A very consistent style of Champagne. Excellent, creamy mousse. Very fine, persistent bead, with delicate flavours of yeast lees, cashew and citrus. The palate has very good weight, with creamy texture. Flavours of biscuit, lees, toast and citrus emerge – not as long as the palate flavours of previous releases, but very acceptable. Clean, balanced acid finish. Aftertaste of toast, yeast lees followed by a hint of flor fino.

First Tasted December 1999:
A superb surprise! Outstanding quality and value. Pale straw colour, good mousse followed by very fine profuse bead with excellent persistence. The nose again is very impressive, yeasty aroma with biscuit, toasted honey and a flor sherry like background, indicative of some aged reserve wines being incorporated into the base blend. Full bodied, creamy palate with fine flavours and excellent persistence. Biscuit, cashew and yeast lees flavours are dominant. Crisp acid finish, followed by a long aftertaste of grapefruit and yeast lees. Stock up!

Additional retaste September 2004:
The tasting note for this wine is qualified by the fact that the wine was tasted from Piccollo, so that the quality may be less than in 750ml bottles. The piccolo was with a screw cap with a black plastic imitation champagne cork. There is little mousse evident, and the bead dissipates quickly. Straw colour with yeast lees top note, followed by a touch of biscuit, flor fino and cashew. Creamy palate, with relatively high acid back bone. Flavours of lemon and grapefruit emerge and linger into the aftertaste.
