Despite the risks, the winery maintained dedicated to the vineyard during the harvest, geared up with helmets and flak jackets.

The winemaking team have close ties with Australia. Chief winemaker, Naama Mualem joined Dalton in 2002 after graduating from Roseworthy in Adelaide. Naama works closely with Australian born and educated international wine consultant, John Worontschak. Worontchak is a graduate of Charles Sturt University with experience with some of the big names of the industry, Penfolds and Hugel of Alsace, France.

Tasting Note:This wine is made from grapes grown in the Kerem Ben Simra Vineyard and is designated Kosher for Passover.
The colour is very light given that this is a 2004 wine. Water like colour with water like hue. The nose delivers light, tropical fruit and spice top notes followed by a hint of citrus. There is little depth or varietal character evident. A touch of citrus emerges. Light, tropical fruit aftertaste.
