Kilchoman is remarkably contemporary by Scotch Whisky standards (production commenced in 2005), yet it’s most notable for its adherence to old fashioned methods. There’s justification for Kilchoman’s slogan of “Taking whisky back to it’s roots”. It is essentially a ‘farm distillery’, as many were in the early nineteenth century. Just about everything to do with whisky production happens on site. In the case of the 100% Islay release, even the barley is grown and malted by the distillery - highly unusual nowadays when most are either purchasing barley from around Scotland or importing the raw materials. This, the fourth edition of the Kilchoman 100% Islay is a vatting of four and five year old whisky matured in ex-Bourbon casks.

Tasting note: Brilliant straw colour with water like edges. Superb aromatic lift offers smoked ham, roasted root vegetables, fennel, menthol tobacco and sweetens in later passes accenting cocoa, vanilla, tea biscuits and more. A slow cascade of juicy baked citrus, lanolin, cocoa and salted caramel in the mouth, fizzes with complexity; finishes perfectly balanced and fresh with light fennel, menthol smokiness and late dried coconut in the fade. An amazing effort (as usual) from this distillery. 50% Alc./Vol.

Other reviews... For the 4th edition of 100% Islay, the team at Kilchoman has selected 40 first-fill Bourbon barrels, 32 being of five-year-old whisky and eight of four-year-old. The 100% Islay range is produced from barley grown at the distillery, and every step of the production process is completed onsite. This is only lightly peated compared to the distillery’s Machir Bay and Loch Gorm expressions. The nose yields figs, malt, bonfire embers, smoked haddock and brine. Finally, vanilla, wood polish and orchard fruits. Initially, soft fruits on the palate, with smoke emerging and building. Peat smoke in a lengthy, mellow finish. 50.0%
