This wine has spent 16 months on lees and has been fermented on wild yeast. Bright straw colour with pale straw hue. The nose is delicate at this stage but will evolve superbly over time. Aroma of honeycomb, honey suckle, ripe pears and spice. On the palate flavours of yeast lees, peat and almonds are supported by a creamy texture. Moderate length. Clean acid finish. Aftertaste of yeast lees and almonds. Do not over chill! Stelvin cap.
