Fruit is sourced from a variety of vineyards around the Mornington Peninsula, many of which are between 15 to 25 years old. The 2017 Chardonnay was fermented in a mix of French oak barriques and puncheons (15% new), for a total maturation period of 10 months. Several batches from the coolest vineyards were allowed to undergo the acid-softening malo-lactic fermentation (approximately 50%), with the remaining portion withheld to preserve the pure fruit flavours of a very strong Chardonnay vintage.

Brilliant pale straw colour with a slight greenish tinge to the edges and a watery hue. Elevated ripe peach aromas tinged with apricot and honeycomb sail from the glass followed by light butterscotch and citrusy nougat notes. Medium bodied with a creamy yet vibrant feel the palate is filled with ripe peach and apricot flavours which sit over a backdrop of honeycomb, cashew and citrusy nougat. Finishes dry with good fresh acidity enlivening the back palate. Medium to long aftertaste of spicy ripe peach, apricot, honeycomb, light cashew and citrusy nougat.
