This beautifully made Coonawarra Cabernet showcases what the region is capable of when winemakers have fully ripened fruit to work with. 2008 was a warm vintage with the fruit achieving slightly higher than normal beaumes. According to proprietor Brian Lynn (or the 'Prof' as he's known) the fruit was not physiologically ripe until it reached around 14.8 beaume - picking any earlier would have resulted in green unripe fruit. This wine was produced from mature vines planted between 1968-1974 and maturation took place in French oak, of which 50% was new, for 22 months.

A must have, Coonawarra powerhouse

Displays a remarkably dense Cabernet colour - totally opaque black crimson with an impenetrable black heart and very deep black crimson hue. The nose is equally impressive yielding a perfumed profle of lifted cassis, cedar, dark plum and spice scents with a tobacco end note – a superb sniff. Outstanding palate concentration and structure, favours of blackcurrant, dark chocolate, cedar and spice are followed by a touch of cigar box. Excellent length with fne grained, frm, but perfectly balanced tannins. Very long aftertaste of blackcurrant, cedar and spice.
