2015 Shiraz by Farr

Totally opaque midnight black dark red core with a deep bright dark red black tinged hue. Attractively scented nose with aromas of ripe dark cherries, plums and liquorice infused with smoky cedar and dried clove nuances impressing the olfactory senses. Dried herb and pepper notes finish off the sensory experience. Medium to full bodied with a sense of refinement yet very concentrated the palate dishes up a very savoury flavour profile of ripe dark berries, liquorice and plums infused with dried cloves, smoky cedar and pepper. Velvet smooth tannins show sublime integration with the fruit. Outstanding power with a long, very savoury and persistent finish of dark berries, liquorice, plum, subtle dried clove, smoked vanillin cedar and pepper. Marries cool climate refinement with a savoury richness.

From the original vineyard planted '94, open-fermented with 2-4% viognier, 20% whole bunches, matured for 18 months in French oak (20% new). The aromas are particularly complex and fragrant, charcuterie and allspice decorating the concourse of black cherry and satsuma plum of the bouquet and medium to full-bodied palate. The management of the viognier addition, the tannins, and the oak, made perfect by long practice. Drink by 2035.
