Wild ferment can produce an exciting and even ‘funky’ wine or it can go hopelessly wrong and require the introduction of a vigorous yeast. In this example the wild ferment has reaped results. Bright straw colour with pale straw hue. Aroma of yeast lees, hazelnut and biscuit, showing distinct barrel ferment character over a toasted oak endnote. The palate reveals flavours of hazelnut, cashew, toast and citrus with melon and smoky oak remaining in the background. Clean acid finish. Long aftertaste of citrus, melon and hazelnut.
