Grape Varieties: 100% Nero D’Avola
Production: Once the grapes are harvested they are put into special boxes that preserve the quality of the grape berry. The grapes are then destalked and crushed before being put into a vat where it is allowed to ferment. Fermentation is continuous and fro 20 days after which the wine is placed in Slovenian oak casks and then a further six months in the bottle before release.
Characteristics: Intense garnet and bright red in colour. The bouquet is of delicate berry with strong cherry scents and mint. The flavour is full bodied and sophisticated.
Serve: at 18°C
Try With: Minestrone, red and braised meats.
