From the Roundstone vineyard. “All stalky shit” shouts Timo Mayer, “ten days full carbonic maceration, kind of, ten days jumped on and extract from the skins”. The method is uniform for all the wines, pretty much.
Mmm, perfumed. Faint mescal, sour cherry, white pepper scents, but turbo-charged, so fragrant. Fine tannins swoop on sour but ripe, plush, sweet cherry fruit flavours, a further dusting of pepper, strong rasps of brambly character follow. Light chomps finish the wine, so does natural-feeling cranberry-tangy acid. Lovely drink, on the more juicy-fleshy side and sweetness seems a feature.
