2015 Principia Chardonnay

Principia was founded in 1995 by Darrin Gaffy. A passionate, intelligent, quirky winemaker and vigneron, Gaffy allows terroir to shine through his wines through hand-picking of the vineyard, wild yeast fermentation and vinification without the aid of any pumps or machinery. Matured for approximately 18 months in French oak of which 25% was new.

Brilliant straw colour with a watery hue. Lifted aromas of ripe peaches and apricot tangle with some honeycomb and light butterscotch followed by nougat and subtle spicy cashew end notes. Concentrated and richly textured the palate features mouthflling ripe peach and citrusy apricot flavours that are laced with dried honey flowing over a subtle back drop of bees wax, nougat and spice. Long vibrant finish with good balanced acidity counter pointing the fullish textural feel. Excellent power with a long ripe peach, citrusy apricot, dried honey, light cashew and spicy nougat aftertaste.
