Hot on the heels of their sell out "Ginger Beer" single cask edition comes a wood finish that adds another layer of complexity to Starward's spirit.

This latest release has been double matured for 18 months in Apera casks (Australian term for sherry) before being transferred into heavily charred Australian Shiraz wine casks from an iconic South Australian producer for an additional 18 month period. The result has a 'mermaid' effect (those tasting will know what we mean).

Tasting note: Deep copper. Nice legs. A whiff of varnish in the opening slowly recedes allowing light banana cake, bourbon soaked-oak and white pepper notes to emerge. The aroma lifts a notch after 3-4 minutes exposure taking on charry oak, vanilla wafer and hints of orange cake. Big delivery with good bittersweet balance and the high alcohol in reasonable check. Dry and very textural on the finish, packed with vanilla and pepper. Salivating. Brittle toffee / caramel mates in the aftertaste. Very Bourbonesque - at least to this taster. 57% Alc./Vol.
