2006 Hollick Sparkling Merlot

A very successful Sparkling Merlot.
Excellent creamy mauve mousse, showing good hold and fine bead with moderate persistence. Crimson base wine. Delicate top note of cherry, followed by spice and a hint of truffle. Creamy palate, with a touch of earth over a cherry and raspberry background. Fine slightly dry palate, chalky tannins. Earthy raspberry and truffle aftertaste.

The mousse is impressive, showing good hold – purple black colour. Fine bead with very good persistence. Medium body, crimson base wine. Delicate nose of plum, liquorice and spice. Creamy palate with flavours of mulberry, earth and truffle. Fine dry chalky tannins. Aftertaste of mulberry, earth and truffle. Crown Seal
