Ross Trimboli got his winemaking inspiration at his father’s feet. As a boy he remembers him as the Italian immigrant who dabbled in winemaking using only a basket press and gum boots. Realising the limitations of his father's approach, Ross established his own venture in 1996.

In case you're curious, the peculiar name is derived from a mirage like haze Ross noticed over vineyards on a drive back from a wine tasting. Quirky marketing, but the name is at least as memorable as the wine in the bottle. The emphasis of this winery has always been Shiraz. Fruit for "The Baroota" is sourced in equal portions from the Southern Flinders Ranges and Adelaide Plains and the wine is matured in French & American oak hogsheads, 25% of which were new and 75% second use.
A top result from a rising star estate

Opaque black dark red colour with very deep black dark red hue. The nose displays strong aromas of aniseed, ripe blackberry, liquorice allsorts and confectionary. The palate delivers opulence along with a voluptuous texture – favours of aniseed and liquorice allsorts dominate followed by some blackberry, dark chocolate and confectionary. Velvet smooth tannins with long aftertaste of liquorice, chocolate, dark plum, confectionary and spice.
