Penfolds St Henri is unusual among high quality Australian red wines as it does not rely on any new oak. It is matured in old, 1460-litre vats that allow the wine to develop, imparting minimal, if any oak character. Although a small proportion of Cabernet is sometimes used to improve structure, the focal point for St Henri remains Shiraz.
St. Henri Shiraz has been consistently outstanding over the last decade. The 2005 vintage was produced from a blend of 90% Shiraz and 10% Cabernet Sauvignon and was matured in old large oak vats for 16 months. Opaque black crimson colour with black crimson hue. Perfumed nose with violet top note, followed by vanilla, confectionary, spice and cedar. Generous palate with flavours of plum, spice, blackberry, stewed fruit, and cedar. On the back palate, flavours of confectionary, chocolate, spice, black pepper and plum emerging. Fine grained tannins. Aftertaste of spice, plum and cedar.

A substantial wine in all respects, with more richness and mouthfeel than many of the 1980s and & 90s; the array of black fruits with a twist of cassis is perfectly balanced, as is the oak and tannin support.
