This Sauvignon Blanc underwent partial barrel fermentation. Brilliant very pale straw almost water like colour with a faint greenish tinge on the outskirts and a watery hue. The nose displays some herbaceous grassy lime and green apple top notes followed by some citrus and dried herbs. Crisp and crunchy but also possessing a nice textural feel the palate features concentrated flavours of herbaceous gooseberry and lime followed by some grassiness, spicy dried herbs and light pencil shavings on the finish. Clean crisp dry finish. Long grassy herbaceous gooseberry, lime, spicy dried herb and light pencil shavings aftertaste.
Drink over the next 1-2 years.

Hand-picked estate-grown Home Block grapes were cooled overnight; 43% cold-fermented in stainless steel using a yeast tailor-made for sauvignon blanc, the remainder fermented in used French barriques, 14% with wild yeast. Purity is the watchword for this wine, its green pea, grass and nettle flavours largely hiding an undertow of tropical notes, the package accelerating on the powerful finish. Drink by 2015.
