Named in honor of Lark distillery's founder, Bill Lark, who is referred to around the world as the 'Godfather' of Australian whisky. The gin is made by distilling spirit over a number of botanicals including the juniper berry and the Tasmannia aromatica berry. Commonly referred to as the native pepperberry, these are collected wild from the Tasmanian wilderness, crushed, and steeped in strong neutral spirit, then twice distilled in copper pot stills. The process is similar to that of producing a classic London Gin but the taste is like no other gin in the world.

Tasting note: Crystal clear. Citrus accented initially, then juniper, hints of pepper and rosemary. Opens creamy yet broad and follows through to a mildly peppery, medium dry profile of pine needle, white pepper and juniper flavours, to finish more focussed and linear. Pleasantly warm, peppery, piney fade. 40% Alc./Vol.
