2005 Dalwhinnie Chardonnay

Dalwhinnie was established in 1972 by Ballarat architect Ewan Jones. Today his son David and his wife Jenny run the Estate. At 595 metres above sea level, the vineyard is located at the highest and most remote part of the Pyrenees district. Bright pale gold colour with water like hue. Top note of yeast lees, followed by hazelnut, showing sophisticated barrel ferment character. The palate continues to reflect refinement. Flavours of yeast lees, spice, cashew and hazelnut are meshed into a mouthfilling profile reminiscent of some great White Burgundies. Excellent length and persistence. Long aftertaste of spice and yeast lees.
