He pioneered wine preservation techniques in the wine making process, something lacking in the region in the 1970’s - cold and anti-oxidative handling, epitomised by the German handling of Riesling - along with the more 'French' technique of elevating their wines in a careful, more oxidative, texture-building manner.
Schiopetto’s standout variety is Friulano which sees 7-8 months on lees resulting in a wine that’s rich in texture and flavour with an abundance of wild floral and almond notes on the nose, supported on the palate with rich stone fruits and refreshing acidity.
Bright pale straw colour with a subtle tinge of green running around the outskirts and a watery hue. Elevated pear, lime and green apple notes merge into distinct stone, fresh herb and mineral notes. On the palate ripe pear, red apple skin and lime flavours show excellent intensity enveloped by a supple stony like mouthfeel. Making an appearance on the back half are notions of wet slate, infusions of fresh herbs and a delicate salted almond character. Finishes dry with brisk acidity and a long finely detailed aftertaste.

Brilliant pale straw to straw colour with greenish tinged edges and a watery hue. Lifted ripe mango and apple scents meld into hints of honeysuckle, apricot and light quince. Full and round in the mouth the palate dishes up flavours of mango, spicy red apples, quince and bees wax over traces of wet stone. Finishes dry with fresh acidity and a medium length aftertaste.

Pronounced fresh pear and lime aromas intermingle with quince, hints of dried clove, baked apple, wet stone and spice. Rich and concentrated, there’s plenty of volume and texture to the mouthfeel with generous pear, lime and baked apple flavours dominate over a back drop of spicy quince and stony elements. Finishes dry with ample amounts of fresh acidity and a long mouth watering aftertaste. A terrific fusion of fleshy ripe fruits, texture and energetic fresh acidity.

Lush and elegant, refined and complex on the palate, this is an expressive, finely grippy and salivating Sonnenuhr Kabinett that is not really in a Kabinett style, but it's gorgeous and has age-worthy quality. 9% stated alcohol. It offers a beautiful nose of cassis, passion fruit, herbs, and spices. The wine proves subtle and racy on the palate and leaves a gorgeously intense feel of racy and zesty fruits in the nicely light-footed finish. The after-taste underlines the raciness and playful side of the wine. It may have a touch more presence that your usual Kabinett but makes this more than up through intensity and focus. The wine offers great presence and structure on the palate (it has 9% of alcohol) and leaves a great feel of orchard fruits, ginger, flowers, and fine spices. An initial whiff of volatile acidity quickly gives way to an aromatic, powerful, and concentrated scents of toffee, mango, raisin, mirabelle, grapefruit, passion fruit, apricot, plum, and spices. The wine develops huge concentration and depth on the palate, where a kick of acidity lifts the flavors. Despite the sweetness at play, the wine remains utterly balanced thanks to a playful acidity, its grip, and structure. The finish has an outstanding intensity. We would not be surprised if this stunning TBA will not eventually merit a perfect rating at maturity, once it will have revealed its finesse: It is THAT impressive! Drink 2034-2069.

The lime-green/citrus colored 2019 Zeltinger Sonnenuhr Riesling Beerenauslese * needs some time in the glass and should be opened some hours before being served. The wine is intense and concentrated yet very clear, fresh and spicy, even flinty or slatey on the complex nose that represents very fine botrytis aromas. Rich and juicy on the dense and finely structured palate, this is a luxurious, intense, round and textured BA with a higher portion of botrytis berries, which give a more luscious fruit texture yet without a loss of finesse and precision. Gorgeous. Tasted at the domain in September 2020. Drink 2027 - 2080.

It offers a magnificently refined, clean, and ripe nose of honey, pear puree, almond cream, smoke, and lead pencil. The wine rewards one with some subtly exotic and gorgeously multi-layered flavors of fruit and honey on the palate, and leaves one with a delicately pure, juicy, and smooth sensation in the finish. This gorgeous BA only needs some (extensive) cellaring in order to reveal its full potential. Drink 2034-2069.

It offers an aromatic and ripe nose of yellow peach, pear, almond milk, candied tangerine, star anise, and a hint of banana flambéed. The wine proves sweet and ripe on the palate, where the juicy fruits give it more than a hint of Spätlese Schmelz. This smooth and juicy side carries over into the long and structured finish. This fruity-styled wine will need a couple of years to integrate its sweetness and fully deliver upon its underlying finesse. Drink 2027-2039.

Sauvignon is nicknamed locally "Blanc Fume" for two reasons: the layer of grey wax found on the grapes at maturity, and the pungent flinty/smokey flavour that can exhale from the wines. Since the passing of Florence Daguenau, Serge Daguenau et Filles is today led by Serge and Valerie Daguenau. Although more intense examples of Pouilly Fume come from the siliceous soils of the area, the father and daughter team tends to 17 Ha located on kimmeridgian marls (a.k.a. "Terres Blanches"). The upside is that the resulting wines are more expressive from infancy.

The Les Pentes cuvée from Domaine Serge Dagueneau et Filles is their standard bottling of Pouilly-Fumé and in 2012 it is an excellent bottle, offering up a refined and utter-ly classic nose of sweet grapefruit, orange, flinty soil tones, cut grass, green apple and just a hint of pepper. On the palate the wine is deep, full-bodied, complex and zesty, with a vibrant core of fruit, lovely soil signature and fine cut and grip on the long and bouncy finish.
