In 2007 Warrabilla's premium 'Parola's' wines were not made, instead, all of the fruit went into the Warrabilla Reserve wines. Winemaker, Andrew Sutherland-Smith comments: “2007 was a very dry year. Not too hot but mighty dry. We started with a frost very early in the season which wiped out the lower sections of the vineyard. These are big generous wines full of tannin. The colours are awesome, probably the low yields helped in this regard as well. All our vineyards were about the 1 tonne to the acre mark. Apart from the low yield and better oak its pretty well business as usual for us. The Warrabilla style is pretty well understood by our customers.”

A rich ripe Cabernet which has been matured for ten months in one year old French and American oak. A total saturate of colour with black purple colour and black purple hue, clinging to the glass in a paint like manner. On the nose, aroma of blackcurrant emerges, followed by liquorice and spice. The palate has flavours of liquorice and spice, followed by hints of spice and cassis. Fine grained tannins. Aftertaste of black cherry, blood plum, cassis and spice.
