Continuing in the long process of wine labels, the name Waipara is derived from two Maori words, Wai meaning water and Para referring to sediment, hence muddy water. The pinot has been made in the traditional manner, using wild yeast, and fermented in small open fermenters. Translucent crimson, mauve colour with mauve hue. The nose is delicate with notes of violet, ripe strawberries and cloves emerging. Mouth filling palate, with velvet smooth tannins. Flavours of black cherry, white pepper, and spice with nuances of liquorice, black cherry and strawberry jam as the back palate. Very long spicy aftertaste.
