Nautilus is very serious about making top Pinot.

The underlying philosophy is to produce wines that reflect the terroir of the vineyard. A custom built Pinot Noir cellar has been constructed which incorporates cold soaking facilities in order to extract soft tannins and later heat the ferment as required. Must pumps are avoided by de-stemming the fruit directly into tank and a three head pneumatic plunging device is employed to gently plunge the cap during cold soaking. The end result is very impressive. A generous, full bodied Pinot. Deep crimson colour with mauve hue. Semi translucent. The nose displays very good varietal lift, with aroma of dark cherry, spice and violets, followed by a strawberry endnote. The palate displays excellent length and depth, with full ripe cherry, strawberry flavours. Velvet smooth tannins. Very long aftertaste of cherry, spice, liquorice and strawberry.
