Winemaker Ed Carr has created possibly Australia’s most sophisticated Sparkling wine, from cool climate fruit grown in Tasmania. The price tag is comparable to that of N/V French Champagne, which has always made sales a little slow, however we must say that in spite of its relatively high price, it is a superb Sparkling of international standard.

The wine is 6 years old and has developed considerable palate complexity. The base wine is straw coloured with good mousse and fine bead of moderate persistence. The nose reveals a sophisticated drink – distinct yeast lees top note, followed by toasted almonds, cashew and biscuit. The palate has excellent weight and excellent mouthfeel, supported by a balanced acid backbone. Flavours of nougat, cashew and biscuit emerge, followed by hints of grapefruit and citrus. Excellent balance and very long, persistent aftertaste.
