Tasting note: Matured in a medium-toast 100 litre French oak barrel that previously held Spanish Pedro Ximenez Sherry. Lively aromatics, enriched by a fruity overlay of dates, spiced raisin cake and prunes. Not as sweet as you might expect; good concentration with more dried fruits plus a little ginger biscuit and salted caramel. Fades with hints of ginger bread and sticky date. Nicely done, but if you want to try it be quick - the outturn is just 146 bottles. 46.7% Alc./Vol.

Notes from the producers... Endless nosing! A real emotion filled experience. Nose: vanilla custard, melted butter, gentle oak, short bread. Palate: pears, butter on toast, creamy vanilla, soft caramel, roasted nuts. Finish: spicy oak, salted apple crumble, fruit blossom.
