Twenty percent whole bunch was included in the ferment. Totally opaque black dark red core with a bright dark red hue. A mixture of dark plum, dark cherry and liquorice aromas are subtlety overlaid by some clove with smoky cedar and blackpepper notes ensuing. Medium bodied with a refined feel, the palate serves up spicy dark plum and liquorice flavours with an undercard of smoky vanillin cedar, earth and blackpepper. Good structure with fine grained tannins concluding with a peppery medium to long aftertaste.

Vines planted '76, hand-picked, vineyard-sorted, 65% whole berry/35% whole bunches, wild yeast open-fermented, 28 days on skins, 10 months in used French oak. An extremely expressive bouquet with black cherry, spice, pepper and French oak (despite none new) all clamouring for attention. The medium-bodied palate also throws in a stick of black licorice and educated tannins to the hotpot of delicious cool climate shiraz. Drink by 2040.
