2016 Gapsted Ballerina Canopy Chardonnay

Fermented in French and American oak barriques with partial malo-latic ferment and lees stirring taking place to enhance texture. Brilliant pale straw colour with a distinctive greenish tinge to the edges and a watery hue. Intense ripe peach, apricot and honeycomb aromas overlay hints of cashew and spicy nougat. Rich and creamy the palate is layered with ripe peach and apricot flavours infused with honeycomb and nougat followed by traces of spicy cashew. Clean dry finish with well balanced acidity. Aftertaste of peaches, apricots, honeycomb, nougat and spice.
Drink over the next 3-4 years.
