At first one would not think that this blend would be cohesive, but it is, and that is entirely due to the ripeness levels of the grapes. Semillon and Sauvignon Blanc are the basis of the sweet wines of Sauternes, and yet also produce dry grassy herbaceous wines when early picked. Chardonnay is always picked as a ripe grape variety – but will vary accordingly to where it is grown (Chablis versus Burgundy). All the fruit for Tilly’s is fully ripened.

A blend of 55% Semillon, 25% Chardonnay and 20% Sauvignon Blanc. 10% of the wine (mostly Chardonnay with some Semillon) was aged on lees for 9 months in new and older 225L French barriques with the remainder of the blend kept in tank to preserve fruit characters. Bright straw colour with pale straw hue and delicate green tinge. Aromatic nose with top note of tropical fruit, followed by fig and melon. This is a full bodied generous style. Clean finish. Aftertaste of tropical fruit, melon and fig.
