of flavours it imparts in only a short period of time. Although we could not confirm the exact age of these whiskies, the simple math states the maximum age can only be 7yo. Considering this, the flavours present in both expressions are impressive, confirming what the fuss has been about all along.
Well, it's 2012 and Casey's whiskies are finally here offering a delightful development in the Aussie whisky scene. The man is no amateur and has clearly done his homework. All Overeem whisky is bottled as, Single Cask and individually numbered stating cask and bottle number.
Tasting note: Bright gold appearance. Immediately appealing aroma offers pristinely clean barley sugar / butter menthol top notes with a very enticing lift. After aeration, lovely vanilla / malt aromas are detectable followed by heavier Christmas cake / dried fruit scents. Wispy, silky entry leads into a soft, pure, light to medium bodied palate; medium dry flavours of barley sugar and butter menthol repeat accompanied by gentle spices and continue well into the aftertaste. Exhibits a lightness and panache that’s comparable to class Irish. Well done! 43% Alc/Vol.
