The Walnut Block Sauvignon Blanc is a handcrafted wine which encapsulates its terroir perfectly. The vines ar trellised on the Scott-Henry canopy system, which allows maximum light and exposure. The grapes are all hand picked and grown to a yield of 3.5 tonnes per acre. Palate complexity is created by varying the fermentation technique. The grapes are first gently whole bunch pressed and predominantly fermented in stainless steel with cultured yeast. 13-15% of the fruit is fermented with wild yeasts in old French Barriques, which contributes the additional layers of complexity.

Bright pale straw colour with water like hue. The nose is more restrained than the sister wine – Blick’s Lane – and delivers aroma of confectionary, gooseberry and tropical fruit followed by end notes of citrus and unripe gooseberry. On the palate flavours of citrus are meshed with ripe and unripe gooseberry and tropical fruit. There is a real elegance of style. Clean acid finish. Aftertaste of tropical fruit, citrus and gooseberry.
