St Huberts was the forerunner in the revival of the Yarra Valley as a premium grape growing region. The St Huberts vineyard was planted in 1966 and re-worked in 1992 to concentrate on the premium grape varieties.Fruit for this Sauvignon Blanc was sourced from the Yarra Valley in Victoria, which is an area renowned for the quality of this cool climate variety. The fruit is picked according to its flavour profile as opposed to sugar ripeness - this ensures the resultant wine is not overly herbaceous but provides more flavours of tropical fruit. The grapes were harvested earlier than in previous vintages to attain ripe fruit, but retain the natural acidity.After harvest the grapes were crushed and de-stemmed, before fermentation in stainless steel refrigerated tanks at cool temperatures (10.5 - 13C), to retain all the fresh, aromatic, varietal flavours. The wine is bottled young to preserve all these fresh, desirable characters.The colour of this wine is pale straw with hints of green, while the nose exhibits ripe tropical and passionfruit aromas with a touch of lychee. On the palate the wine is strongly varietal, again showing ripe tropical fruit on a soft middle palate with tangy, crisp acidity and a long lingering finish.This dry white wine has gained an enviable reputation for its wonderful expression of fruit flavours without being herbaceous, while still remaining fresh and clean.
