Winemaker John Innes has produced a first class example of Coonawarra Cabernet Sauvignon with excellent cellaring capabilities. 

The preceding summer was cool, but culminated in an unusually warm March. This encouraged the grapes to make a final sprint into ripeness, however, the sugar levels rose more rapidly than the flavours. Fortunately the vines were in excellent condition, which allowed the winemakers to delay harvest until the flavours had caught up and were fully developed resulting in a beautifully balanced wine.

Produced from 100% Cabernet Sauvignon, a combination of barrel fermentation and oak maturation in new and one year old French barriques saw an average time in wood of approximately 24 months.

A classic Coonawarra Cabernet!

Opaque black crimson colour with black mauve hue. Top note of blackcurrant followed by cedar and cigar box finishing with a hint of truffle. The palate is quite tightly structured and reveals flavours of cedar, cigar box, spice and white pepper over a mouthfilling background of blackcurrant. Very long aftertaste of cedar, truffle, spice and blackcurrant.
