The St. Ignatius is made from a blend of 40% Cabernet Sauvignon, 35% Merlot, 15% Malbec and 10% Cabenet Franc. Very deep crimson colour with mauve edge. On the nose the Merlot component is dominant, with earthy, truffle notes over a background of blackcurrant and cedar. The palate is more elegantly structured than St. Ignatius reds from the 1997 and 1998 vintage, however, that is not to say it lacks flavour or body. On the palate flavours of plum, blackberry and truffle are dominant and supported by a blackberry, peppery end palate. Fine grained tannins, excellent balance, followed by aftertaste of spice and blackcurrant. Cellar 4-5 years.
