GRAPE VARIETY
Syrah. Selection of our oldest Syrah vines in the birthplace of the Saint Joseph appellation.

SOIL
Very poor and very stony granitic soils.

HARVEST
The grapes are hand-harvested at a very advanced stage of maturity (higher than 12 % vol. of natural potential alcohol).

VINIFICATION
The grapes are 100 % de-stemmed. Slow fermentation in small concrete vats. The process of fermentation is long and lasts for more than a month.

MATURING
100 % in new or very recent casks for 12 to 14 months.

TASTING
Colour : Dark garnet.
Nose :Black fruit jams (blackberry).
Palate : Smoky, peppered notes. Very strong tannins with a long persistency in the mouth.
