Domaine Simon Bize et Fils has to be one of the best kept secrets in Burgundy today. Famed for producing wines with impressive capacity for cellaring, under the care of Chisa Bize the wines are also more dynamic and show greater aromatic detail. The Domaine has some of the oldest average vine age anywhere in the Cote d'Or, and Chisa practices her amalgam of organics and biodynamics coined as "Bize-dynamics". Yields are kept low, and winemaking utilises a high percentage of whole-cluster fermentation.

The 2017 Savigny-lès-Beaune Village contains nearly 90% whole bunch fruit. It has a clean, precise bouquet, open and transparent, featuring red cherry and raspberry preserve aromas. The supple, medium-bodied palate offers chalky tannin and a light spiciness toward the approachable, charming finish.

A more complex if not prettier nose combines notes of raspberry, cherry, earth and humus. The succulent yet nicely precise middle weight flavors possess good depth and persistence on the balanced finish.
