The Jesuits, Society of Jesus, having migrated from Austria in 1848, established the Sevenhill winery in 1851 in the Clare Valley. The Jesuits initially focussed on the production of Altar wine and hoped that the Clare Valley would become the centre of Catholicism for the north. Even today, 30% of wine produced at Sevenhill is used for Altar wine.

Opaque black crimson colour with black crimson hue. Top note of cedar, followed by spice and cassis – violet end note. The palate flavours are explosive - very distinct black pepper overlaid with blackcurrant and cedar. Dark chocolate and mocha back palate. Fine grained dryish tannins – chalky. Very long spicy aftertaste.
