Made from a blend of Chardonnay and Pinot Noir. The base wine has not undergone malolactic fermentation. The wine has spent 3 years on yeast lees. Outstanding mousse. Very fine, profuse bead, with excellent persistence. Delicate nose, with aroma of biscuit, hazelnut and yeast lees. On the palate, the Chardonnay component tends to dominate, with its grapefruit and citrus flavour. Very fine creamy texture with a sherbet bomb like explosion of citrus flavours on the palate. Crisp acid finish, followed by an aftertaste of yeast lees and biscuit. Cellar 2-3 years (2003-2004).
