    'Suze' was created in 1889, at the Rousseau, Laurens and Moureaux distillery in the outskirts of Paris. To differentiate his product from the many wine based aperitifs of the day, Fernand Moureaux decided to create an aperitif from the Gentian plant, a yellow Alpine flower with massive roots that dig deeply into the flanks of mountains. It is these same roots that are used to prepare the base material of the liqueur.

    Legend has it that Moureaux bought the formula from an old distiller in the Canton de Bern on the Swiss Jura Mountains where Gentian thrives, and where the river Suze flows. Here, Hans Kappeler had been selling "Or des Alpes" to the locals for years as a remedial tonic. Late in his life, sick and almost financially ruined, Kappeler may well have taken the opportunity to sell his creation to the French negociant. The story goes he convinced Moureaux that one day his liqueur "would flow in France like the Suze", in reference to the river passing through the village.

    A more prosaic version has it that the aperitif was named after Fernand Moureaux's sister in law, Suzanne Jaspart, who enjoyed the drink during sessions of tennis. Regardless, Suze became a sensation due to its original flavour. A testament to its popularity is the plethora of advertising material that was produced around the brand by illustrious artists including Pablo Picasso, and the nickname it received from fans - "The Yellow Fairy!"

    In the present day production of Suze, wild Gentian is still sourced from Jura, but also from Auvergne where other famous brands of Gentian liqueur are still produced. The modern-day Suze is much sweeter than the original recipe, but still includes all of the aromatic plants in its formula, though exactly which remains closely guarded.

    The gentle alliance of sweetness and bitterness is the trademark of this aperitif, which continues to be the biggest selling in its category. Suze can be consumed neat or on ice, but can also be used as the bitter component for many cocktails. 20% Alc./Vol.

    Created by following an "Italian Bitter of Turin" recipe dating from the 1860s. The recipe was purchased in 1925 by the small Swiss distillery E. Luginbühl, and a version has been produced for mostly local consumption ever since. Tempus Fugit's Gran Classico reverts back to the original recipe and employs a maceration of 25 aromatic herbs and roots including wormwood, gentian, bitter orange peel, rhubarb, and hyssop. A must have in the cocktail armoury for Negronis or as a non-red alternative bitter ingredient.

    Tasting note: Beautiful polished copper colour with deep gold edges and thick legs. Sensational aromatic range with the gentian / bitter peel top notes leaping out of the glass over background aromas of pink grapefruit, orange and dried herbs. Creamy textured, semi-sweet mid palate is eclipsed by a juicy, bittersweet cascade of orange peel, grapefruit and gentian-like flavours. Finish demonstrates ideal bitter-sweet balance as the rooty, earthy notes vie against the sugars until the bitterness finally wins out. Superbly crafted. Benchmark in its category. 28% Alc./Vol.

    Naked Kina is a take on a quinquina, a bittersweet wine based liqueur designed to be served chilled as an aperitif or mixed in a number of classic cocktails. This refreshing drink starts its life as a small batch Sauvignon Blanc, which is then fortified with a combination of sugar cane spirit and distilled wine. It's then infused with fresh local orange peels, cinnamon myrtle, strawberry gum and a handful of earthy herbs. The remaining orange hearts are given away to a local cafe manager who presses them into fresh orange juice. Zero filtration takes place before bottling, so you may notice some sediment in the bottle.     It seems almost every region of Italy has its preferred 'aperitivo', and in Venice, it's 'Select'. Created in 1920 by two brothers at the Pilla distillery in Venice, a city renowned for liquors, it's made by carefully blending, boiling and macerating 30 botanicals, including juniper berries and rhubarb roots; the juniper adds balsamic and floral notes, while the rhubarb contributes the required bitterness.

    Select went on to become the star of the Venetian cocktail scene and a key ingredient in the original Venetian Spritz. The recipe is simple: 3 parts prosecco, 2 parts Select, 1 part soda, one green olive and lots of ice. The result is a well balanced, bittersweet taste that's deliciously refreshing. In short, if you like Aperol, you should love this!

    Tasting note: Crimson to ruby red. Fresh, pleasantly bitter aromas include rooty-dried herbal / potpouri-like notes as well as orange zest, grapefruit and sweeter hints of cranberry juice.     Based on the Gutedel grape variety (better known as Chasselas), this aromatic and super-dry vermouth uses two types of wormwood in a botanical bill that also includes apple, cinchona, fennel, cardamom and lemon peel. Fortified with a touch of Schladerer's peach eau-de-vie, lending a pleasant fruity note, this weighs in at a lean 28 grams/litre (less than Noilly Prat and Dolin for example). It's genuinely dry and yet it's also textured and vinous, making it nicely versatile and user-friendly; from apéritifs through to the classics. Try it with tonic or shake up 25ml with 50ml Dodd's gin or Poor Toms Fool Strength for a cracking boozy Martini where this vermouth really stretches the flavour.

    Tasting note: Pale brass gold. Fresh, bittersweet aromas of gentian, dried apricot, crushed grapes, herbal tea and citrus zest. Follows through with a delicately tart, light bodied profile including hints of quinine, lemon peel and oxidised wine. Ends bone dry, faintly bitter, cleansing.     You might think of Pastis as a French specialty, but anise has been used by Mediterranean civilizations as an ingredient in alcoholic beverages since ancient times. Its cultural connections with the Piedmont region are also strong. Produced by Bordiga for nearly a century, their version is described as light and dry, with a defined salinity and herbaceousness. Some go as far to say that very few of the commercial French versions - or even the artisanal ones - match it for complexity and quality. Derived from a blend of botanicals including star anise, licorice root, wild fennel seed, gentiana lutea (roots), gentiana acaulis (flowers) and wild thyme flowers, the fruity / herbal / floral notes work to balance its pronounced anis character. Traditionally consumed as an aperitif with a ratio of 4:1 water (sometimes with the addition of a drop of mint, barley or grenadine syrup), or use it as a sub for absinthe. 45% Alc./Vol.

    The secret of this Vermouth is the mix of Piedmont’s Nebbiolo - whence the well-known Barolo and Barbaresco are produced - with white wines like Moscato, carefully selected and combined with herbal infusions, spices and roots including wormwood, lime, marjoram, mint, cinchona bark, cardamon, vanilla, carnation berries, gentian root, sage, citrus peel, fennel and coriander - many of them grown in the Occitan Alps near the winery. While it's reported to be slightly lighter in style than many other Italian Rossos, a tinge of cola sweetness on the finish is complexed by bitterness and spice. Especially recommended in a Martinez, otherwise, delicious on the rocks with an orange peel garnish and a splash of tonic. 18% Alc./Vol.

    This tempered and citrusy bitters is made following an original regional recipe, although Bordiga have adapted and rebalanced it to better appeal to current tastes. In other words, it's a little less bitter than an earlier incarnation from the 1950s. While the Verde variation is based around Alpine herbs and mint, the Rosso expression accents bitter orange and gentian. It should pair effortlessly with a number of tasty gins and will be perfect in a Negroni or over ice with a dash of soda. 21% Alc./Vol.

    Boasting similar herbal complexity and concentration as Bordiga's popular Bianco, the point of difference here is simply less sweetness. Piedmontese white varietals make up the base wine, infused with more than thirty different botanicals - many grown in the Occitan Alps near the winery. These include absinthe, lime, coriander, marjoram, fennel, gentile absinth, cinchona (quinine), cardamom, quassia, Madagascan bourbon vanilla, gentian root, sage and citrus peel. All are macerated separately in triple-distilled grain spirit before the infusions are blended into the wine base, accented with a little Moscato. 18% Alc./Vol.

    Founded in 1888, Bordiga's motto, 'tradition is our future', neatly sums up this great artisan distiller from near Cuneo, in the foothills of the Maritime Alps. Pietro Bordiga was a bar owner in Turin before he relocated to Cuneo at the end of the 19th century, with the distillery just out of town on a road leading into the mountains. This location was essential for Pietro, as the Occitan valleys are home to a vast array of herbs and other botanical ingredients, essential to making traditional vermouth, aperitivi and amaro, as well as wild juniper that became the basis of Italy's oldest continuously produced gin. Even today, most of Bordiga's botanicals grow wild in the varying valleys of the Maritime Alps, with the unique, elevated environment ideally suited to developing and retaining the essential oils. All the wild, and naturally organic, botanicals are still collected by hand at distinctly different moments, so as to capture the best expression of their individual natures, whether they be the root, leaves or flowers.

    They are then dried either in the open or on drying racks, with the elevation and cool of the macroclimate preserving pristine aromatics. Extraction of these aromatics is achieved through maceration in triple-distilled grain alcohol in Bordiga's original wood-burning copper still, with each botanical steeped separately, so as to ensure the optimal expression, as timing differs to target the sweet spot for each.

    A wine-based aperitif, Byrrh is made mainly from Carignan and Grenache grapes from the hillsides of Roussillon in Southern France. The grape must is macerated with neutral spirit in order to stop the fermentation process. This gives a particularly fruity and syrupy mixture, called "mistelle". After a preliminary ageing, the mistelles are blended with dry red Roussillon wines. The blend is then cold-flavoured with dried crushed quinine bark, and aged for 3 years in large wooden barrels called "foudres".

    Simon Violet and a pharmacist friend, both from Thuir, in the Pyrénées invented this new quinine-based aperitif in 1856. Benefiting from the then fashion for quinine tonic wines, Byrrh soon became popular throughout France. Starting in 1903, advertising poster competitions were launched to promote the brand. Boosted by extensive advertising campaigns, Byrrh was a huge hit in the 1930s and by 1935 was the leading aperitif in France, with sales reaching 35 million litres. The brand became part of Pernod Ricard in 1976.

    Tasting note: Deep crimson colour with brick red hue. Aromas of cranberry and pomegranate are married with a subtle quinine note and herbaceous undertones. Light to medium bodied and mildly fruity in a semi ripe raspberry way, with slightly more of a bitter herbal element entering towards the finish. Concludes with a pleasant dried cranberry / quinine aftertaste but overall, relatively sweet for an aperitif. 17% Alc./Vol.
    [Note: tasted at room temperature. The addition of ice and a slice of lemon makes a world of difference.]

    Large format, 28.5% Alc./Vol. When you factor in the higher alcohol, it adds something extra to the deal - and to the flavour. (The regular ABV is 25%. Yes, a little more can make a significant difference).

    Like most liqueur / aperitif producers, the Campari company considers its recipe as the key to its ongoing success. Consequently, secrecy is paramount. The complete recipe, kept in a bank vault, is known only to the company's President who oversees weekly production. With worldwide annual sales now exceeding tens of millions bottles, this cautionary attitude is perhaps understandable. What is known is that it contains quinine, ginseng, orange peel, herbs and rhubarb that are steeped in a mixture of water and alcohol. The drink is then coloured with cochineal. It's typically served very cold without ice but with a dash of soda to release the flavours. Only while direct import European stocks last.

    Other reviews... Light red color. Dark berries and spice on the nose. A smooth attack leads to a somewhat sweet, medium-to full-bodied palate with ripe and tart black cherry and dark fruit flavors that give way to a barrage of extremely bitter herb and fruit pit elements that dominate the back palate and linger as the fruity sweetness dissipates.     Cherry-red color. Nose is snappy and expectedly bitter in a woodsy, earthy, quinine-like way. Palate entry is mild in a sweet-sour fruity manner; midpalate is sweet and only moderately bitter. Finishes long and mildly quinine-like. While I’m not a bitters aficionado (more a bitter aficionado, really), Campari and orange do positively click. It was created after Canadian wine merchant, Joel Clarke was travelling in Northern Italy where he met the family-run, fourth generation, Trento-based business that had been crafting quality beverages since 1909. A special formula was developed for the Canadian market which was considered perfect for a Spritz.

    Tasting note: [tasted from a near empty bottle] Bright orange / borders on ruby red. Attractive and true to style with earthy / mildly bitter / herbal aromas evoking gentian, blood orange peel and grapefruit. Silky mouthfeel. Semi-sweet entry follows through with a very delicately bitter dried peel / herbal quality that lingers in the aftertaste. A pleasant, low-key bitter style. 16% Alc./Vol.

    The biodynamically farmed Castagna Vineyard is situated high in the foothills of the Australian Alps, five and a half kilometres outside the beautiful town of Beechworth in Northeast Victoria. Following on from a stream of first class wines, Castagna have now made an addition to the burgeoning Australian Vermouth scene. Wine writer, Max Allen comments, "It's no coincidence boutique vermouths have started appearing at the same time as the boom in Australian boutique gins - what better partner is there for gin than vermouth, and vice versa?"

    This is reputedly Australia's first 100% estate grown Vermouth, with all the ingredients sourced from Castagna's property.

    Tasting note: Slightly cloudy, pale salmon pink. Sweet oregano and grapey, semi-sweet yet fresh opening notes are underscored by a gently bitter herbaceousness. Aeration accents grapefruit and tarragon. Light to medium bodied with pink grapefruit followed by a yeasty, bready, bay leaf / sage finish concluding gently bitter, dry and delicately herbal in the fade.     Génépi (also known as Mugwort), is a generic term used by the inhabitants of the French Alps to describe several kinds of aromatic plants native to the region. For the local mountaineers, it's a tradition to harvest the flowers in August and macerate them in alcohol. Chartreuse produce two variations of Genepi liqueur, although, so far as we can tell, the difference between them can only be surmised by the name. This version is subtitled "Intense", the other is simply called "Traditional". Both weigh in at 40% ABV. It's assumed that 'Intense' includes extra botanicals in the mix, resulting in a stronger aroma and flavour which is said to be reminiscent of "...garden mint, herbs, vanilla, bitter orange peel and flowers". Having been distillers for four centuries, the monks have perfected a formula derived from several macerations and distillations. 40% Alc./Vol.

    Walnut liqueurs have a long-standing tradition in the Dauphiné region where the Carthusian order is located.     Based on an original recipe from the 19th century, this superb, pale gold Anis is drier than most - which makes sense - like Absinthe, and unlike Pastis, it contains no sugar. On the nose, herbs including Spanish green anise and fennel from Provence are complexed by notes of lavender, chamomile and thyme. The palate takes off with a burst of bittersweet, herbal / anise, finishing more fennel-like, zesty, peppery and long. The dryness makes this perfectly suited to pre-dinner drinks.     This amber coloured Pastis presents piquant aromas of liquorice, anise and peppermint lozenges and follows in a medium to full-bodied palate with flavours enhanced by the twenty or so plants and spices included (génépi and woody hints of moneywort to name a few). The result is quite a blast for the category, with more texture and intensity than most, especially through the spicy finish.     Tasting note: Impressive deep sienna brown colour with flawless clarity. Smells like a combination of Amontillado Sherry and quality Rosso Vermouth, with mildly nutty notes combining with sweet spices and stewed fruits, though nothing that's distinctively walnut as such. Light bodied, the dry, nutty/fruity combination repeats on the palate, though again the walnut is absent. Concludes pleasantly dry, true to style, if a little short and thin. 17% Alc./Vol.

    A talented and seasoned distiller of Cognac, Jean Luc Pasquet is first and foremost a true "paysan" in the noble sense of the term, who knows how to make the best use of his land when it comes to creating spirituous pleasures. The wild raspberry bushes that were quietly growing around the estate, one day proved too much to resist and it seemed obvious for him to try and capture the best expression of the fruits. He experimented at first with the simple idea of macerating fresh raspberries in his young cognacs, but on the insistence of his wife and kids , soon gave in to the idea of sweetening and reducing the spirit with his own fresh organic grape juice at harvest. The drink became so popular locally as an aperitif, that he finally decided to plant more raspberry bushes around the property and grow these organically.

    Marie Framboise stands apart in the realm of aperitifs, combining the finest aromatic cognac of Grande Champagne with the fresh fruit flavours or grapes and raspberries. It is an incredibly versatile drink that can be enjoyed as an aperitif on ice, as a cocktail ingredient and even to lift the flavours of a fruit salad, a Sangria or even your favourite sparkling. If that's not enough you can always follow the advice of Jean Luc, who serves Marie-Framboise with his favourite chocolate desserts.

    Tasting note: Clear. Pale pink appearance. Appealing, fresh aroma includes very ripe, fresh raspberry combined with suggestions of manuka honey and crushed grapes. Light and silky entry builds with excellent concentration. Mid palate is light to medium offering delicate flavours of ripe raspberry, grape juice and a touch of dried apricot. Exceptionally pure, soft and gently warming mouth feel. Finishes as light and fresh as a balmy Summer’s evening with succulent ripe raspberry flavours persisting. Along with the trademark maceration of fresh fruits, it's aged in barrels to round things off.     Tasting note: Flawless pretty deep brassy gold colour is moderately viscous. An intoxicating and sophisticated bouquet unfolds notes of peppermint, chamomile tea, thyme, turmeric, sweet oregano, cinnamon and more. Soft and creamy on entry building with terrific length, the mid palate bursts with vibrancy and complexity in a beautifully harmonised amalgam of sweet spices and dried herbs. Lavender? Orange zest? Finish hints at turmeric, peppermint, chamomile tea and delicately bitter gentian ending clean, lingering and long. A superb potpourri of flavours. Australia's answer to Chartreuse? 40% Alc./Vol.

    Fans of Picon Biere will be happy to know that Picon club is now available in Australia. While Picon Biere has for long been added to wheat and lager beers, there was a need for a bitter aperitif that would perfectly be suited to wine and wine cocktails, as the original Picon Biere had a tendency to sink to the bottom of a glass when used as an ingredient for the latter, and in 1995 Picon club was added to the range.

    Picon Club is darker and noticeably more intense on the flavour front, displaying a heady combination between Empyreumatic (burnt her) and Torrefied (roasted wood) characters with heavy orange peel, opening the door for a whole new wave creativity on the cocktail scene with compositions such as Picon Mojito, Picon Punch, Death and Taxes, Amarissimo, and many more. Although Picon club and Picon Biere are now under the umbrella of a spirits giant conglomerate, it is notoriously difficult to source (with bartenders in the US literally having to smuggle it out of Europe) and this distinctive drink is now in higher demand than ever in its history.

    The late 19th to early 20th century was the 'Golden Age' of French aperitif wines known as Quinquinas or Kinas. Kinas were originally created to make quinine more palatable when administered to soldiers in the disease-plagued 'colonies'. They took a life of their own as producers found combinations of ingredients that delighted the public and they took on their own styles following the tastes of the regions in which they were produced.

    Produced by the Oliver Matter Company, Kina L'Aéro d'Or reflects an 'Alps-Provence' style: White wine made from the Piedmont-grown Cortese grape is infused with Cinchona bark (which produces quinine, the principal bitter taste), Orange Peel, Wormwood and other exotic spices to give a beautiful deep golden hue, an aroma of quince and fine marmalade, with a complex, mildly bitter taste that teases the tongue as its well-balanced sweetness prolongs the finish. Wonderful on its own, chilled, on ice, or mixed with soda or tonic water, for a refreshing, low-alcohol drink.     It seems almost every region of Italy has its preferred 'aperitivo', and in Venice, it's 'Select'. Created in 1920 by two brothers at the Pilla distillery in Venice, a city renowned for liquors, it's made by carefully blending, boiling and macerating 30 botanicals, including juniper berries and rhubarb roots; the juniper adds balsamic and floral notes, while the rhubarb contributes the required bitterness.

    Select went on to become the star of the Venetian cocktail scene and a key ingredient in the original Venetian Spritz. The recipe is simple: 3 parts prosecco, 2 parts Select, 1 part soda, one green olive and lots of ice. The result is a well balanced, bittersweet taste that's deliciously refreshing.
