Bakery Hill Sovereign Smoke Defiantly Peated Single Malt Australian Whisky (500ml)

Created using Belgian peated barley, the phenol levels for this release are much higher than the distillery's standard peated malt (approx 45 ppm versus 20-25 ppm). Bakery Hill's trademark sweetness is retained from a full 7-8 year maturation in 3 x 225L x-bourbon barrels, so it's also relatively limited.

Tasting note: Brilliant gold. One of the peatiest Aussies to date; wafts of sooty smoke enveloping every aspect of the bouquet; A few minutes air-time accents a 'farmyard' aspect, as well as white pepper, ginger and old lucerne bales. Concentrated. Once again, a very earthy slant to the delivery; drizzles of bittersweet chocolate towards the finish. Keenly balanced with drying cigar box and bitter chocolate through the aftertaste. Very well done. A new benchmark for the genre in Australia. 50% Alc./Vol.
